It looks simply deiicious, I cannot wait to bake this at the weekend when I have more time. Update - baked this morning! I forgot to add the salt to the garlic mixture though so just sprinkled some at the end before going in the oven. It was a success, the bread was so soft. I've always baked plain loaves but will be baking this more often!

在这里再特别注明:
1、因为量杯量勺规格不同,特注明我用的量杯量勺规格,1cup=237ml 1/4cup=59ml 1tbsp=15ml 1tsp=5ml
,如果您的量杯量勺和我的不一样,就用电子秤称量。
2、因为每个牌子的面粉吸水性不同,这个配方里给出了180-200毫升的水量,自己根据实际情况做增减调整。
3、面团里的黄油使用融化黄油,我是把黄油放进一个小碗里放进微波炉叮30秒,您可以使用自己常用融化黄油的方法。黄油可以用等量的橄榄油来代替。
4、馅料里的50克黄油使用室温软化的,这样抹面的时候非常容易操作。
5、这个配方我做了两个大面包,使用的大烤盘尺寸是33X23cm,如果您家里有两个小烤盘可以放到两个烤盘里烤,分两份烤出来的效果会更好。如果您只想做一半的份量, 参考下面第六项一个面包的食谱,然后用9X5inch或差不多大小的烤盘烤,视频里4:45秒开始我有用9X5inch烤盘用普通白面粉烤出来的效果,大家可以作为参考。
6、只做一个面包食谱:面粉225克,白糖12克(1tbsp),盐2.5克(1/2tsp),速发酵母粉2克(1/2tsp),鸡蛋1个(留出一小勺刷面用),融化黄油或橄榄油20克(1.5tbsp),水80-100ml,水的用量和面粉吸水性还有鸡蛋大小有关,先加80毫升,再根据面团软硬度做调整,这个面团要偏软一些。馅料:室温提前软化黄油25克,切碎大蒜15克(大概半头蒜),小葱或欧芹适量(一小勺),盐1/4小勺或根据自己口味调整。

和Helly学习的第一个是免揉小面包,家里都特别爱吃,盯着做了一阵子,第二个是免揉土司,又集中每天做,每天吃,第三个是柠檬味的小蛋糕,集中吃的时候比较短,好像每次味道都不太一样,和柠檬汁似乎有关系,现在是这个蒜香面包,每晚睡前放冰箱,第二天早起做,还没吃够,已经连续吃了快一周了。都是当天做,当天就吃完。感谢Helly, 丰富了我们的主食。又省事,又好吃,揉面机可以处理了。下一个准备试一试肉饼了。

想請教老師,
我試過用這方法或湯種做不同面包,焗出來的面包頂部跟底部都是較硬,內里軟度還可以。
不知是否焗爐溫度問題,一般設定在170至180度,放低層/中層,焗約25分鐘。
曾想能否調160度或以下,加長焗的時間,但又怕面包不熟或焗太久會變乾。
另外面包出爐時內里都軟,但第二天就變硬了。
如果做吐司,第二天還不算太硬。如做的是球狀,雞尾包形狀一個個的特別硬。
面包放涼後,放在食物袋內(但沒有密封)。因為天氣有30度,我擔心熱天氣,密封會令面包變壞。不知這樣有否影響呢?
還是哪裡沒做對呢!

烤出来顶部和底部都较硬可能和烤箱大小、温度有关系,用180度来烤比较合适,如果是小餐包烤15分钟左右就好,如果烤这种土司类得需要25-30分钟。如果温度太低需要烤制的时间就长,会让面包失去太多水分而变干。
面包出炉后放烤架上放凉,要及时装到密封袋里密封好才不会变硬,室温如果太高(超过30度), 最多在室温下放一天,吃不了就放到冰箱冷冻起来,下次吃提前解冻或者表面喷点水放到预热好的烤箱烤5分钟即可。

我使用高筋麵粉操作,不知道為什麼發酵前麵糰就好黏手,最後隔夜發酵完麵糰仍然好黏手,不好桿開,桿下去又會彈回來,薄膜測試效果也容易破開
最後麵包烤完有彈性但是表皮非常乾
