Uni to Uni guy here. Learned it years ago, has worked well for me. I know that the FG knot is the best but way to complicated for me. Plus I know I can quickly tie a double Uni in the back of a small boat getting bounced around in a little rough water. Choose any of the quality fishing knots you choose and practice at the kitchen table until you can quickly tie that knot without having to think about it too much. Remember that fish you just caught is starting to suffocate the second you pull the fish out. If plan to release that fish please do it quickly so maybe I can come some day and catch him too.

Is that first one really a GT? Looks more like a variation of the slim beauty to me.
Why would you tie a uni knot after having tied the Yucatan knot? Around 6:40- 6:47.
if u look at the direction it was tied(going towards yucatan) it would allow knot to slide easier thru guides when reeling in!!

fishing knots has different levels of strenght. So if your target is bigger fish you need a reliable knot.
