Love the comparison, but imho where the filet comes from on the fish makes a HUGE difference and I’m not sure the filets you tried were from the same spots. I really enjoy the extra fatty pieces, especially for sushi.

From my experience, farmed salmon is normally pretty forgiving due to its fat content while wild salmon need to be cooked to the perfect doneness, else it'll be dry. Especially considering how small it was, I wouldn't put wild sushi-grade salmon in the smoker for more than 20 minutes, and even that might be pushing it. That sliver of fish didn't stand a chance.
farmed salmon is also the worst thing you can get. Best salmon will always be wild caught troll caught winter king salmon is the best you can get period.
farmed salmon is also very toxic and horrible for the environment and they have to feed then dye pellets to turn the flesh a pale orange…..if it wasn’t for the dye the flesh is a very pale grey.

You need to do a better comparison on salmon there are 5 species of wild caught salmon so your “wild caught” is very vague. Troll caught Winter King Salmon from SE AK will be the best out of them all even the “sushi grade farmed salmon you picked” Sockeyes are best cooked seared and fast like blackened and will always be one of the driest salmon you can get. The fattiest are King Salmon, Chum Salmon, then the Coho. All wild caught salmon bright silver out of the ocean are great cooked over charcoal
It can be flash frozen just like farmed Atlantic. However because it spawns up fresh water it is prone to parasites, but the flash freezing required helps prevent that. Highly recommend you try it, its very tender and less oily.

Glad you mentioned the Sockeye raw. Its definitely the best out of the bunch raw. The filet mignon of Salmon.
Might need to try it that way myself. I'm a pescatarian and eat a lot of salmon but I never really liked sockeye taste. Maybe raw the move
imo sushi grade is better raw it’s just fattier and meant for it being consumed raw tho the sockeye is great when used for sashimi
