CHILE RELLENOS
INGREDIENTS
4 poblano peppers
4 large eggs
8 oz Oaxaca cheese
1/2 cup all-purpose flour
1/2 tsp salt
cooking oil for frying
TOMATO BROTH
5 Roma tomatoes
3 cup water
2 cloves garlic
1/4 piece of a small onion
1 Tbsp tomato chicken bouillon powder
1/2 tsp ground cumin
1/4 tsp dried Mexican oregano
1/4 tsp black pepper
salt to taste
TACOS DORADOS
INGREDIENTS
1lb Russet potatoes
1/2 tsp salt
1/4 smoked paprika
1/4 tsp granulated garlic powder
1/4 tsp granulated onion powder
1/4 black pepper
15 corn tortillas
cooking oil for frying
shredded lettuce
slices tomato
thinly sliced onion
crumbled queso fresco
Mexican sour cream
pickles carrots and jalapeños
salsa of your choice
ENTOMATADAS
INGREDIENTS
8 oz can tomato sauce
1/2 tsp chicken bouillon
1/4 tsp ground cumin
1/4 tsp cracked black pepper
pinch of Mexican oregano
1/4 tsp granulated onion powder
1/4 tsp granulated garlic powder
salt to taste
9 corn tortillas (cold)
1/2 of a small onion
8 oz Queso fresco
cooking oil for griddle
LENTIL BEANS
INGREDIENTS
1 1/2 cups lentils
6 to 8 cups of chicken broth
1/2 onion
1/2 red bell pepper
1 rib of celery
1 large carrot
3 cloves garlic
fresh thyme
1 tsp oregano
1 tsp smoked paprika
1 tsp ground cumin
1 dried bay leaf
salt and pepper to taste
COLD SESAME NOODLES
INGREDIENTS
4 Tbsp (70 g) sesame paste
4 Tbsp (70 g) creamy peanut butter
2 Tbsp soy sauce (30 ml)
2 tsp rice vinegar
1 clove of garlic grated
1 tsp grated fresh ginger
1/2 tsp Korean red chili powder
1/2 cup (125 ml) water
14 oz fresh egg noddles

Sounds gross, but have you ever tried them with sour cream , raisins and chopped pecans on top? It is to die far. Have on found one place that makes them, La Bodago in Midland Texas. ❤❤

@Sandra Wilde it does sound gross but i like buttermilk pie and don't like buttermilk so I'm up for trying new stuff. Love fried eggs on my enchiladas too.

Chile Rellenos is my favorite mexican food!
It's funny how potato tacos are made differently. My mom would make these for us during lent. She would fry the tortillas first then add the potato and put cheese and put them in the oven. I fry my tortillas first then add the potatoes and lettuce, tomato, and cheese and I add parmesan on the outside of the tacos. Believe me, you will love the taste of parmesan. I've never had entomatada tacos. I'll have to give that a try. I made potato tacos on Friday plus stuffed Anaheim chiles. The thing with these chilies, some will be mild and some will be spicy. It's like a surprise in each chile. My mom used to make camarones empanizado (stuffed shrimp). Not big shrimps but in powder form. Thank you for these tasty recipes. Also, I've heard people say that you can eat chicken during lent, but my past priest did say "anything that walks on the face of this earth, is meat" so no, we cannot eat chicken during lent.

That last one... I've always loved cold noodles with a pinch of soy sauce and sesame oil, but always felt something was missing. Know I know it was peanut butter. Mindblown

Watched a hack clip yesterday by a English guy, Barry Lewis. He showed how to separate eggs using one of those hinged tea strainers. You just scoop up the yolks and excess white drains through the holes.

My mom makes our chile rellenos with Big Jims stuffed with cheese and dipped in a thick pancake batter. The batter is so good.

Hello Simply Mama I think your recipes look delicious - with very clear instructions. I Also think you should never have to say "Sorry" for using or not using fresh ingredients. Giving options to those that have or not have access to them. Using the ingredients that you have in your pantry shelves is always an awesome feeling where you do not need to go to the store every time to shop for ingredients needed. We sometime also add refried beans to the entomatadas -top them with green onion, lettuce and couple slices of avocado.- Thank you for you patients and for sharing your knowledge. Hi Angelica, I definitely understand about having issues separating eggs. I have severe arthritis, and what I have found works best for me is to crack each egg into a small bowl, fish out the yolk with my fingers into one bowl, and then pour the egg white into another bowl and then repeat. Hope this helps!

You are like me @Bryan S. We have to find alternatives to EVERYTHING. Simple things others take for granted. I'm going to try DMSO 99% gel. Wish me luck. I pray it helps. I have 2 arthritises (AS & RA) screwed up spine with 7 vertebrae and Fibromyalgia. Too much pain. Deep bone pain really hurts.
What a great video. You did well in explaining how to make your dishes. The Chili Rellanos are my favorite.
My mom taught me to make the sauce a different way. When your sauce starts to boil add two bay leaves and a can of drained and rinsed peas. SOOOOOOOO GOOOOD.
Oh forgot to tell you that she would fry thin slices of onions first then add your tomato sauce to get a taste of onion boil then add the bay leaves and peas and season with salt and pepper.
I have become a big fan of the combination of ginger and garlic that comes in a jar. So easy and I find that I use more ginger and garlic because it is so easy to just spoon it out. Talk about lazy......but I love it. I use it in stirfrys, salad dressings, soups, noodle dishes - you name it. Nothing wrong with fresh but easy is good. thanks!

I’m working on getting my nerve up to make chili Relleno b/c I love it. I think for the tomato sauce I am going to use some V8 like you did when you fixed you grandma’s lunch. I made that basic but very delicious picadillo recipe a couple of times and can tell V8 really adds to the flavor.
I see you are not vegan or vegetarian but, enjoy plant rich foods.

I'd love more "Meatless" recipes like Pea Soup, Chinese Hot and Sour Soup and would love to make Chinese style Bourbon Tofu. The sauce is delicious but, I'd love to make from scratch. I bet from your Mexican traditional cooking you'd be great at making Indian Potato and Pea Samosas. One of my favorite treats!

You can also cook a chicken Caldo and cut Cauliflower in little pieces and put them in this egg mixture and put them in the boiling water with the chicken soup and Wow they are so delicious

You make that look so easy! Look your cooking! For my entomatadas I always use Hunts tomato sauce, Colby jack cheese and flour tortillas. So yummy! My mother in law taught me this recipe.

Breakfast is always my favourite meal of the day and your oat smores combination looks like a good one that I'm going to try. When I make smores. I build the biscuit, chocolate and marshmallow and microwave for a few seconds. You don't get that toasted flavour but it's a quick and easy one for the kids...

My daughter and I once went to a Mexican restaurant where we used to live and we saw this on the menu so we ordered it. When we got our chiles rellenos, they were not the conventional ones. They were without the egg and flour coating. 😲 WHAT?!? NO! These are not the chiles rellenos that I know! So I spoke to the owner about it and he told me that they changed the recipe because he claimed had the people want a healthier version.
I don't care what the people want or if it's a healthier version. I want the conventional old traditional chiles rellenos! So guess what? 😁 The owner himself went into the kitchen and cooked us the old traditional conventional chiles rellenos. 😁😊😋 Yumm!

People and "authentic" need to chill. My Gramma was first generation Mexican American and her sauce is the best and I don't care what anyone thinks. It's similar to your sauce oil, chili powder, bouillon powder, canned tomato sauce, and flour and water to thicken. It's delicious!!! I add cumin, onion and garlic powders to it too. It's authentic to our family. And we love it. And miss my beautiful Gramma.

Do you by any chance have a green sauce recipe as well for the entomatadas? Do you ever make homemade corn tortillas for the entomatadas? Do you always use queso fresco if you have it or is Oaxaca a cheese choice for the entomatadas? If I remember correctly you said you could use mozzarella cheese as well. I do NOT think you are lazy & appreciate all the ways you show us how to use different ingredients. Wow you took me way back to my childhood with the tacos de papa except my mom used to mash the papas with comino, salt, pepper, onion & garlic powder with pickled serrano juice and the serrano peppers mashed as well with queso fresco. Topped with more queso fresco , pickled cartots, raw and pickled onions, raw red or green cabbage, roma tomatoes, . My fave tacos ever!! 🎉fiesta explosion in your mouth. Mmmm! 😉
