Sigil is a fascinating place, and fortunately as it's a city with politics and creatures from around the multiverse you don't need an updated book for 5E or anything. The philosophies of the factions, the strange powers of the Lady of Pain (whose very existence is an unknown and supposed to be unknowable), all of it is system-agnostic. With the Planescape campaign setting for 2nd edition, a good GM could easily run a full campaign in Sigil in any edition of the game (or any remotely adjacent game, such as Dungeon World, Pathfinder, etc.) because the point of the setting is not the game stats of the creatures in the city.
One thing that would be fun to investigate is how magic works in the D&D world, and why it is divided into levels. MrRhrexx has good videos on this, such as his video on the known spells that are higher level than 9th level, which is generally the highest level currently available to non-god entities, and the events that led to why 10th level and higher are not allowed any longer to mortals, except via loopholes and such.
I think I know of the video you're talking about. I did recently react to MrrRhexx's video on Baldur's Gate, so I might check that out next.
Exploring series also does some nice Warhammer 40k content too
