Considering he doesn't use any actual dairy products and only uses light alternatives I imagine that saves a bit but yea the portion sizes shown seem deceptive. Either they're shot in a way to make them seem bigger or he's saying you could have a portion of them at 550 but then shows an unrelated full box to make it seem appetising and filling but try and put some separation between his claim and the display
So for info, I've dialed all this in cronometer and I end up with 545kcals/12g F BUT - I didn't add the seasoning, garlic and parsley - I used 1tbsp olive oil and 2 tbsp light butter - To get that low I didn't use light cream cheese and milk but fat free ones - The leanest cuts of beef I have here (BE) don't have a single dot of visible fat on them and the label shows 100kcals/100g(23P and 0.8F), however it's tough af, especially when reheated in the microwave
he uses a little over 1 cup of milk for the whole recipe. Even using whole (3%) milk that's still only 150 calories for a cup, with 0% milk that's 90 calories. 300 calories for the cream cheese (going on philadelphia light cream cheese), let's say 90 calories for both servings of cheese, 742 calories for 200g dry macaroni. So 1,313 calories for all the macaroni (spices having negligible calories) So 1,313 split into 4 servings makes 328 calories each for the mac akd cheese. According to the USDA a beef shoulder steak completely trimmed of fat is 137 calories for 100g, or 1,096 for the 800g shown (now we don't know the exact cut of meat granted but it's very lean whatever it is and most if not all fat has been trimmed), 1tbsp of light butter has 52 calories... we don't know the exact amount of olive oil used so let's say 2tbsp, that should be more than enough to provide a decent coating so that's 238 calories, spices are again negligible. That's 1,386 calories for the beef all said and done. Add to the Mac and cheese split into 4 servings gives 674 calories. So above what's advertised... but if you can find lower calorie pasta (I'm going based on standard wheat noodles) then 550 per serving should be attainable.

There is no fat in mac and cheese and the cheese, milk, and cream cheese are all split across the 3 meals so their serving size is less and they are already low fat. Skim mozzarella has 5-6g of fat, low fat milk is 1% which has 2.5, I think low fat cream cheese is around 3-4g so if you add that together.
