Lemon Poppy Seed Cake Bread

Ingredients for small 1 pound loaf:
1/4 TSP salt
3/4 cup sugar
2 sticks (1 cup) softened butter (room temp)
2 eggs (room temp)
1 TSP baking powder
1 1/4 cup all purpose flour
1 TSP grated fresh lemon zest (or a bit more to taste)
2 TBSP poppy seeds (or chia seeds)
1/2 cup raisins (and another 1/2 cup after kneading) raisins optional
to store after baking let cool completely for at least half an hour then wrap tightly with plastic wrap or foil and store in dry cool place room temp.

Big guy, there's never a time your videos don't make smile. I scored a 20-year-old NEVER USED Zoji bread machine. It was immaculate. I'm scared of making this recipe because I heard that poppy seeds are brutal on the bread pan. Have you heard this or had any experience with damage to the pan coating? Thanks again for making some amazing loaves and sharing your love of carbs with the world!
hi Rafael, actually the poppy seeds won't hurt the pan as long as you don't put them directly on the pan. They should be mixed in before putting them in again.

No problem at all 😃 the best substitute I have found for 1 egg is to add 1 teaspoon of baking soda and 1 tablespoon of vinegar instead. That is the best substitute I have found so far

Hi, absolutely. It’s not an exact rule but if I do substitute oil for butter I use 3/4 of the amount of butter called for. For example if I use 1 cup butter I would use 3/4 cup oil or a pinch less. Hope that helps
