Hey Moe. Great video. The part where you're sitting back with feet propped up enjoying a cold drink, just watching the fire and thermometers, is priceless. I don't have an offset (maybe if the right one comes along), but I have an old Brinkman Smoke 'n Grill I use. I put a chimney of charcoal in the fire pan then feed small splits. I leave the lid off and side door wide open so I can see the flames. After the sun goes down it's like sitting by a campfire, only with pork steak or chicken wings cooking on the top grate. All the days cares just melt away. Thanks again Brother. Made my day. Later

Hey again Moe. Using splits this size seems to hold good cooking temps with just one on top of a good coal bed. How long will a split burn and hold temp before you have to add another. Also mesquite burns hotter than most woods, according to other You Tubers. Not much mesquite to be found in central Alabama so I don't know firsthand. If so will one split of oak or hickory keep these temps as well. I'm looking at Highlands. Size and price range seems to be right for me. Thanks Moe for these teaching videos. Later
Mesquite does burn hot. Growing up its all my dad used and still uses. Naturally it's what I started using. A size split like in the video will last me up to 45 minutes. Depending on the size. I tend to use smaller spitls because I want temp to be low.
Oak, hickory, pecan and fruit woods are plentiful around here. Mesquite, not so much. Thanks for the info.
Man I agree with you 100% something about just sitting back in a chair smelling the smoke and tending to the fire. I love my Oklahoma joe bronco as well. Definitely one of my favorite grills. Hope you enjoy breaking out the stick burner and looking forward to some great content off of it.
Its just relaxing burning wood.. seeing the fire and the smell of the wood. More to come from the Highland.

I just recently got a bronco pro. I absolutely love it. Gonna cook some wings tonight on it. I’m old school as well and I want me one of these stick burners. The way times are getting we need to be in touch with the old ways of doing things. Love your channel.

You're welcome! I'm glad my video has helped you. The Highlands can be tricky. I always say, use smaller wood splits if you want a low temperature.

Man! I truly enjoyed your video. I have the same smoker and had problems with temperatures high at the top of the smoking chamber and low on the grate. Yes! You have to understand your smkoer.

@@MoesBlackGoldBBQ Yeah this things a beast! I want to try a brisket but might just do a couple racks of ribs first to get the hang of it. All my buddies run Traeger pellet grills and I’m over here with the real deal lol
With your Horizon, you should catch on quick to smoking. Horizon will hold temperature better than mine. It's a thick metal, helps it retain heat. Figure out how many splits of wood and how big or small they need to be in your firebox to get the temperature you want to cook at.

This teaches me patience. I just seasoned a new Highland today. Dumped a chimney in and it was good and clean, Temps holding and pretty even. As soon as a put a couple chunks on things got a little screwy. It just doesn't flow enough to keep the burn clean. Now I know just keep the door open. I need to adapt or keep regretting this one. I did the gaskets and sealant. Maybe it's supposed to leak to get more air but that firebox gap was silly.
Congrats on your new Highland. I've had mine since 2016 and came across issues with temp control. I also placed gaskets on the cooking chamber and firebox. I also sealed up the firebox since it comes in 2 pieces. What I learned is that the smoke stack is too short and won't draw enough from the firebox, which leads to issues keeping wood splits lit. A mod can be done to add more length to the smoke stack. I've learned to use smaller wood splits and to keep the firebox door wide open. A charcoal basket can improve your Highland too.

Love smoking on an offset but it is a lot more tending to than the barrel smoker. Where do you get your splits at? How many splits do you go through each hour? Excellent video Brother 👍🏻👊🏻!
It's the art of smoking, tending to the fire. I buy splits from the home depot and chop them into smaller splits. It keeps the temps below 275 using one small split. It will last from 40-50 minutes.

Yes. It's been determined that the smoke stack is too short and at times won't draw enough from the firebox and that can cause issues with keeping your wood splits lit. For me at all depends on where I have my Highland.
As far as the temp goes....heat rises so there will more than likely always be a difference in the temps on the hood gauge and probe....great vid!

Hey man, how much wood/charcoal do you use on for like a 8 hour smoke or whatever ur cooking? Thanks I went through a way more than I was expecting
I split the wood in half to get a smaller wood split that will get me in the range of 250F in my smoker, and that smaller wood split will last 25-30 minutes. So I use 2 smaller wood splits in one hour. If it's an 8hr cook and using smaller wood splits, I would use around 16 small wood splits. If I don't split the wood in half and use the whole wood split, I wood then use 8 wood splits. But I don't use the whole wood split, because I will easily get Temps past 300f. I don't want that when I want to cook between 225f-275f.
Never knew that about temp difference in these. A whole 100 points off almost. No wonder my brisket turned out wack. I spent 14 hours and was sure it was finnished. What temp gauge do you use? Geat video. Thanks!
These smokers aren't the best in quality. It takes time to understand how it works. Temps across the cooking grates won't be the same unless you buy or build your own tuning plates.
3:06 looks like you have some sort of red sealant around the fire box where the bottom and top are put together. What did you use to seal it?
I used LavaLock RTV high temp red adhesive glue. I purchased it from bbqsmokermods.com
How thick is the chamber/firebox?
Great video! Just ordered my first Oklahoma Joe Highland. Any idea on average how long one of your splits burns for? Trying to get an idea of how frequent I would need to tend to the fire. Thanks!
Congrats on the new smoker! It all depends on which type of wood you use. I like using mesquite, which burns hotter and faster. Reason why in this video, I use one small split and it will last for about 35-40 minutes and temp of smoker will range from 250f-265f. I like cooking from 250f-275f. I leave the smoke stack and side firebox vents wide open. A good idea will be to raise your wood/charcoal in the firebox. You can use one of the extra charcoal grates to do that. That's how I raise my charcoal basket off the bottom of the firebox.

I've never used wood chucks. If you use charcoal for your cook, sure use wood chunks. Wood splits is what I primarily use. The bigger the split, the hotter the temp will be. I tend to only use one split at a time. Thay helps me get lower temp. When you get your smoker, try different size splits. See which works best for you.

First of all I don’t use it enough but that will change. Not sure if I should leave the smoke damper all the way open on the stack pipe. Normally keep my fire damper open on firebox to let the fire breath better so I don’t get dirty smoke. I warm all my splits so they burn faster. I do have alot of leaks and need to works buying Seals.
Leave the smoke stack open. Only adjust it if you are having trouble controlling high Temps. I always keep the side door wide open on the firebox. I also use the extra charcoal grates to raise the charcoal basket. It keeps your fuel off the floor of fire box and allows air to enter to the bottom of the basket. Ask is able to fall and won't smother your wood or charcoal. I also use small wood splits and use one at a time. For me small wood splits help to get Temps from 225f-250f. Sometimes up to 275f. I have my cooking chamber sealed with a gasket, but if you don't go that route, with time the smoke will close the gaps in your cooking chamber. What size wood splits do you use? Is your wood/charcoal raised above the firebox floor? Another issue our smokers come across is the smoke stack being to short. With it being to short, it doesn't draw enough from the firebox. To fix that you can buy a 3"x18" exhaust pipe at autozone or another auto store. That extension will help. At times it helps when I can get a good draft on my Highland.

Put a plate in the bottom so you get better smoke distribution, keeps the direct heat away too.
I have a make shift baffle plate that extends out to the middle of the cooking chamber to allow heat and smoke to travel through the bottom.

If the grate thermometer reads 275 what will the grill thermometer read and is this consistent?
For My smoker the smoker temp gauge will always be higher than cooking grate level temp. Normally on mine the smoker temp will be 100f-150f higher than what the temp is at cooking grate level. Now that is with my Oklahoma Joe's Highland. Other smokers temp gauges can be more accurate.
about how often are you adding 1 split after the other burns out?
It will vary depending on the size, but the ones in this video would get me 30-45 minutes before I had to add another split.
do you only season your smoker once when you first bought it, or annually?
I seasoned when I first bought it and I season once a year.
If you can give a guestimate how long was the burn time with each split?
Roughly 20-25 minutes. The splits are on the smaller size.

Reason why there's a big difference in temp is cause your grill gauge is reading the top of the cooking chamber not grate level ..
That's why I using a temp probe to read the cooking grate.
Highlander or Bronco? Which would you go with?
They are both exceptional cookers, if you love maintaining a fire, then Highland it is but if you want a cooker that smokes, grills and when using the correct methods and charcoal you can get 20 plus hours of cooking time off one basket. Making over night cook easy. Then go with the Bronco and I choose the Bronco. I have so much fun with it. I love hanging meats in it and Bronco maintains temperatures well. Set it and forget it.

why dont you just prepare the charcoals and start the fire directly in the firebox basket ?
I find it quicker to start the wood this way.
I'm sure the gauge on your smoker is accurate! I have the same thing on my smoker(different brand). The thing is heat rises! So the area where your clip probe is( on the grates) will be cooler. You will need to make a panel that will deflect the heat from the firebox downward so it will travel throughout the lower part of your cook chamber before it goes upward!
Yeah, I have a set up of using foil paper and using it to wrap cooking grates and using them as a baffle inside the cooking chamber to allow the heat to travel through the bottom first.
