Beautiful Tuna knife and all the knives in the display case are stunning, truly artisan work. I hope there are young people to carry on the tradition of hand forging, sharpening and finishing. Great respect to the crafts people at the knife making works.
Very soft iron, because it is impossible to call it steel - it is VERY easy to engrave. The whole secret of their sharpness is that they almost do not touch the cutting board - they do not dull the edge of the knife on the board
😊. Easily the most complex sharpening and honing process I’ve ever seen, that was a nuts amount of sharpening wheels of differing varieties. Thanks for another great video.
I love that this stuff is out there on youtube. The blacksmithing arts are dieing out as with every passing generation the kids seem to become less and less interested in carrying it forward. Thanks for sharing this video!
theres a resurgence in knifemaking/blacksmithing but its hard when your barely able to scrape a living. I've been pursuing knifemaking and forging since i was 18 and got serious into trying to turn it into a career when i turned 20.... im lucky if I've made a couple k out of it where I've spent 10s of thousands in equipment and materials. sadly most would rather buy a cheap chinese knife then drop big amounts on a handmade one
@@dragonwing4ever Ofc they would! People barely have money to eat and you expect them to buy $1000 bread knives for no other reason than that they're made by hand? lmao stop your delusions and get real!

Having COPD myself and using the same pursed-lip breathing technique for when I am winded, I fully understand and respect the effort you expend to continue your craft. Excellent skills and beautiful work.
I'm a metal fabricator too and the hand movement to grind and the forge hammer drop positions are key to this process. I proud of my craft also. Going on 50 years in the craft.
A neighbor blew like that because of obstructive lung problems. It looks like a reflexive habit, that he needs to blow to exhale enough. Not a doctor, tho. Hope he's OK. What a craftsman!
As a chef, whenever I have seen craftsman cutting up whole Tuna, my first thought is "where did they get that knife"? Now I know part of that answer. Amazing work. Way to go humanity.
At first glance, it looks like a sword, but you can tell it's a kitchen knife because it has a concave back. The concave back (or hollow ground back) of a traditional Japanese knife, known as 'ura-suki', is designed to reduce friction and make sharpening easier.

I liked that senior guys breathing technique. Was he suffering of high blood pressure. He perfected it. Anyways beautiful hand made knives.
That’s from COPD.

The blacksmith is so hardworking and adorable.
I hope the old man is still kicking, he was struggling. Beautiful craftsmanship and work ethic!!
Making useful tools is a skill, making useful tools that are also works of art is a whole other level of craftsmanship.
You are a great master and a professional

Amazing skills.

at his very aging man , his very good and master of making such thing .
I will never need a knife like this. I will forever want one.

that old fella didn't look well with his heavy breathing. Such a beautifully crafted knife using some Heath-Robinson contraptions.
Workplace emphysema .
To be honest, I admire the Heath-Robinson contraptions.
as do I; as the saying goes "necessity is the mother of invention"
Kirby left the room!
What a respectable man! I wonder about his breathing. Is it an exercise, a tradition among tuna-knife makers, or because he's tired?
Unfortunately after 65 years in a forge unprotected it's probably the smoke and forge-dust affecting his lungs.
Absolutely beautiful
