There is an old-ish (2000s) British horror-comedy about zombie sheep that I can't for the life of me remember the name of, but I definitely remember enjoying it. The absurdity of sheep so being dangerous was a big part of the fun.

That episode was the best not only in s4 but in whole series. Friends and enemies stuck in a dangerous situation and having conversations you never knew you would hear. Brilliant. And Hughie arc was great too

Plot convenience, like many others in this episode. They spent like hours to hike across the farm instead of checking every single buildings in it to begin with.
It may have also been the sheep were to fast. Neuman needs to be able to see her target in order to pop them. If even one escapes her eyesight the sheep could wind up fatally wounding her before she has a chance to finish them all off.
for more durable foes it takes more time (or impossible) and that is a massive risk as they can just maul her and she can't take that chance
