That looks delicious. I'll marinade some your way, but also make some with just salt and pepper. Outside skirt steak is my favorite cut next to ribeye. I need to get some of that Wagyu.
You can get away without marinating outside skirt - especially Wagyu - but the flavor bomb that marinade makes is so good! Please come back and let me know what you think after you make it!

Fantastic Al! For the tortilla press, we use plastic from either a plastic bread bag or even just a cut up zip lock bag to prevent the sticking just a small pro tip but otherwise great! Very very very nice my man!! Over a live fire too! Can't beat that, cheers!!

The stems definitely affect the taste makes it stronger which is a good thing ,also Cinco de Mayo is very celebrated down in Mexico it's like their independence day...

LOL Hola Anrea! The tortillas were so good! I buy low carb "flour-type" tortillas at the store but I can't find them with the taste or consistency of corn tortillas - and this recipe nailed that. One of my Mexican friends told me after watching the video that a) I should use plastic - like a ziploc bag cut in half - on the tortilla press to keep them from sticking, and also that I should throw a little of the marinade on the griddle and get some of that flavor in the tortillas as well. I'll be doing that for Friday's actual Cinco de Drinko dinner!

Plastic bags or ziplock cut in halves plus some drops of water or vegetable oil are you best friend for the tortilla press
