      Hello again did some research and found replacements for celery. jicama, green apples, water chestnuts. I'm thinking of substituting all three. Love those veggies. Thanks again have a great New Year.

      Hi Kim, Thanks for visiting. Can you eat Swiss Chard and Romain Lettuce? Use both in place of the celery and the kale. Spinach is high in oxalates and can be hard on the kidneys in concentrated doses. So I wouldn't add that. Love, Mary

    The soup looks amazing Mary. I did a whole chicken in mine yesterday for my Son and I. I put a few gold potatoes in it as well. It was delicious. My Son was amazed at well the chicken tasted. Thank you.

    Mary, thank you for this recipe. Vegetable soup is the best, and so are your recipes! I do have a question regarding the turmeric. Is it true that it is a blood thinner? My husband's blood is thin, so that would concern me.

    Hey Mary, this soup looks really delicious. Quick question: where would you save your scraps of veggies? Do you freeze them? I thought about that today when I chopped veggies for a dish and thought about them for bone broth but couldn’t see putting carrot peeling in the freezer.

      This and That with Denise Jordan - Hey Denise!! Thanks for visiting. Yes, I save all my scraps in a freezer bag. It works great. And then when I make bone broth, I just dump them in frozen. It’s mostly onion skins, carrot peelings, and the bottoms of celery. Love, Mary❤️😘❤️

    Great videos great channel. Anyway my question is i have learned to make great soup stock, broth , and bone broth. But homemade differs from store bought interms of it being refrigerated with gelatinous consistence. I am just wonder if there away to make your soup stock/broths non-gelatinous more like the look of store bought. Again not a huge important thing to beable to do but its a curiousity. As i tried cooking shorter, longer , under higher /lower temps but all of that still yields gelatanous soup. So the only last thing i can say is maybe its the pressure if its not the temp you cook it at. Unfortunately right at the moment i dont have a pressure cooker ...etc to experiment if thats the key. ???? Thanks for any help with this one.

    I suppose dehydrated into bullion cubes/powder the stock i could rehydrate it and the gelatinous characteristic wouldnt be there. But again that sort of a long way around the barn. And that would make a less nutritious product in the end. Just kind of curious how the mass production process usually does it. Is it a chemical additive method , a particular machine similar to homogenization milk machine,... or what ????

    Do didn't add any broth? This is how I make homemade soup but in an ordinary saucepan. Gadgets scare me lol is a pressure cooker just to make it cook faster?

      I just got the Instant Pot Pro on sale and although I was a hold out on this gadget until now, I'm absolutely loving it! Yes, it's very quick for soups, I've been making a Thai curry butternut squash soup, really good! Also great with pumpkin. Can't wait to try some other soup recipes!

    Growing up we had the old-timey pressure cooker. My Mom loved that thing. She would be amazed at this type of pressure cooking today. I am going to get one and make this incredible soup.     Mary I have just got an instant pot, imported to Australia. Would you show cooking 8 hour presoaked chickpeas? And maybe presoked adzuki beans which cook quickly. I want to make hummus and natto.

    Hi Mary, I was wondering how high and how long you would cook this in a crock pot?

      Great question. So far, I have done this on the stovetop and the Instant Pot. If I were to do this in the slow cooker, I would do low heat (only because I always use low) and I would let it go about 6 hours. If you want to cook it on high, I would go with only 3 hours.     I would highly recommended adding 5-10drops of “concen-trace” trace minerals... they are heat hardy and will be present in the finished product to offer a huge boost of minerals and vitamins!

    I'm eating this soup right now and it is yummy> Made exactly as you said and it came out perfect!! I changed it slightly of course no chicken bouillon, I used one quart of chicken bone broth instead and added about 11/2 TBs of tomato paste to get a richer tomato taste

    Hi Mary! glad to see this! I wd say though that LARD is not healthy, & why it's not popular these days! who wants to clog their a's....? the fat stuff u said at start is best, from my nutri experience!

      Hi Mona, Unfortunately lard has been given an unfair bad reputation. Unfortunately, this came about when the marketing of solid shortening made it’s advent on supermarket shelves. The truth, according to the Harvard educated medical doctor, Dr. Andrew Weil, MD, is that nutritionally speaking, lard has nearly one-fourth the saturated fat and more than twice the monounsaturated fat as butter. It is also low in omega-6 fatty acids, known to promote inflammation, and when the lard is from free-range pigs that eat greens, not grains, lard has higher levels of omega-3 fatty acids. I highly recommend the book Nourishing Traditions by Sally Fallon and her follow-up book Nourishing Fats to learn the truth about fat and not rely on the mis-information that we have received over the last 40+ years thanks to the disingenuous research of Ancel Keys. Also, if you can find it, check out the article from the New York Times by science writer Gary Taubes - “ What if it’s all been a big fat lie.” It’s a real eye opener. Love, Mary

      @@MarysNest Hi Mary! good to know where u r coming from. yes, Andrew W is the Vit guy, isn't he! he has some good info! yes, I'm aware of some of that stuff from S Fallon, only problem is, & it's a bg problem, they worked for the meat industry & were paid by them to do their research! this is quite well known, so naturally they would push the meat on us! I'm not veg/n but have known about this from yrs back! why pig fat is not good is for a 101 reasons! Dan Broer nutri'st talks a lot about it! toxins go into the fat of the pig, even the blood it seems, as has no sweat glands! Actually, Dr McGregor of Nutrifacts talks as a Dr that these tests are paid for by the industry to promote these products! but they don't push the stuff or test that which the industry does not fund! lots to say, but I'll try to post his link later!       @@monal3650 - Hi Mona, These are all interesting things that you share and I know that this topic can be very controversial - but for me - it all comes down to what were traditional peoples eating in their diets for centuries - and staying healthy, a proper weight, and fending off disease. My mother is 95 and has eaten butter, lard, tallow, etc. all her life and has never had any disease. The same is true for my MIL who is Asian and has eaten the same way and is 85. Plus I look back on both sides of my family and it is the same. I on the other hand - much to the chagrin of my mom, embraced the low-fat movement back in the 70s/80s and it lead to nothing but problems, including weight gain that has been so hard to lose! Ugh!! But returning to my roots has improved my health considerably and, so far, I have lost 37 pounds. Plus my blood work is excellent. All of that said, everyone's genetics are different, so you need to eat what agrees with you as well as what improves your health or maintains your good health. If lard does not agree with you, if you see it having a deleterious effect on your health, then yes, by all means avoid it. Thanks so much for all you share and for being here! Love, Mary

      @@MarysNest interesting, I definitely believe in eating butter, plus we can get the fat the fat soluble vits, due to it! eg vit d, k, etc. good for teeth also it seems. Does yr Mum eat a lot of lard? we used to have when very young, only! yr M in L, what type of Asian is she, I just wondered, as didn't realise they wd have lard!? we can always learn from others so I take note of what u have said! tks

      @@monal3650 - Hi Mona, I would say that my mom has three main fat sources. Lots of butter. Followed by lard. And finally extra virgin olive oil on salads (And for more pork fat...LOL!!...my mom is Northern Italian, so mortadella was a staple in our home.) My MIL is Chinese so pork and lard played a big roll in her traditional diet. But I think what is most important here is genetics. It's probably best to look at one's ethnic background and learn what was the traditional diet of one's particular ancestors. For example, so many folks are crazy about coconut oil but I can guarantee that it is highly unlikely that my ancestors ate that. And how interesting that I do not really like it - and I'm not so sure it agrees with me. On the other hand, I am of Irish ancestry on my father's side of the family. I learned that Irish people can tend to hold on to iron. And how interesting - my iron has always been high normal! Well, if you soak grains, that will break downs the phytic acid that, if left un-soaked, would bind to minerals and interfere with our ability to absorb the minerals. But I learned that Irish people actually benefit from eating un-soaked grains where the phytic acid is intact. With it intact, it prevents the body from absorbing iron - - - which Irish people may already have enough of. And why would we not want to absorb more iron? Well, some is great but too much iron can lead to heart attacks! How about that!! So, although I think Nourishing Traditions is great, I also think it's best to study one's ancestral ties to determine what might be the best diet for each individual. And in that vein...I really loved the book Nourishing Diets - also by Sally Fallon - that discuss many of these nuances in traditional diets based on various traditional cultures. Yes, I really love learning too and I am so grateful that you are here to share your insights and experiences. When it comes to diet and good health we can never stop learning. If it was the grass-fed beef industry, I don't have a problem with that, since that is the type of beef that traditional cultures ate.
