  • Here is the recipe for a classic of French pastry, the Bourdaloue tart or amandine pear pie. Easy and delicious. Composed of a shortbread pasta, an almond cream, pears and decorated with sliced almonds
    INGREDIENTS:
    for sand paste:
    140 g flour
    30 g almond powder
    60 g sugar
    1 pinch of salt
    1 packet of vanilla sugar
    1 egg
    For almond cream:
    Quantity for a pie of 20 cm for a large pie, multiply the ingredients x2
    50 g butter
    50 g icing sugar
    50 g almond powder
    10 g flour
    45 g liquid cream
    1 egg
    4 or 5 half pears in syrup
    20 g sliced almonds
    50 g topping or apricot jam
