First you presented a proper chef's blade in Knives of the week, and now you're touting the badass knife handling skills of kitchen workers. Thank you. UA-cam knife enthusiasts often have tunnel vision for folders with tactical or hunting pretensions, knives which don't have much application beyond box cutting in our daily lives, while never giving a second thought to upgrading the crappy butcher-block knife set they picked up at Bed, Bath, and Beyond. They'll bring a fixed blade on a car camping trip because a folder just isn't bushcraft, but then insist that a Rough Ryder Sous Chef or a Spydiechef are great food prep tools. I hope we're seeing a trend toward understanding why kitchen knives deserve every bit of reverence we usually reserve for pocket jewelry. All knives matter.
Absolutely agreed Ron. I have customs in my kitchen for that very reason. A perfectly balanced, finely tuned chef knife has a far greater impact/improvement on my life than all my bushcraft knives put together. -DCA
My grandpa said the reason for a neck knife was so you could be sure to see it enter the sheath when it was 30 below and your brain was not working, not to mention your fingers. Keeps you from stabbing yourself in the kidney too. I have arthritis and the Spyderco thumb rotation is impossible for me. I have a Kershaw assisted opener that works great. Oso sweet. Thanks David
I pack a Spyderco since they exist (I'm a doc film maker for the past 55 years) and packed a AITOR Jungle King as a fixed blade ( never satisfied ) , now i pack a knife I wanted all my life MY KNIFE ; got a Damascus billet 10" long by 1"wide by 0.15"and made my self THE knife I always wanted ; 5 3/4" blade full tang 4" Walnut handle and 1/4" solid brass finger gard . Made a sheath of Bison rawhide . Wish I could send you a picture, keep up your inspirering work
i’ve carried folding knives for 31 years (since I was 5) and i didn’t get into fixed blades until about four years ago and now I have about ten of them. What I found with fixed blades is that you must be creative to find a way to carry it that feels natural... which I used to think was a negative but it’s not because it opened up a world of options. another pro is that fixed blades are usually cheaper than folders. one of the things I like best about them is that there is a broader range for geometry because the blade doesn’t have to fit back in the handle. also for things like carving wood or skinning where you have to work with your knife for long periods of time is usually more comfortable with a fixed blade. Also fixed blades range in size more than folders and there is a joy I get from carrying a big knife but also it’s fun to have something to chop with. They are less maintenance because there’s no moving parts. also I like wearing two knives and I pair them up so my nicer knives don’t get damaged and so I have the right blade for the job. a lot of the time I wont have a fixed blade so I’ll have a victorinox or a case in my watch pocket and a nicer folder on a pocket clip in my front pocket but having a fixed blade gives me so many more options as far as size shape durability and how I carry it.
Hello, for knives for arthritis, I would suggest knives with a bigger handle due to reduced grip strength and most probably an automatic knife if legal. The Kalashnikov is a good one, due to being automatic and having a larger handle and being budget friendly, or the microtechs for the switch style automatic deployment and retraction. With arthritis, you usually have reduced grip strength and range of motion in fingers. So bigger handles and something super easy to open would be best.
David, Thank you for twice trying to answer my question about choosing a knife for my lady friend with Arthritis. I have looked at all the suggestions you and others have made. Strangely, I chose another. The Civivi Elementum. This knife appears to be easy to open without any assistance or being automatic, automatic knives are a no no in Maryland. I also believe the liner lock will not be to hard for her to open. In addition it's appearance should not raise too many eyebrows. I liked it so much I ordered 2 of them.

So just tossing this out there: since fixed blades are seemingly rising in popularity- the easiest/most convenient concealed fixed carry option I've found is taking a ~3in +/- fixed blade in a taco kydex sheath in pocket. Tip up, edge facing in with a short 550 tether @ tip of kydex to a belt. when you go to deploy, knife is sheathed until a safe distance from your body, kydex pops off and with this method you can one hand deploy a fixed blade from a convenient location even more quickly than an assisted or auto. First thought is a giantmouse ace sonoma. Bottom line, if I'm mixing folders and food, it's the right time to get a longer blade to keep the food out of the folding joint.
I think probably one of the best, if not THE best knife options for somebody with arthritis (I'm assuming that the person in questions arthritis is bad enough to be a hindrance, hence the question), was sitting on the table in front of you this entire video, and it wasn't even mentioned. The Opinel. They're extremely easy to open, lock, and unlock. Their versatile, functional, and cheap (as in budget, not quality), as well as being non-threatening, and classy. Finally, there is a size to fit any preference.
Love my SpydieChef. Carries extremely well, very flat and the angled clip is genius. LC200N has exceeded all expectations. You can actually cut on a cutting board with it at cookouts unlike most other folders. Taichung machining on the lock and blade is robotically flawless. Its expensjve but not overpriced
Fishing or farm work is two of many jobs i have done over the years and have multiple nkife work daily pocket and fixed blades so you get to carry both 😀 👍
Fixed blades being easier to clean sounds like a convenience thing until you field dress a deer on a 5° day. Blood and debris freezes in the mechanism and all of a sudden you have a fixed blade with no sheath... never again.
On these rainy days I'm reading "Woodcraft and camping" by George Washington Sears (Nessmuk). And it makes me dream watching the woods from the window of my house.....
All the SAKs have that pin hole but not many come with the pin. The pin can be purchased separately, or you can get about 400 of them at walmart for the same price as one from Victorinox. Craft section, #16960 Exra Long Satin Pins. Size 21. 1&5/16". They're exactly the same and it's nice to have a whole pile of extras.

DCA just a small point (excuse the pun 😉) most if not all Swiss Army Knives with a corkscrew have a hole to accommodate a pin even if they don't come with one.
Walmart #16960 1&5/8" Extra Long Satin Pins. Found in the craft section. They're identical to the Victorinox pins and you get 400 for the price of 1. Nice to have extras.

Really depends where your arthritis is. My index finger is the worst, so flippers are a pain. My thumbs are ok, so Spydieholes and linerlocks are ok, but stiff lock backs are a problem. Buttons are nice, but the best of all are the Gerber or Lone Wolf made Paul knives.
Actually I believe most of the newer celledor (not alox) Swiss army knives have the pin in the scale. I own a compact, a fieldmaster, a standard tinker, a small tinker, a climber, and a huntsman, all newer (year or two old) and they all have it.
All models have the hole, but only a few come with one. But you can just add basically any straight pin, I usually steal one from my girlfriend's sewing kit :)
If the restaurant I’m eating in can’t provide a steak knife, I’m going to be reevaluating my choice of restaurant. And if the steak I’m cooking at home won’t cut under the pressure of a normal table knife, then either I’m not buying good steak or I’m overcooking the steak. The whole “what $150 folding pocket knife do I want to blunt on some catering grade ceramics solely in order to flaunt my knife geekery in public?” thing is an answer in search of an question, in my opinion.
For the lady with arthritis a Brisa (formerly enzo) necker might do the trick. Light small comes in a multitude of handle material/ colors in either scandi or flat grinds.
I said it last time, but I'll say it again. The CRKT Minimalist just about screams to be the purse knife for the arthritic lady. Period. However since you mentioned trying to go for a folder, I'd go with the Benchmade Mini Griptilian. It is easy to pinch open and Axis locks don't really require much hand strength or dexterity to operate if you have fingernails. The Griptilian's blade shape is a little more neutral than your picks and I think it would look more at home in a purse.

S90v is a crazy tough steel. I have a osbourne in that steel, and it's the only knife i own that I can't sharpen very well. It should last forever though.
Hey David love the FAQ videos! But I have been wondering what are the pros and cons to different locking mechanisms on a knife. I’ve been looking at moderately priced knives but am scared away from frame locks due to the stiff opening on cheaper knives that I have used before. And I have loved the axis lock but have recently bought a knife that I have been disappointed in the closing of it without engaging the axis lock mechanism. What are some of your favorites?

Also the BT Fighter, which is a design I have been crushing on for a while, but I didn't realize that I could get it at the reduced price, as I was having a hard time justifying the purchase at the original sticker price. I know I shouldnt sweat 8cr13mov so much, but with all of the great budget steels available...I do balk over the perceived value of the knives still using it. Hey David. Can you suggest a folder with a primary blade around three inches, with good edge retention (D2 or better) that comes with some kind of prying tool? One hand operation for the blade. You are one of the best(if not THE BEST) professionals on UA-cam.besides the presentation skill you have i think you are very knowledgeable about the knife world.but MAN QUIT THOSE SPYDERCOS ALL THE TIME!!!!You use it for size comparison,gift idea, slicing geometry,edge retention, locking mechanism,handle traction etc etc.i do understand that its a strong brand name but don't overdo it.its just a sharpened triangle so don't take it as an example all the time

Why tf a hunting knife have to have a handle graphic of tree camo? The moment you put it down on the forest floor it's forever gone, you can't no longer see it
You shouldn't be putting it on the forest floor folded,it should go back in your pocket when your done using it.If you set it down while its open when in use,the blade is pretty shiny.They do it because camo is "cool".Even folded you got some shiny metal showing.Could always throw a blaze orange lanyard on it .
I'm 73 yrs old worked on farm in my youth. Every farmer had a knife . I learned a lot and that started my love for them. The #1 thing was you did not want to loose it no matter what style u choose. No orange back then but the yellow handled ones proved the point. Orange in the woods not in the military

Just a tip: better not to snap close a laguiole knife. Allmost none have a stop pin and because of the thin handle, the blade edge will hit the backspacer and might damage or dull the blade... 😉

Hi DCA Over here in Germany we have a (questionable) blade length restriction of 12cm. So the knife must be under 4.7 inches of freedom units but as long as possible. I want to take it to the outdoors. Wood work, maybe some food prep... I know u like high carbon steel but I would prefer something with better edge holding and stainless. My hands are slightly bigger than average. I like Kydex more than leather. What do you recommend? Thx
Hey David, I was personally wondering how you take apart and maintain your Revo Ness? The screws in the back are so hard to get out. I have yet to get them out so I can properly clean my knife without forcing the blade to come out.
Honestly, if you want edge retention like K390 or 10V and toughness is a consideration, then stainlessness may have to take a back seat. I would personally stick with... K390 or 10V. -DCA

I would probably use my belt sander. Low speed (if possible), light touches (creep up to it in small increments), and plenty of dunking in water to keep it cool. DCA
I like the SpydieChef design, but personally don't like frame locks (I sold mine). Is there a similar design that is a liner lock? I like thumb stud deployment rather than flippers.
@@knifecenter Thanks for the consideration. It seems the knife world has moved to flippers and frame locks as required for "quality" (and Titanium of course). I think the Quiet Carry Waypoint is perfect...if they would build it with "normal" materials. Replace the Titanium with G10 (or Benchmade's CF Elite would be perfect) and regular steel instead of rust proof...and this in and of itself would drop the price significantly.
Hello Mr. David C Anderson, I have a question about balisong knives. I have a Bradley Kimura, a bear song 4 and a bear song 8. I'm having a hard time keeping the handles tight on the Bradley and on the bear songs the handles won't tighten at all. What is your recommendation to fix these? And I too have slightly larger then average hands. My girlfriend and I look forward to your videos every week!
Just working from a picture I think that the pivots on the Bears are not anchored in the handles, so you may need to use two drivers to tighten them. As for keeping them set, threadlocker is a must. You don't need much of course, but the important part is to let it set for at least 12, preferably 24 hours. No putting in threadlocker and then flipping right away, it won't hold. Make sure to use the "medium strength" or "removable" thread locker, and not the heavy duty stuff. -DCA
What is the best fixed blad for salt water fishing? i tried a sog seal strike this year and it held up but still did not take the salt that great. I need to be able to cut heavy braid and mono line as well as cut crabs and quickly dispatch fish. I use a gerber protégée for my fresh water kit, thick blade can cut branched when i get a lure stuck
@David Single i also carry a fox karambit in my pocket, i love to use the holes to pull hooks out and the point to take the knots off of hooks and lures. but i do not feel it is the best hard use knife, too thin
If i send you a picture of a knife can you id it for me? i have had it for a long time, it is a gerber but there is no model marking on the blade anywhere. i actually think it may have been a walmart brand exclusive, but it is a fantastic knife.
@David Single I live in Mass. my daily carry is a smith and wesson M&P maggic assist first gen that i have had for about 20 years, still opens lightning fast. my weekend carry is a fox karambit. fresh water fishing knife is a gerber protege and salt waster is a sog seal strike I like a knife that looks cool, but is practical. no stupid spikes or cut outs that weaken the blade for show. i like something light, but i want to be able to beat on it for years. partially serrated, dont really care for the look of a kbar as much as i like the half breed or the tops. and i really like a slighly curved down and molded handle that fits tightly into me hand. and a finger hole on the end is nice to give me more reach.
Question: I'm looking for a big ass flipper for my FIL. He currently has a CRKT Ruger two stage. It's been discontinued and the only ones I can find has been marked up to like 75 dollars. Given that he bought it for 30 and it's only 8cr steel I can't bring myself to buy another.

If it helps he's an ex-marine and familiar with CRKT because that what he had when he was enlisted. He's also dead set on a flipper (tho I'm trying to get him to come around to the emerson wave system), likes tip down carry and wants his knife to have presence. He's not at all shy about whipping his knife out anywhere and everywhere. He works as head of shipping so he abuses the crap out of his knife. My first job, at age 16, required continued knife use. I worked in a Sailboat Marine Shop splicing line and rope to wire.

Best slicer I have is my Bark River Mini Kalihari in A2. It has one wicked edge.
13:59 - Slim ejector tool: Victorinox Spartan + pin (must be purchased separately). It worked for me. Or the Victorinox Swiss Card is also good.

The Opinel. They're extremely easy to open, lock, and unlock. Their versatile, functional, and cheap (as in budget, not quality), as well as being non-threatening, and classy. Love my SpydieChef. Carries extremely well, very flat and the angled clip is genius. LC200N has exceeded all expectations. You can actually cut on a cutting board with it at cookouts unlike most other folders. Taichung machining on the lock and blade is robotically flawless. Its expensjve but not overpriced
Fishing or farm work is two of many jobs i have done over the years and have multiple nkife work daily pocket and fixed blades so you get to carry both 😀 👍
Fixed blades being easier to clean sounds like a convenience thing until you field dress a deer on a 5° day. Blood and debris freezes in the mechanism and all of a sudden you have a fixed blade with no sheath... never again.
The squeak from spyderco is good for my mother who has dexterity issues . open and close easy for her.

All the SAKs have that pin hole but not many come with the pin. The pin can be purchased separately, or you can get about 400 of them at walmart for the same price as one from Victorinox. Craft section, #16960 Exra Long Satin Pins. Size 21. 1&5/16". They're exactly the same and it's nice to have a whole pile of extras.

DCA just a small point (excuse the pun 😉) most if not all Swiss Army Knives with a corkscrew have a hole to accommodate a pin even if they don't come with one.
I wanted to say the same. The Cellidor scales come with a hole for a long time already.
Walmart #16960 1&5/8" Extra Long Satin Pins. Found in the craft section. They're identical to the Victorinox pins and you get 400 for the price of 1. Nice to have extras.

Really depends where your arthritis is. My index finger is the worst, so flippers are a pain. My thumbs are ok, so Spydieholes and linerlocks are ok, but stiff lock backs are a problem. Buttons are nice, but the best of all are the Gerber or Lone Wolf made Paul knives.
Actually I believe most of the newer celledor (not alox) Swiss army knives have the pin in the scale. I own a compact, a fieldmaster, a standard tinker, a small tinker, a climber, and a huntsman, all newer (year or two old) and they all have it.
All models have the hole, but only a few come with one.
But you can just add basically any straight pin, I usually steal one from my girlfriend's sewing kit :)

If the restaurant I’m eating in can’t provide a steak knife, I’m going to be reevaluating my choice of restaurant. And if the steak I’m cooking at home won’t cut under the pressure of a normal table knife, then either I’m not buying good steak or I’m overcooking the steak. The whole “what $150 folding pocket knife do I want to blunt on some catering grade ceramics solely in order to flaunt my knife geekery in public?” thing is an answer in search of an question, in my opinion.
For the lady with arthritis a Brisa (formerly enzo) necker might do the trick. Light small comes in a multitude of handle material/ colors in either scandi or flat grinds.

I said it last time, but I'll say it again. The CRKT Minimalist just about screams to be the purse knife for the arthritic lady. Period. However since you mentioned trying to go for a folder, I'd go with the Benchmade Mini Griptilian. It is easy to pinch open and Axis locks don't really require much hand strength or dexterity to operate if you have fingernails. The Griptilian's blade shape is a little more neutral than your picks and I think it would look more at home in a purse.
Best do it all big knives? Choppers/Survival with a blade longer than 7” and with a Saber or Convex grind? Around 350 for the budget.

S90v is a crazy tough steel. I have a osbourne in that steel, and it's the only knife i own that I can't sharpen very well. It should last forever though.

Hey David love the FAQ videos! But I have been wondering what are the pros and cons to different locking mechanisms on a knife. I’ve been looking at moderately priced knives but am scared away from frame locks due to the stiff opening on cheaper knives that I have used before. And I have loved the axis lock but have recently bought a knife that I have been disappointed in the closing of it without engaging the axis lock mechanism. What are some of your favorites?

Hey David. Can you suggest a folder with a primary blade around three inches, with good edge retention (D2 or better) that comes with some kind of prying tool? One hand operation for the blade. The prying tool can be fixed or foldable. If posible I would lile to avoid the multitool section. Thanks for the great videos.

Why tf a hunting knife have to have a handle graphic of tree camo? The moment you put it down on the forest floor it's forever gone, you can't no longer see it
You shouldn't be putting it on the forest floor folded,it should go back in your pocket when your done using it.If you set it down while its open when in use,the blade is pretty shiny.They do it because camo is "cool".Even folded you got some shiny metal showing.Could always throw a blaze orange lanyard on it .

Just a tip: better not to snap close a laguiole knife. Allmost none have a stop pin and because of the thin handle, the blade edge will hit the backspacer and might damage or dull the blade... 😉

Over here in Germany we have a (questionable) blade length restriction of 12cm. So the knife must be under 4.7 inches of freedom units but as long as possible. I want to take it to the outdoors. Wood work, maybe some food prep... I know u like high carbon steel but I would prefer something with better edge holding and stainless. My hands are slightly bigger than average. I like Kydex more than leather.
What do you recommend?

Hey David, I was personally wondering how you take apart and maintain your Revo Ness? The screws in the back are so hard to get out. I have yet to get them out so I can properly clean my knife without forcing the blade to come out.

Honestly, if you want edge retention like K390 or 10V and toughness is a consideration, then stainlessness may have to take a back seat. I would personally stick with... K390 or 10V. -DCA

I would probably use my belt sander. Low speed (if possible), light touches (creep up to it in small increments), and plenty of dunking in water to keep it cool. DCA

I like the SpydieChef design, but personally don't like frame locks (I sold mine). Is there a similar design that is a liner lock? I like thumb stud deployment rather than flippers.

@@knifecenter Thanks for the consideration. It seems the knife world has moved to flippers and frame locks as required for "quality" (and Titanium of course). I think the Quiet Carry Waypoint is perfect...if they would build it with "normal" materials. Replace the Titanium with G10 (or Benchmade's CF Elite would be perfect) and regular steel instead of rust proof...and this in and of itself would drop the price significantly.
Hello Mr. David C Anderson, I have a question about balisong knives. I have a Bradley Kimura, a bear song 4 and a bear song 8. I'm having a hard time keeping the handles tight on the Bradley and on the bear songs the handles won't tighten at all. What is your recommendation to fix these? And I too have slightly larger then average hands. My girlfriend and I look forward to your videos every week!
Just working from a picture I think that the pivots on the Bears are not anchored in the handles, so you may need to use two drivers to tighten them. As for keeping them set, threadlocker is a must. You don't need much of course, but the important part is to let it set for at least 12, preferably 24 hours. No putting in threadlocker and then flipping right away, it won't hold. Make sure to use the "medium strength" or "removable" thread locker, and not the heavy duty stuff. -DCA

What is the best fixed blad for salt water fishing? i tried a sog seal strike this year and it held up but still did not take the salt that great. I need to be able to cut heavy braid and mono line as well as cut crabs and quickly dispatch fish.
I use a gerber protégée for my fresh water kit, thick blade can cut branched when i get a lure stuck

@David Single i also carry a fox karambit in my pocket, i love to use the holes to pull hooks out and the point to take the knots off of hooks and lures. but i do not feel it is the best hard use knife, too thin

I'm looking for a big ass flipper for my FIL. He currently has a CRKT Ruger two stage. It's been discontinued and the only ones I can find has been marked up to like 75 dollars. Given that he bought it for 30 and it's only 8cr steel I can't bring myself to buy another.

If it helps he's an ex-marine and familiar with CRKT because that what he had when he was enlisted. He's also dead set on a flipper (tho I'm trying to get him to come around to the emerson wave system), likes tip down carry and wants his knife to have presence. He's not at all shy about whipping his knife out anywhere and everywhere. He works as head of shipping so he abuses the crap out of his knife. Something that holds an edge for a while or is easily sharpened would be nice.
