- Risotto is a truly all-Italian dish. The varieties of rice that are used, the cooking technique, the best-known recipes - every aspect of the dish took its shape in northern Italy. Among the most suitable rices, rich in starch, is the Vialone Nano from Veneto, the Arborio from Piedmont and then Carnaroli, undoubtedly the king of risotto, selected from Pavia and Vercelli. There are many basic steps and ingredients and just as many variations and mistakes you can run into: toasting in oil or butter, burnt mirepoix, use or no use of wine, management of broth and creaming. Following the recipes of three real deal Italian chefs, you will learn how to approach risotto correctly and in any combination - be it vegetable, with fish or meat. The chefs themselves will be the protagonists of another video dedicated to risotto, coming out in the next weeks. Molto bello. E, in parte, sono molto contento di vedere come il risotto si stia "svecchiando" sempre più. Da appassionato, meridionale di nascita e padano d'adozione, amo i risotti non scontati, gustosi, profumati, con stratificazione di gusti e consistenze. Ed è quello che ho trovato in tutte e tre le ricette. Ci si scervella sempre molto sulla tecnica di cottura e mantecatura, ma credo che le cose interessanti siano altre: il brodo va pensato (leggerissimo? Di ossa? Come parte umida di una purea?), il calore del risotto esalta i profumi degli elementi crudi adagiati su di esso (e, in generale, ha BISOGNO di una forte parte acida, se no snoia, e magari di una parte cruda), la sua cremosità va bilanciata da consistenze croccanti (cosa che nessuno fa nei risotti tradizionali) e il sapore non è mai abbastanza (quel daino scottato con aglio e rosmarino, come se fosse pasta di salsiccia espressa, deve essere stupendo). Bello bello.

Cmq Diego Rossi è tipo la fusione tra chef Rubio e Facchinetti xD
Guardando la copertina veloce pensavo fosse lui.
11 minuti è la cottura senza sfumare il vino, dai 12 ai 14 con il vino bianco, dai 13 ai 16 col vino rosso. Ha accennato la spiegazione l'ultimo parlando dei punti di acidità. Ovviamente si parla di tecnica fina e non di gusto personale, se cucino per altri rispetto questi tempi, se cucino per me aggiungo almeno 1 minuto e mezzo perché mi piace più "andato" il chicco, se cucino per i miei arrivo anche a 18 minuti perché a loro piace il chicco che si sfalda (loro dicono che è "più cremoso", contenti loro 😂)

Risotto: Forta mantecatura, riso ricco di amido che debe essere rilasciato
Paella: tutta l'acqua o brodo debe essere inserita al inizio, il riso non si deve amalgamare neanche toccare, l'amido deve rimanere al interno del riso

Ma alla fine la cottura è la stessa per tutti e tre: cambiano gli ingredienti, ma nessuno che lo tosti a secco o che lo faccia cuocere nell'acqua, ad esempio: il terzo è il più "rustico" (e probabilmente il più saporito), il secondo è il più bizzarro (la cipolla in polvere bruciata mi è nuova), mentre il primo utilizza ingredienti più ricercati, ma il procedimento è abbastanza classico. Insomma, tre idee e interpretazioni interessanti, ma il risotto, come lo fai lo fai, se segui la preparazione classica, è sempre gustosissimo!
Per fare un risotto gli step fondamentali sono 3:
•Tostatura del riso
•Cottura risottando il riso in un liquido caldo
•Mantecatura
Se vedi fare un risotto questi tre punti non mancano mai, ma la mano dello chef la vedi nei dettagli, c'è chi tosta a secco o con l'uso di un grasso; la risottatuta del riso può essere fatta con in fondo bianco classico o personalizzato in base al risotto, e in mantecatura si può aggiungere semplicemente burro e parmigiano oppure si aggiunge olio e creme/vellutate. Libera interpretazione per tutto tranne i 3 punti citati precedentemente.

I really appreciate the principals behind the video. That said, I have to say, I've made a lot of risottos in my life and never had one done in "11 minutes." That's insane. Also you can't give me an under cooked venison burger and then call it "tartare"

Si. Ottimi. Diciamo che uso un misto dei tre e la mia regola fondante è "riso menà" ovvero sempre mescolato tutti i (18) minuti di cottura del carnaroli o vialone nano. Alla fine è talmente cremoso che quasi la mantecatura si potrebbe saltare. Fondamentali i 3 minuti di riposo. Bravi tutti !!! 😎👍
Coi risotti di pesce spesso fanno così.
Io invece ho scoperto che mescolare fortemente (addirittura con una frusta, sì!) durante i primi minuti fa la cremosità. Dopo basta controllare la cottura e girare ogni tanto. È come dici: non potrebbe essere più cremoso, si può anche omettere il burro della mantecatura.

I don't have many certainties in life. But choosing Vialone Nano (from the Province of Vicenza) when cooking risotto is one of them. You can't go wrong with it. It's just superior.

Risotto with my working mother was a quick dinner with easily found items in the fridge or pantry. Fast and always a welcome meal. This is not my mother's risotto, but I think she would be intrigued.

Dopo la tostatura e l'evaporazione del vino 11 minuti, il riso in base al quantitativo cambia i tempi di cottura !

Shame there’s a couple of translation errors in this video. Adding ‘very few’ of an ingredient instead of ‘very little’, and saying he scratched the fish skin, when it should be scraped. Things like that. I think it’s important to get it right, when the content is so technical. Otherwise, beautifully shot, excellent sound and editing. Made me hungry !

Every kind of purée is ok but the risotto is supposed to be done correctly. The person with the butternut squash used the purée to save the wrong consistency of his risotto.
