I tried those recipes last night and here are some of my thoughts: - if you cook everything at once in the oven, the squash and the carrots' maple glace give away a lot of moisture, so the potatoes and the brussel sprouts won't get crispy (unfortunately) - the carrots take a lot more than 40 minutes, they even take longer than the squash - I loved the chestnuts, they were really delicoius - making two courses out of this meal would work perfectly: Squash+cranberry sauce+chestnuts amazing together! Carrots, potatoes, brussel spouts and gravy as a main :-)
This is nice because it doesn't rely on any "meat substitutes" like most vegan/vegetarian holiday meals. I don't mind tofu and tempeh (in fact they're great in many dishes) but don't enjoy seitan which a lot of "turkey" substitutes are based on. Your focus on actual vegetables and simple ingredients is really enjoyable.
I always found Christmas dinner the most challenging as a vegan. Not any more. That is the best Butternut squash recipe ever !!! I cannot wait to try it. Great ideas. Thank you Rachel !

Vegan food just as good if not better for you than a traditional omnivore diet... It's all about understanding the vegetables and flavours! The colours look out of this world!

We also base our vegan christmas on root vegetables. We live in Sweden so pickeled herring we use aubergine instead of herring. Lentil is also good for veggie meatballs. There is a lot of other dishes rutabaga is i steady of christmas ham.

Christmas Music? Charles Brown's COOL CHRISTMAS BLUES....no doubt. I love the butternut squash roast, and made it when I was in college, and broke, and not really Vegan. It's a great treatment for squash when money is tight. Your entire dinner looks wonderful!
I would try and make a roux instead of using cornstarch for the gravy. One part coconut oil for the fat, one part flour. But if you don't do gluten that might not work
Omg I'm Marvin watching this 😂 I also hated sprouts but i realised that was cos everybody who ever cooked them for me boiled them for about 2 days 😂 but if you bake them they come out so much nicer

Your plate just radiated Christmas! Everything looks delicious, I think I'll try the squash. I'll stick with my Brussels though...I like them cooked with fresh lemon juice and butter. Love swing- big band Xmas instrumentals, Ella Fitzgerald, Satchmo era classics for Christmas.
I know some people aren’t a fan of using microwaves, but if you don’t mind- you should totally try microwaving potatoes rather than boiling them before roasting. It’s quick, uses less cooking tools/pots etc, and it leaves the potatoes a bit drier on the outside which allows them to crisp up better. It’s a good foolproof method to getting perfect, soft on the inside crispy on the outside roast potatoes every time. Also: totally agree re mint!! I always have mint sauce on roast potatoes. It actually wasn’t until I stopped eating meat that I realised- I never actually liked lamb- I just liked mint sauce
One of my girlfriends and I have decided to do a vegan diet for December (and hopefully beyond) and I was just wondering what I would do for Christmas since my children will be here from school. Thanks so much for the ideas!!
Some more ideas for you: yellow squash and onions (with a little salt, pepper, roasted garlic and herb seasoning, and paprika), sweet potatoes, greens, broccoli casserole (with non dairy cheese, onions, salt, pepper, vegan butter, and a little oil and make sure the breadcrumbs are vegan), cranberry sauce, mashed potatoes, dressing/stuffing, mac and cheese (with non dairy cheese, non dairy milk, butter, salt, pepper).
Just found this! Gave me some great ideas!! And thank you, thank you, thank you for that cranberry hack. I can never find fresh cranberries and I don’t really like canned. I’m going to try your crans. Thanks again. I’m a new fan!!
