Poor Man's lobster. The devil's in the details. 😂🤣🤣😂 Cod works best, but any white fish will do. Cut into 1 1/2 or 2 inch cubes. Medium saucepan 1/3 to 1/2 full of water, NO SALT, 2/3 to one cup sugar, sliced up lemon, or the juice of a lemon, or 3 or 4 packets of true lemon works great also. Bring sweet lemon water up to a low boil and stir until sugar is dissolved. Add your cubed fish. NEVER FOR ANY REASON, STIR THE FISH! 🤤 Bring back up to a boil, then turn down to a light simmer. Once the fish comes to the surface and stays there it's done. I like to serve it on a bed of steamed white rice, with a drizzle of garlic butter, and a light dusting of Old Bay and true lemon crystals. 🤤🤤🤤
When my grandfather was growing up whenever their tiny grocery store in Southwest Virginia got canned oysters his mom would make her favorite oyster stew and they would tell this joke he still says after a good meal: "There may be rich folks eatin' tonight, but they ain't eatin' better than us!"
My Nonna and Pop would always say , “I wonder what the rich folks are eating.” Being poor really makes you grateful and enjoy the ‘small’ things. I miss family dinners with them!
Rockefeller Shallots: Finely mince shallots. Spinach: fresh baby spinach, but regular spinach will work. Cream Cheese: The Philadelphia brand. Half and Half Cream or heavy cream. Cheese: If you don’t have grated Pecorino Romano, parmesan will work. Panko gets crispier than regular breadcrumbs. To keep this oyster recipe gluten-free, use gluten-free panko.
When I’ve had oysters Rockefeller it had creamed spinach on top with a panko topping. So that was the creamy aspect you were missing. A friend would combine the drained, smoked oysters with softened cream cheese. It was so good on a saltine!
To make the oysters a full meal, add the creaminess you're looking for, and STILL keep it all from Dollar Tree: how about spooning the prepared oyster dish on top of a prepared packet of Knorr Alfredo noodles? I love mixing tuna into different rice or noodle packet dishes, so why not try it with oysters? 😊
My mom made a version of poor man's lobster when I was a kid, but it involved a twice bathing in the pot that also had vinegar in it to replicate more of the lobster texture. I'd have to do some digging, but I'm sure I could find the recipe. I wonder if you'd like that any better.
My mom used to make “poor man’s shrimp” - cauliflower florets dipped in cocktail sauce. It seriously tastes like shrimp and I don’t even like cauliflower!
My favorite cheap meal was getting egg noods, cream, butter, and premade chicken sandwiches. Then doctoring it up to make chicken alfredo. Crisping up the fried chicken patties and putting those on top, and using the bread for garlic bread.
Sounds similar to my original struggle meal! I used to do pasta, a couple of jars of premade alfredo sauce, some chopped frozen broccoli and then a panko/parmesan topping. No meat, because meat was expensive, and I'd meal prep it for lunches.
Now I am brainstorming an Oysters Rockefeller dip. Softened cream cheese on the bottom of an 8x8 dish, top with oysters, seasoning, hot sauce, etc. Bake and then serve with a spreading knife like you would a cream cheese and hot pepper jelly dip. My Mom Mom made "Poor Man's Crab Cakes" with shredded zucchini and now I make them several times every summer.
If you are using canned tuna, spring for the 3.00 cans at the grocery store, like safeway. The tuna will be from italy usually and always packed in oil. Super flakey meat, firm not mushy. Mild and does not taste at all like bumblebee or starkist. Once you have had the good tuna, you never go back
Packed in water is better for you. Plus we can feed it to or dog. She is allergic to everything except tuna and turkey. We add potatoes or rice to it. All dog food has at least one ingredient she is allergic to. Now Italian pasta is the best. It doesn't have round up in it because round up is banned in foods in Europe.
I dont like the tuna in water, too salty and too mushy. Im sorry to hear that your pup has so many food problems. Miserable for them and you. My dog does well with any kind of dog food, but not people food. Most people food sends her tummy into a tailspin.
I used monk fish but monk fish is way out there in price. It is impossible to find monk fish today. If you know where to buy monkfish I would appreciate it Thanks
Bought monk fish once because everyone was saying “it’s the poor man lobster.” It tasted just like “fish.” Nothing taste like lobster except for lobster.
I think that version of Tony's is probably extra salty because it's the Dollar Tree version, not the original version. They're cutting back on the more expensive spices and adding a whole bunch more salt.
I go to the food pantry a lot. I've found a location that lets you go once a week. (They usually have English muffins). But I looked in my freezer, and I have like 4 things of English muffins. Can you do a series about cooking with food pantry food? There's a channel: Uncle Chris the Food Pantry Chef.
Here in Eastern Canada (where the lobster fishery is a major industry) most lobster rolls have the lobster tossed lightly in may with maybe some chives and or dill. Perfection. Pollock is usually used in imitation crab and lobster bur most any white fish would work.
My Dollar Tree has Chicken of the Sea Imitation Crab in brine pouches for $1.25 as well as pouches of pink salmon. In the recipe for turning white fish into lobster that I used to use you also added white vinegar or lemon juice to the water which helped tighten up the protein in the fish so the imitation lobster had a bit more of a lobster meat texture..
I make a "poor man's sushi" by just rolling up rice in seaweed with no fillings. Kind of like a rice ball but in roll form. On a truly poor day, they will only get soy sauce. But if I've got them, ginger and wasabi will give me a "close enough" sushi roll experience.
Those are handy for when I make myself tea. I thought I would be using them in just water, but for me they weren’t a good substitute for a lemonade flavor packet. As a way to get real lemon flavor, they’re great.
I tried the sushi tonight with the flaky "crab" and sriracha from dollar tree in a very small container that wasn't bad at all. Let me tell you! It tasted like the spicy California rolls I buy from Wegmans for 8 bucks for one small container. We added cucumber, avocado, sesame seeds, little soy sauce, my kids raved! Very yummy they said 10/10. Gonna be a regular thing now 😋
If you don't have mirin or rice vinegar, apple cider vinegar is a great alternative! It's also often available at the dollar store! Another suggestion is my husband and I found Thai sweet chili at dollar tree and we use that in our mayo for sushi dishes!
I used the pouches of crab for crab Rangoon and it was ok. I prefer the little cheap $1 sticks of it from Walmart. I’m not a seafood lover either. My preference for it is about like yours…crab legs, fried clams and shrimp!! My grand daughter loves the seaweed just as a snack!! I get them allot for her. I appreciate you sweetie!!
I do sushi bowls, but usually make them all veggie with the siracha mayo. The best part is if you have a mandoline, you can get really nice slices of carrots and radishes and cukes, etc, even mango to put on it.
I'm in my 50s and have never had lobster. Not on purpose. I've never gone out to each much anyway, even when I had a full time job. I'm barely working part time now, so I obviously can't afford it these days. I've also never had interest to eat sushi. But this looked so good! I'm very curious about the imitation crab.
For the Oyster Rockefeller, you’re right - it does need a creamy element. Made the right way with oysters in the shell, the oyster is bigger with a very creamy texture.
I love oysters but we dont really have them so cheap here. I have made something similar to you with scallops, a sort of St Jacques but my own version. More of less the same ingredients - scallops for oysters, but add a small amount of cream with grated parmesan.
It's okay if you haven't previously had a version of the thing that you're making on screen for us. I appreciate you stepping into unfamiliar cooking territory and taking us on that journey with you. Please keep it up!
My dad used to eat smoked oysters straight out of the tin on saltines. Oysters Rockefeller, as I understand, has a green topping; it's a secret recipe, and many have tried to duplicate it with things like spinach. I think they are also made with fresh oysters on the half shell, so a better substitute might be plain, unsmoked canned oysters. As a fan of lobster I've always wondered about the poor man's lobster.
I'm allergic to oysters and crabmeat, but when I make anything with canned tuna, I keep the oil and then the next day I make a spicy pasta like ajoojo and the tuna oil. delicious!
Hey Rebecca! Just made a version of your sushi dish last week. Used the same seaweed snack but used pouches of salmon. It was terrific! I also added some green onion and a chopped cucumber which was nice with the Sriracha flavor. The salmon was not too strong a flavor so I highly recommend it as an option. Love your channel!
It's still likely to leech into the foods. Google says not to cook in the cans. Yes, they're heated at the factory, but that's a different process than cooking them in the oven, etc...
I love making sushi bowls and bakes from DT! I use the same process as your spicy tuna/crab, but I layer the rice with their cream cheese, some dried chives & crushing up the wasabi edamame (from the snack section). Once baked use the nori sheets to scoop that deliciousness and enjoy! Also, mirin can be mimicked by vinegar (rice, apple cider or white wine) and sugar.
I love raw oysters on the 1/2 shell, but I stopped eating them because of the hepatitis scare from eating raw clams and oysters. I will try the ones in the tin. I am not crazy about a strong smokey flavor of the ones in the bag.
For the poor man's oyster Rockefeller. I suggest using a little creamed spinach if you can find it. That will give you that creamy element. Which you would get with normal oysters Rockefeller. It would come with spinach on top. And the cheese would melt into that. So that will replicate the element you're looking for. You might like it better that way. I do. 🤷
In the 70 I made a casserole of monk fish shrimp and crab. I added mayonnaise woostershire sauce and baked it at 350 for about 30 minutes. You could add bread crumbs on top with butter This was our New Year’s Eve dinner.
Hi Rebecca 🙋🏻 thanks for your poor man’s meals video!! I make imitation crab and lobster rolls all the time and to 1 package I add 1 stalk of diced celery with leaves, about 1/2 cup of mayo and about 1/4 cup ranch dressing and some old bay seasoning 1/4-1/2 tsp or to taste, black pepper to taste , chopped green onion to taste, and red pepper flakes to taste , mix to make a creamy texture ! I serve on a toasted hotdog bun ! They are so delicious and I never get tired of them , I keep frozen packages in my freezer all the time ! This would be delicious on your Nori , or also on crispy Tortilla chips which I really enjoy the crispy chips with the creamy crab salad !! God bless ❤️🙏🙋🏻🌈🌈
Traditional oysters Rockefeller use cream and spinach, and are served in the shell. But these recipes look good and have given me some ideas, as I love to eat smoked oysters from the can. Very creative. Ramekin bowls seem like a good choice for the oysters that came in a pouch.
I haven't watched too much of this yet. But.... I grew up eating poor man's (lazy mans) goulash. Brown a pound of ground beef, with an onion. Season with season salt and pepper Cook till done and drain. For every pound of meat, add 2 smaller cans of Campbell's spaghetti. (Used to be Franco american) I was taught to shake the cans and the 1s with the thicker sauce was the right ones. Heat it through, make some buttered bread, eat it as a "fold over." 95% people I make it for turn their nose up at it. 2% can tolerate it and 3% love it as much as I do. It's simple hence why my grandma grandma and mom called it lazy man's, and it's fairly cheap, why my childhood best friend called it poor man's goulash. I don't love it once a month, but I do love it every 4-6 months. Too bad this is all sea food, I'm allergic. Good luck to all♡♤☆
I’ve done poor man’s prime rib with an eye of round roast cooked prime rib style in a cooling oven. It’s very good but makes a ton and doesn’t reheat very well.
You look beautiful! Good job again. So fun I’m doing these! I love soy sauce and wasabi for sushi too. I also put do sushi rice recipe in my instapot. 2c rice, 2c water, 1/4c rice vinegar, 1/4c wh vinegar, 1 1/2 t salt, 2 T sugar. My son found a rice topping with sesame seeds and seaweed shake, not sure the price, but fun to get flavor I. Your bowl!!!! Thank you so much! You are always inspiring!!
More years ago the I can remember I had oysters Rockefeller at Delmonico's in New Orleans. I loved it and I truly hate all things oyster. It had green ( I think spinach and a cream sauce with anisette or some sort of anise. Could never duplicate it. Only time in my life I have ever eaten an oyster that didn't threaten to make a reappearance.
I don’t have a freezer but as soon as I do I will be making some of your meals, they look delicious I am 65, retired, and need a new hip so this looks great for me. Plus my sister visits fairly often and I would rather be visiting than cooking so I can still feed her good food and visit too. I’m from Everett Washington and I just found you. Am binge watching you now ❤😅😊❤
putting nori sheets into ziplock tends to not get soft/stale and while its a bit cheaper for the snacks if stored right you can get more nori. Of course if you don't eat them all the time like I do, like you said, It may be more worth it for the snacks. The snacks also come in flavors which is a plus.
If you don't have mirin, you can make homemade sushi vinegar by heating up some rice vinegar with a bit of sugar and salt. I reckon other (more neutral) vinegars would work as well.
Monkfish is actually called the Poor Man’s Lobster and when it’s cooked it really does taste like lobster. I love Cod but it doesn’t taste like lobster at all. Try some Monkfish and I think you’ll be surprised how good it is
To better mimic sushi rice on a budget, don't rinse your rice before cooking, it makes the rice stickier, and instead of mirin, you can use white vinegar, as usually vinegar is added to sushi rice to give it a slightly sour flavor. You can also use plastic wrap to make the rolls, or you can make more of an onigiri/rice ball setup as well, as tuna mayo is a popular filling for those in Japan
I tried the poor man’s lobster a while back, and although it did not taste like lobster, it actually tasted pretty good. Never thought of putting it in a sandwich. I would dress it like most lobster rolls with a little mayonnaise celery for that nice crunch.
I was so surprised when I saw the tinned oysters that you got from your dollar tree. When I bought them, they had like 4 little oysters and 2 giant chilis, and some carrot pieces. When I tried to ear 1 of the oysters it was SO spicy I had to spit it out. When I opened the 2nd can, it had 2 smaller chilis, no carrot pieces, and 5 oysters. Not consistent at all. I tasted that one and it was just as spicy. I rinsed the oysters off in water and tried again... that next rinsed oyster was so full of sand and grit I couldn't even swallow it. Now, I like spicy things. I'm not a wimp when it comes to spicy food. My lips were on fire for HOURS after eating these and were raw for the next 2 days. I can eat hot cheetos and takis like there's no tomorrow. I can eat ghost pepper chicken noodle soup and Carolina reaper Ramen. I could NOT eat these oysters. Glad to see you cans had more oysters, but I'd like to know if anyone else had the experience I had with them. I've loved smoke oysters since I was a little kid, and ate a TON of them when I did the keto diet. They were great on top of whisps cheese crisps. I will never ever ever buy dollar tree tinned oysters again. I would probably love the ones in the bag, but my dollar tree has yet to stock those. I prefer more smoky flavor to less.
My fiancé loves smoked oysters in a tin as a snack on saltines with hot sauce. This could elevate it to a meal! Maybe I missed it, but I’m curious about cost breakdown. We like to go out for sushi, but these recipes are a great alternative! Thanks!
Love your videos. I’ve read the comments and feel I can fine tune boiling the fish and giving fake crab the necessary seasonings to make it quite palatable. Thank you everyone.
You can heat the sardines in the can? I would think that would be toxic as you aren’t suppose to cook anything from the can. Also a poor person wouldn’t have all those ingredients on hand
This is really nice, I am fond of oyster recipes and I’ve never had Oysters Rockefeller, I will try this as I have most of the ingredients on hand. And the fake lobster dish is also good, kitchen magic is fun, and you make it even more enjoyable ! Thank you Dollar Tree Dinners ! 😀💜
Anyone can use anything they like, but normally sushi rice is made with rice vinegar or with "sushi vinegar" which is made from rice vinegar, sugar, salt, and a bit of water. Mirin is basically "cooking sake" and very similar to a cooking wine in the West. Once again, if you love using mirin that's totally okay!
I would be leery of baking the oysters in the tin, since they might be lined or treated in a way that's not heat safe. They may be prettier, but it's safer to use something designed for the oven
I love the sushi bowl idea! I make burrito bowls often and I’m a little tired of them. I want to use canned salmon, matchstick carrots, spicy mayo, frozen edamame, the rice like you suggested, and some sesame seeds. So clever about the nori!
Poor Man's lobster. The devil's in the details. 😂🤣🤣😂
Cod works best, but any white fish will do.
Bring back up to a boil, then turn down to a light simmer. Once the fish comes to the surface and stays there it's done.
I like to serve it on a bed of steamed white rice, with a drizzle of garlic butter, and a light dusting of Old Bay and true lemon crystals. 🤤🤤🤤
Thank you for that! I’m going to pin it in case anyone wants to try it that way!
Sounds 🔥 and I wasn’t a fish or 🦞 lover but been craving it and this is perfect!! Thank youuuu!!
I’m right there with you on the crab legs. They are my absolute favorite seafood.

Try mixing sirracha with ranch ! The best dip ever for chickn strips ,french fries, fish👍
@@Sally-v6f ohhh that sounds yummy ! Thanks for sharing that would great on burgers or fish tacos also !! 👍
Yummy yummy yummy that fits love in my tummy😂❤
@@beckystone7994 oh yes that sounds great too👍
Jeepers a lot of haters out today. Ignore them you are practical while being creative and we love you !!
Always!
That exact tuna bowl is what got me through the newborn stage with my kiddo! I lived off it, now I need to start making it again.
Traditional oysters Rockefeller use cream and spinach, and are served in the shell. But these recipes look good and have given me some ideas, as I love to eat smoked oysters from the can. Very creative.
Ramekin bowls seem like a good choice for the oysters that came in a pouch.
I love smoked oysters in the tin. Also, yummy yummy.❤
I love this hair colour on you, it really compliments your skin and eyes ❤ beautiful ❤ obviously, as always enjoyed the video and recipes too ❤
Thank you so much!!
Do you think rinsing the oysters in the pouch would tone the intensity?
I think all of those would be great as hor d'oeuvres for a beach themed party.
I.have also had rock fish as a sub for lobster. It doesn’t require a bunch of flavoring to work ❤
I haven't watched too much of this yet. But.... I grew up eating poor man's (lazy mans) goulash.
Brown a pound of ground beef, with an onion. Season with season salt and pepper
Cook till done and drain.
For every pound of meat, add 2 smaller cans of Campbell's spaghetti. (Used to be Franco american) I was taught to shake the cans and the 1s with the thicker sauce was the right ones.
Heat it through, make some buttered bread, eat it as a "fold over."
95% people I make it for turn their nose up at it.
Good luck to all♡♤☆
I love seafood, and am broke, so I’m excited to for this series.😊😅
Mirin isn't something I've tried incorporating into my rice dishes. Going to check it out this week when I'm grocery shopping.
the poor man's sushi tacos are actually really similar onigiri!
I’ve done poor man’s prime rib with an eye of round roast cooked prime rib style in a cooling oven. It’s very good but makes a ton and doesn’t reheat very well.
Some ramekins would be nice for the oysters in the pouch.
I thought oysters Rockefeller had a spinach and cream sauce?
More years ago the I can remember I had oysters Rockefeller at Delmonico's in New Orleans. I loved it and I truly hate all things oyster. It had green ( I think spinach and a cream sauce with anisette or some sort of anise. Could never duplicate it. Only time in my life I have ever eaten an oyster that didn't threaten to make a reappearance.
Spinach, bacon, anise, anchovy, butter, garlic, shallots & parsley: cook & blend. Place on raw oysters in shells & broil. Bon apetit!
I’ve heard you boil the fish in sprite.
Hmmm that’s an interesting idea! I’m not opposed
Interesting, I bet that would taste good.❤
My dad is Swedish. We grew up on smoked seafood. I have to admit not my favorite. But that sushi bowl looks fab.
Love your hair🌹❤bright red suits you! And as always love your content!
Tulipa works as lobster substitute too.
I don’t have a freezer but as soon as I do I will be making some of your meals, they look delicious
I am 65, retired, and need a new hip so this looks great for me. Plus my sister visits fairly often and I would rather be visiting than cooking so I can still feed her good food and visit too. I’m from Everett Washington and I just found you. Am binge watching you now ❤😅😊❤
I only found her few months ago. Her shepherds pie I made it. My husband absolutely loves it.
putting nori sheets into ziplock tends to not get soft/stale and while its a bit cheaper for the snacks if stored right you can get more nori.
For a half cup of vinegar I reckon it would be about a couple tablespoons of sugar and a teaspoon of salt, but you can do it to taste.
The vinegar is very important, too! The pH balance of the rice is altered and that's what makes real sushi rice so amazingly delicious.
Try some spinach on the oyster Rockefeller it's yummy
Try the creamed spinach.... some cream cheese....,
Oysters Rockefeller usually has some creamed spinach in it. That might give it the creaminess you were missing.
I love the new hair color you look like the little mermaid just beautiful…thank you for all of your wonderful recipes I just love your channel ❤
Helpful tip without spending a dime..... save the water from rinsing your rice. Amazing HAIR, yes hair benefits 😁 Drastically improved my hair
Love the deep red hair 😍😍 you look absolutely beautiful
Thank you so much!!
Also oysters are great in stuffing
I seriously love seeing someone your young age actually cooking. You rock!!!
I love making those sushi bowls! Instead of nori we usually have it with diced cucumber & carrot + soy sauce, so good
I wonder if you take the pouch oysters and make a hot cream cheese, spinach, oyster dip?
I tried the poor man’s lobster a while back, and although it did not taste like lobster, it actually tasted pretty good. Never thought of putting it in a sandwich. I would dress it like most lobster rolls with a little mayonnaise celery for that nice crunch.
Monkfish for poor man’s lobster is very close to
Pollock would be a better choice for Poor Mans Lobster. It's less fishy tasting and has a better texture for something like this.
Another oyster recipe that would be great could be panko fried oyster!!
I love the deconstructed sushi in a bowl idea; I will have to try that!
For sushi rice, you can substitute mirin with equal parts vinegar and sugar to get a similar effect.
Thanks! Always love your ideas for budget friendly meals❤❤❤
I’m looking forward to making sushi “tacos” next time the kids come to visit. They are gonna think Mom’s so creative 😉
Osyter's Rockerfeller usually comes with a creamy spinach mixture. That's what's missing.
Oysters Rockefeller has creamy spinach on it. Maybe that would be the creamy element that you felt was missing.
I love the sushi bowl idea! I make burrito bowls often and I’m a little tired of them. I want to use canned salmon, matchstick carrots, spicy mayo, frozen edamame, the rice like you suggested, and some sesame seeds. So clever about the nori!
