Im filipino living in Canada and i always eat Kimchi fried rice 3x a week now lol! i know how to cook them now! im gonna learn how to cook other korean food next time !
Re: eating this with noodles, if you have leftover sauce it can be used for dandanmian. Just heat, mix with chili garlic oil, add some noodle water (assuming you don't use very alkaline water), mix, then place the noodles over that. Garnish with ground beef. This makes for a very beefy dandanmian over just sesame paste or creamy peanut butter. As for the greasiness, that's because of the tallow (beef fat) that is rendered in the liquid, which is why tendency is for this to be served piping hot. If you make this yourselves and can't use the regular meat cuts (tripe and ox tail) anyway, just start out making galbitang, then let it cool and chill. Skim the fat off the top, heat to liquify, then heat the rest. Slowly add the fat to peanuts in a blender, then use a bit of the broth. Slowly mix the peanut slurry into the galbitang then stew for a bit to infuse the peanut before adding the vegetabels. Using this method (with any cuts of beef, I'm just using galbitang as a quick reference) uses the rendered beef fat instead of there being beef fat in the soup and then adding a peanut slurry/peanut butter made with vegetable oil. Best if you save a bit of extra beef fat just in case the galbi doesn't have a lot - it will still result in less fat than making the peanut butter separately using vegetable oil.
I agree that kare-kare is a rice killer. I can finish 4 cups of rice with that dish. Nilaga, sinogang, inihaw na liempo, pork bbq, bulalo, tinola, kaldereta, mechado, tocino as well.
