Most restaurants freeze large batches of fries that have already been cooked and then do the final fry from frozen. This is basically what you get when you buy frozen fries too. The reason In n Out fries taste like that is they prioritize fresh potato flavor over that crispy texture. They cut them in house and fry them fresh but you can't really achieve that texture with this method.

My life changed when I discovered 2x1s and grilled onions. Also call it blasphemy but I've always liked in n out fries and they're the only ones i can eat without ketchup.
They don't cover half the US yet. They're very deliberate about maintaining the supply chain to keep up the ingredient quality and freshness. It's still family-owned, so that may even continue in the future.
I will forever be sad that they stopped making anything above a 4X4 after some guys in Vegas got a 100X100 and it freaked out corporate. I would get 10X10 all the time, now I have to go with two 4X4 as my standard order as I rush headlong toward morbid obesity.
it didn't freak out corporate. there were quality concerns because you can't possibly serve even the 75th patty, much much less the first patty, at the standard in n out demands. that's not me glazing in n out either lol it's the same reason they don't allow favor or uber eats to do pickup - they want to minimize the amount of time between pulling the food off the grill and the food entering customer mouths bc they know their food has a shelf life of like 10 minutes, especially the fries. 10x10 is somewhat reasonable as you can feasibly throw that in two rows, one row if you're ambitious and the manager isn't picky. a 100x100 has shit quality, 3/4s of it is stone cold, AND it grinds the operation to a halt, affecting other customers' experience. source: currently employed there

That would be even more work than a single 100×100, still the same temperature disparity between the first burgers and rhe last burgers, and it would effectively halt their business just the same.
@@turtlepowersf if you ordered 50 dubs, we'd require you to call it in ahead of time so we could staff appropriately and open another grill for it if necessary. we wouldn't just take a 50 dub order on the fly because as you said, it's too much. but it's not the same as trying to create some 100 patty single burger monstrosity and expecting it to have any sort of quality at the end. once the burger is wrapped and packaged, it has a much better shot at maintaining heat/quality than a 100x100 which would be exposed to air unpackaged and unwrapped for like 30 minutes while it waits on the rest of the patties to come off

I love my fries Light. It's my go-to way to get fries at In-N-Out. Y'know those squishy limp fries at mcdonalds you get three of in every box that are long and floppy? I love those. Fry Light is just a box of that. Like, you're never gonna get nice crispy outside with fluffy inside. At best you get medium well for a worse approximation of it. Why bother? Just get fry light. My conspiracy theory is that everyone on the West Coast loves In-n-Out the exact same amount but we all describe it differently. People who love In-n-Out know the fries suck but don't care. Lived in LA for 12 years and just moved back to Michigan 2 years ago. Controversial take: Habit Burger is the better California burger chain. As a transplant there, I don't get the fanatical devotion with In-n-Out. It's a good burger, don't get me wrong, but it's not THAT good. Habit is way better with the char grill and the toppings are fresher and riper. I really think In-n-Out is more preying on the west coast desire to be "in the know" with their secret menu gimmick than anything. Also, agree with Sungwon on the fries. The fries are just bad. Habit's fries are leagues better.

The reason in n out fries suck so bad is that using fresh cut potatoes and putting them right into the fryer is a bad way to make french fries. Blanching them first (and freezing them afterward) makes them way better. So in n out is making their fries worse just for the sake of "freshness", which is a good thing for burgers but not for fries and they should just stop doing it.
Exactly. I wish fries were as simple as just slicing and frying, but there's a lot more involved. I recently tried a recipe for the world's best fish and chips (it actually received that award) and the fries were delicious, but required several time consuming steps.

The regular fries are not great, but properly well done are my favorite fast food fries and it's not even close. All the other places are covering their fries in flavorings, too. I like MSG, but on plain fries it's a bad look.

Yup, I get the protein double doubles all the time. Not even for health reasons, I just really enjoy them. The flavor of the meat seems to stand out better and the lettuce gives a great crunch.
In n out fries are made with fresh potatoes. If ya want em to be amazing, you need to dine in, since they are only good when they're super fresh. You also need to add salt and pepper (they don't season the fries, they give you salt to season them to your taste). They aren't great because they're unseasoned, and you had them as take-out. Sure, it's take out food. But the fries just aren't made in a way that's good as take out, only dine in.
In-N-Out burger is decent, and I agree their fries are their worst item. However, I choose In-N-Out most of the time because of their business model. Their entry-level workers have been paid above minimum wage for decades, and yet their prices are reasonable (even more so compared to other fast food chains).
Those fries were not done right. The well done fries should have ended up fully crispy, almost like those cans of piknik shoestring fries. Basically like fry shaped potato chips. Thats why they have the "light well" ones for those who actually just want a properly cooked fry. Even then, their fries are not the best.
The cold cheese burger should be called "Dad Doesn't Know How to Cookout" because it takes me back to burnt burgers with cold cheese put on *after* grilling.
I like the fries purely because I have this really nice jalepeno ketchup at home and the floppy fries are perfect for achieving my desired ketchup to fry ratio.
I think that's a universal statement. Everything is so cheap and awesome but the fries are mid-to-bad. If they started opening locations in the rest of the US, they'd absolutely dominate though.

Huge Fan of In-N-Out Burger as it’s one of my all time burger places and especially love the Secret Menu Items with 3x3 plus animal fries being my personal favorites.

Lived in LA for 12 years and just moved back to Michigan 2 years ago. Controversial take: Habit Burger is the better California burger chain. As a transplant there, I don't get the fanatical devotion with In-n-Out. It's a good burger, don't get me wrong, but it's not THAT good. Habit is way better with the char grill and the toppings are fresher and riper. I really think In-n-Out is more preying on the west coast desire to be "in the know" with their secret menu gimmick than anything.
Also, agree with Sungwon on the fries. The fries are just bad. Habit's fries are leagues better.
Habit was better before Yum Brands acquired them in 2020, now they are more expensive and worse than In-n-out imo.
@animeman2 Oh no, that sucks man. I stopped going to fast food places during covid up until I left in early 2022, so that's really disappointing. I loved that place.
Habit just copied In-n-Out's burgers. Nothing's fresher, both are using same-day delivered groceries.

they use the same potatos that lays use its like special potatoes. its lame than they have to stick to the "fresh cut right in front of you" potato shit cuz literally no good fry goes from cut to cooked with no steps in between and tastes good. but i dont hate them
The reason in n out fries suck so bad is that using fresh cut potatoes and putting them right into the fryer is a bad way to make french fries. Blanching them first (and freezing them afterward) makes them way better. So in n out is making their fries worse just for the sake of "freshness", which is a good thing for burgers but not for fries and they should just stop doing it.
The main issue is their locations don't have freezers, it'd take a bunch of infrastructure to switch to frozen fries.
@firstlast446 I'm pretty sure there are also ways to keep fries fresh while also improving the quality of the fry, without freezing.
Exactly. I wish fries were as simple as just slicing and frying, but there's a lot more involved. I recently tried a recipe for the world's best fish and chips (it actually received that award) and the fries were delicious, but required several time consuming steps.
@@turtlepowersfYou can double or triple fry without freezing. But it takes 3-5X as long because of the cooldown times.
The regular fries are not great, but properly well done are my favorite fast food fries and it's not even close.
All the other places are covering their fries in flavorings, too. I like MSG, but on plain fries it's a bad look.
@@turtlepowersf There certainly are general ways to improve but the main complaint people have of fluffiness is primarily solved by freezing, the water expanding into ice and then quickly being driven off via frying is the best way to have fluffy fries

Yup, I get the protein double doubles all the time. Not even for health reasons, I just really enjoy them. The flavor of the meat seems to stand out better and the lettuce gives a great crunch.

In n out fries are made with fresh potatoes. If ya want em to be amazing, you need to dine in, since they are only good when they're super fresh. You also need to add salt and pepper (they don't season the fries, they give you salt to season them to your taste). They aren't great because they're unseasoned, and you had them as take-out. Sure, it's take out food. But the fries just aren't made in a way that's good as take out, only dine in.
In-N-Out burger is decent, and I agree their fries are their worst item.
However, I choose In-N-Out most of the time because of their business model. Their entry-level workers have been paid above minimum wage for decades, and yet their prices are reasonable (even more so compared to other fast food chains).

Those fries were not done right. The well done fries should have ended up fully crispy, almost like those cans of piknik shoestring fries. Basically like fry shaped potato chips. Thats why they have the "light well" ones for those who actually just want a properly cooked fry. Even then, their fries are not the best.
Fries have to be ordered well done, no other way

The cold cheese burger should be called "Dad Doesn't Know How to Cookout" because it takes me back to burnt burgers with cold cheese put on *after* grilling.
I like the fries purely because I have this really nice jalepeno ketchup at home and the floppy fries are perfect for achieving my desired ketchup to fry ratio.

I think that's a universal statement. Everything is so cheap and awesome but the fries are mid-to-bad. If they started opening locations in the rest of the US, they'd absolutely dominate though.
