First Time trying Filipino Kare Kare & Pochero. Foreigners love Filipino Food

    Welcome to a new episode here in Cebu, Philippines! In this episode, we went on a new food endeavour to try one of Philippines most famous dish called Kare Kare, which is a type of Filipino stew with a rich and thick peanut sauce.
    After doing some research on the internet, we have decided to visit a local restaurant called Hukad at Ayala Cebu City, which is located quite close to our apartment. We took motorbike taxi to the shopping mall and the drivers were super friendly and kind.
    We arrived the restaurant just when it opened, therefore we were the first customers walking in.After asking for advice from the waiter, we decided to order the Pochero and Kare Kare, which surprised us with their big portions when it arrived. Keeping watching to find out our reaction!

    Basically when you eat Kare-kare, you add shrimp paste to the Kare-kare in every bite to add more flavor and saltiness( not to the rice), to balanced out the blandness of the peanut sauce. And I think that it was not pochero what they gave you, it's Bulalo (the beef broth soup with corn). Because pochero usually comes with "saging na saba,"(banana)and potatoes with thicker broth because of the tomato sauce. Anyway, I'm glad you enjoyed it. Bulalo is one of the most popular dish in the Philippines. If you got the chance next time, also try Beef Caldereta(beef stewed in tomato sauce and liver paste with carrots and potatoes), Menudo (pork in tomato sauce) Chicken Tinola (chicken broth with ginger and papaya) Pinakbet (vegetable dish, squash, eggplant, okra, string beans), Laing (Taro leaves cooked in coconut milk) and Chicken or Pork Adobo(most popular Filipino dish).

      In Cebu (Visayas, too, I think) we do call what is Bulalo in Luzon as Pochero. Same dish, just called differently.

      In Batangas where my family is from Bulalo doesn’t have bananas in it but potatoes and string beans! If it diverges from this in ingredients then we refer to it as Nilaga!

    Kate-Kare is originally made using Oxtails. A lot of restaurants use regular beef because oxtails have become very expensive and makes the authentic Kare-Kare expensive Or unaffordable to the regular Filipino pocketbook.

    You must go to Tagaytay to have the best Bulalo. anyway it's just an hour and a half away from Manila. The weather there is cold and it is where Taal Volcano is located

    As Promised, I'll try to describe some of the Menu |items from Hukad's menu :)
    Sinigang - Pork, Fish & Seafood. Sinigang is a Sour Soup that uses Tamarind as the souring agent. I've read that you have tried a watermelon version which is more of a modern take for the dish. Different regions use different souring agents in place of Tamarinds. The sourness that sinigang has leans more towards the fruity side paired with umami from the meat, sinigang for me tastes fresh and electrifying. Ot ususally comes with KangKong ( somewhat similar to spinach), Radish, Eggplants, Taro and Tomatoes
    Tinola - Tinola is a ginger based soup. Ginger is the main flavor that is pronounced in the soup. It is a very light flavored soup that is usually made with chicken or in hukad's case, fish. Since the soup is generally flavored lightly with ginger it pairs well with the delicate taste of fish, and ginger rids of the fishiness that might come with the fish. The dish is usually made with a meat, Chayote, Malunggay ( small round greens ) or young Chili leaves.
    Hamon - technically refers to some meat treated as Ham. usually, meats that are "hamonado" are sweet and savory :)
    Pinakbet - Stir fried veggies and meat in shrimp paste. Pinakbet is made with Squash, String beans, eggplants, Bitter gourd, tomatoes and is usually paired with small bits Pork as the meat component. it is cooked by just stir frying everything in a little bit of shrimp paste as the main flavoring agent. Some versions might have more sauce than others, but this is a veggie heavy dish :)
    Kare Kare - Beef, Oxtail and Tripe in Peanut sauce usually paired with shrimp paste. Kare kare is usually milder on it's own that's why it is always paired with shrimp paste. It is a very luxurious dish and is very rich. The meats are usually very tender, the main highlight of karekare are the oxtail and the tripe. You were correct when you added a bit of the shrimp paste every spoonfull, it was meant to be eaten with the karekare as an accompaniment to the dish...think of it like adding ketchup to fries.

    Don't be shy to ask what every dish is made of and how it tastes. I think it is important that you get a little information form the staff on how the food taste and what it is made of so you wouldn't be surprised when you get them :)

      To be honest they didn't serve you POTCHERO that's BULALO , potchero doesn't have corn in it, it has SABA a type of banana

    That branch is weird or its just where i come from.. The pochero supposed to have the green banana/ plantian, potatoes or sweet potatoes, cabbage or pechay (bokchoys big sister) you can also add green beans ( baguio beans ) and the nilangan tagalog pork or beef have potatoes, corn and cabbage not the other way around.. Kare-kare or peanut curry is one of our families comfort food but we like the pork leg and knuckles than beef...

    I’m glad you liked the ones you chose today!
    Usually, Filipino starters are generally eaten with rice. Soupy and saucy starters are amazing with rice so I do hope if you try more of them in the following days you try them all with rice :) I’ll try to look over the menu you had for Hukad and try to explain the flavor profiles if I am familiar with them so you have a better idea for the next ones you might be interested to try. Generally, some dishes are similar between restaurants, they just vary in the ingredients, very much like how staple recipes differ from every household. There isn’t a set recipe for Filipino dishes so the variations are limitless :)

    Pochero in Luzon is a stew with tomato sauce, but Pochero is Cebu looks more like what we in Luzon would call Bulalo.

      Yup! Pochero in Cebu is the Bulalo or Nilagang Baka in Luzon.....I'm Cebuano😜😊

    Also Kare-Kare is a Filipino attempt into replicating the famous Indian curry, The British went to the Philippines with Indian troops and then the Indian troops sold their curry dishes to the locals, when they eventually left Filipinos tried replicating it and Kare-Kare was born.

    It’s truly crazy that buko shake would be out-of-stock in a restaurant in the Philippines. It’s like saying that mango is not available in the Philippines. Perhaps mango is not in season but buko? The Philippines is the 2nd largest producer of coconuts next only to Indonesia. Why would it be out-of-stock?

    Whenever you buy something from Philippine restaurants, it's usually for sharing for 2-4 people. Ask them if there's an individual dish version of it.
    You guys must have really liked Filipino food for you guys to manage to eat an entire bowl.

    It’s shrimp paste. Usually made from very tiny shrimp and never from prawns. Perhaps to make it sound high-end!

    BULALO dish should be tried. I recommend you when you really liked soup based Filipino food.

      It is definitely Bulalo. I dunno why that restaurant calls it as such. The Pochero I know is a chicken or pork stew in tomato sauce with plantains, potatoes, string beans and chickpeas...

    Yep do sinigang cooking by using local ingredients from where you currently are... do fish, chicken, pork, beef and or other meats.... also try different souring agents like santol, calamansi, pakwan, guava, tamarind, kamyas, batwan, etc....

    Not a pochero but it is called bulalo, it has corn. Pochero is so different it has a bit thick tomato sauce and slices of thick bananas called saba.

    Shrimp, Pork and Bangus/Milk Fish Sinigang are all authentic... What made the other Sinigang that you tried not authentic is the Watermelon. Traditional Sinigang doesn't have Watermelon.

      Yes, that's Manam's own unique take on Sinigang, which I must say, gets the best reviews because it's something new to the taste as we cook it traditionally without sugar or watermelons. Just Tamarind as the main sour ingredient, beef broth and fish sauce.

    Love how you drink your soup directly from the bowl( like I do). Common place in Asia but not in the States where being judgemental is a common trait(very woke).

    Dish Part 1
    - kilayin/kilawin (the "mother" of ceviche with coconut milk)
    - soup number 5 (bull's member soup) 🤗
    - Bicol Express (several versions, the most common is pork stew in coconut milk and chilies)
    - kaldereta (🐂🥩 in tomato sauce + liver paste + potatoes + pepper + lots of onions +++)
    - tortang talong (eggplant omelet)
    - relyenong bangus (grilled milkfish stuffed with veggies + fish + ground pork)
    Sweets/Pastry
    - turon (fried banana crepe, my all-time favorite)
    - puto bumbong (purple rice cake cooked in bamboo casing + coconut shavings, also called the Christmas rice cake)
    - pan de coco (bread stuffed with caramelized coconut shavings, available in any neighborhood bakery so there could be differences)

    The shrimp paste is supposed to be mix with the beef and the rice on every bite.
    If you eat Kare Kare without the shrimp paste, it will just taste bland. Every bite/spoonful should have rice, meat and shrimp paste.

    A friend from korea bought mang inasal to take it home because his family love it when they were on vacation here. You should also try 7-11 and mini stop fried chicken and compare.

    try to watch other vloggers who have wireless microphones attached to their clothes with fuzzy filters. maybe you should get one to improve sound quality with noise cancelling features. the ambient sounds will be subdued.

    Traditionally sinigang is cook with sour vegetables or fruits like guava, kamias (bilimbi), santol (cottonfruit) or green mango. But the most famous for what I know of, is the fruit Tamarind. (Note you can use "Knorr Sinigang mix" but I think fresh tamarind is the best or you can use both)
    So first cook the tamarind and extract its flavor , you can know if it is done if it is falling apart and becomes a paste.
    After that put garlic, red onion and, the pork (pork Belly prefered)
    After the meat is tender season with salt and pepper to ur taste. (Msg is optional haha)
    After seasoned put the veggies.

    @Project Where...Visit SM Seaside Cebu, the biggest mall outside Manila. There you can enjoy lots of activities to pass your time such as ice skating, indoor archery, virtual games, bowling, billiards, indoor go karting, or simply strolling around the circular-shaped mall of 40 hectares space to roam, at 10 hectares each floor. There is also a huge sky park or sky garden at the 4th level, occupying half the circle of the entire mall surrounded by dining outlets. Exploring the 40 hectare-mall is no problem as there is an internal public transport that takes visitors around the mall via chauffeured golf carts. Or you can even rent an e-scooter to take you around or you can rent a regular bike to get your legs some exercise at the sky park.

    There are local restaurants that are not as expensive but it might take some time or inquiries for you to find them. Always ask for their bestsellers and check if they have combination dishes of more than one type but with smaller portions. Also ask for what appetizers, condiments, and dipping sauces are supposed to match with a particular dish. After the meal, if you're not too full, then you can try a different dessert for each that you can share or swap.

    I think kare2x without the shrimp paste is bland, you mix the shrimp paste with the kare2x soup to give it flavor then add it to the rice.

      Waiter should have told you to mix the shrimp paste to the kare2x. When we don't have much the shrimp paste serves as viand with rice, from waiter's perspective. Kare2x is a Luzon specialty, many of us from the Visayas don't eat it much.

    Pochero btw is also a Spanish/ Latin dish meaning stew pot, each Latinized country has a version of this including the US.

    For me... I order garlic rice if the food is fried or grilled. Garlic cuts the grease and smokey taste. Plain rice if the food is saucy or soup based. I don't want the garlic rice to add flavor over the sauce or soup. That's just me though. 😅
    On a side note... My favorite sinigang is Salmon Head and belly! Although it'll be harder to cook that now because our stupid Government prohibits the sale of Salmon on local wet markets... 😅

    Chef Claude Tayag, a renowned chef and ambassador of Filipino cuisine defined Filipino cuisine as a mixture of different flavors in one bite. That reflects in our knack for having condiments like soy sauce, vinegar, calamansi and chilies. You have something grilled or fried, and you dip it in a concoction of these condiments and voila! You have a flavor explosion in your mouth, balanced by perfectly cooked rice.
    The same thing is true with kare kare. I get what you felt when you tasted it for the first time, it really is unique and it really takes some getting used to, but the principle of having a perfectly tender meat, with crunchy vegetables in a rich and thick, and quite sweet peanut sauce balanced by the salty kick of the shrimp paste in one bite really does the trick.
    To turn your karekare experience up to the next level, try the Lechon kawali kare kare version. Tender pork meat with crispy rind, with rich peanut sauce, fresh and crunchy veggies and shrimp paste. Have it with a bowl of steamed rice and oooooh...man, priceless. 👌❤️

    Hi guys... I've been to Cebu many times because of the Sinulog Festival... I was amazed by a Restaurant named Las Casas its like a ancestral house that was made into a nice resto.. the deserts are made in heaven... i Miss Cebu specially watching u.. Enjoy guys have fun..       @@project_where next time try the tinola - it is soup dish with papaya and malunggay (vegetable leaves) and chicken dish. Compared to sinigang the soup of tinola is not sour. But it is good for like rainy season or when you sick Ahhaha but for daily too it’s good🤣🤣🤣.
      Try also the pares mami/bulalo. They are one of my favorites

    Kare-kare with the shrimp paste is an acquired taste specially when u are foreigner. The selected dish you tried are the best and comfort food for all filipino specially for special occasions. Also if you dont mind you can takeaway the foods and reheat it at home but since u are going in an adventure its better that u finish them for your energy.

    Sinigang is a tamarind soup the root name for it is actually "Sinampalukan" key ingredient is Sampalok (Tamarind), Sinigang uses different souring agent instead of tamarind like kalamansi, lime, lemon or guava but Sinampalukan is the original Sinigang, you should try cooking Prawn Tamarind Soup "Sinampalukan Sugpo" because sinampalukan works best with prawn and certain type of seafood like fish, sinampalukan sugpo is traditionally cooked with the prawn shell on that's where the flavour is coming from, you can just peel the shell out afterwards for presentation or if you don't want to use your hands peeling it whilst eating 👌👍😉😎✌.

    What you guys have actually ordered is Bulalo. Pocherong Bisaya is like Bulalo.
    The real Pochero is very different form that.
    Try to research it.

    The difference between ALAMANG & BAGOONG is that ALAMANG is Shrimp Paste and the BAGOONG is Fish Paste and the PATIS is Fish Sauce

    usually dips/condiments/sauces are meant for the food itself not rice, so take note of that for the future 😆 the only exception so far is the chicken oil from mang inasal that is usually put on the rice

    Shrimp paste (Bagoong) is for the Kare-Kare not the rice, peanut sauce is quite bland and the shrimp paste enhances the flavor.

    I think garlic rice is only best with, tapsilog, longganisa daing. But plain rice is better with kare kare and pochero and other dish with sauce.

    Yummy …. I was salivating for that KARE KARE. But thePOCHERO is differently cooked in the Tagalog region. What you had is close to BULALO. TAGALOG POCHERO has more ingredients in it like Saba (a banana variety that can be cooked in different ways), tomato sauce, beans & chickpeas. The soup becomes creamy not brothy.

    Have you tried in other places? In outskirt of Makati City,Go to Manila, Pasig City ,tagaytay! Then go to BORACAY? NOT ONLY IN MAKATI!

    That is not pochero, that's bulalo. The waiter must have been confused which is a good thing because beef bulalo is much better than pochero. Next time if you get the chance eating bulalo again, pair it with rice, fish sauce and kalamansi to enhance the flavor more.

    Why don't you eat rice with viands? You're making Filipino ancestors cry. You should've ate the rice also with that 1st dish you had. Then it's (Bagoong) shrimp paste not prawn paste. We Filipinos call it shrimp paste generally, and poor people use bagoong as a viand. It's supposed to be mixed well with the kare-kare next time ok? Not with rice. We also put shrimp paste on a slice of unripe Indian mangoes. It's a Filipino street food. If you're talking about the same sauce and the same ingredients, then it's Oxtail Kare-kare. Still a Filipino dish.

    why do foreigners eat garlic rice ( fried rice ) in a soup food i think its not perfect combination it's better to eat plane rice to show the real taste of soup like SINIGANG, NILAGA, BULALO... bcs when they cook this kind of soup they dont use garlic... bcs the taste of garlic is too strong and its not good in that dish also in kare kare, dinuguan, not good in garlic rice... . but you eat it with GARLIC RICE... lol....😅 garlic rice is good in a dried food like fried and dried dishes ....

    You ordered for 4 people. The Pochero in Cebu is Cebu style. But if you eat Pochero in Manila, we have it the original style not Manila style or Luzon style but the original style like how it was when it was cooked in the Philippines for the first time. Pochero has Spanish influence. If you want to taste the real Filipino Pochero, go to Kuya J's. That's the way I cook my Pochero and is very different from the one you just ate and 10,000x better.

    I don't know about the Pochero guys, but I think they served you Nilagang Baka instead, the Beef Pochero should have tomato sauce, chick peas, chorizo de Bilbao and plantain instead of corn. Nice blog though! Keep it up! 😁👍

    Kare Kare is influenced by Indian/Indonesia/Thai use of curry (“curry curry”). The proper way to enjoy it is to use liberal amounts of the kare kare sauce on your rice, mixed with a small amount of shrimp paste, meat and veggie. It’s more of an acquired taste if you are not used to the shrimp paste umami taste.

    I implore you guys to go to Cavite and visit the 'Emilio Aguinaldo' house (First official Philippine president) as this house is something else. Full of secret hidden places. It will be worth your while.

    I think you havent tried pork adobo yet, its the most famous filipino food. Also Bicol Express and Dinakdakan. But i dont know if you can find it in restaurants. Usually you can find it in Carinderia

    Bulalo takes a long time to cook. The very least is four hours.
    Usually the cook simmers it for four hours starting at 12 midnight to make it in time for breakfast at 5 am. That's why the beef is so soft.

    hi the next time you eat kare-kare, you need to put some portion of shrimp paste in the kare-kare main dish and mix it. the amount of shrimp paste depends on your liking. the waiter obviously don't know it. Filipinos have different styles and ways in eating kare-kare. However, it's not an authentic kare-kare without the shrimp paste in it.

    Pochero is a Cebuano dish but Karekare is a Tagalog dish so Cafe laguna restaurant would be better to get a kare-kare.

    The correct way of eating kare kare is the combination of meat, sauce, rice and shrimp paste. because the peanut sauce itself is lack of saltiness, the shrimp paste will give much flavor to the sauce and rice.
