Yeeesss, this is how I learnt to cook waakye from Fulera at Madina. I add a little twist to mine by adding homemade coconut oil from Togo. Muah!!!

Love this! L’ami, what can you use in place of the salt petre/ Kanwe.
That is the only thing I know for now unfortunately but you can cook it without the kanwa, although it will not taste the same.
