    Just found this recipe! Was looking how to use up what I had. Thankfully inflation is coming down now. Plus I have 7 laying hens and I got a rooster right before the pandemic and thank God he made my chickens lay like crazy! I managed to keep me and my elderly two neighbors in eggs.

      I cooked a cup of brown rice the night before with BtB broth and added it during the cooking process. I cooked for zero minutes and did a QR. It is excellent. I like that the recipe is very customizeable.

    Loving this low budget - and low fat! - recipe. Personally, I'd add a bay leaf, beans, and barley, to make it heartier and with richer flavour. A few splashes of fish sauce too.

    I do something similar to this but I cook some tortellini separately and drop a few in the bowl when I serve the soup. Yum! And keeping them separate keeps them from getting all soggy

    For more depth in flavor an old trick I was taught was to use a small can You know the individual kind of V8 juice brings out flavor like your celery and things and colors the soup if you are using maybe a beef base or chicken then using it for years and years in fact the way things are changing with food these days I am going out and buying my first pressure cooker I am from the generation that used to be afraid of these things because of the horror stories back in the '50s

    Never crossed my mind to try vegetable soup with the pressure cooker I add sausage and barley, goes great w/ grilled cheese. Saves so much money. So awesome!

    I love the almost poem in the beginning. *You could feed 6-8 people on $5. I think having a simple and cheap dump-and-go cookbook is what the world needs right now.
    Conditions apply: you need to have previously bought an Instant Pot, Better Than Bouillon Vegetable flavor, and of course have clean water and electricity.

    I haven't thought of vegetable soup for years. My mom used to make it and I hated it, Well, I finally grew up, and it sounds delicious.So I went to two stores and they didn't have plain vegetables So I stopped at Dollar General and bought 4 cans of vegetables and one can of tomotoe sauce, and added two cans of stewed spicy tomatoes. Also added 2 cups of left over bbq hamburger.Added a half bag of frozen broccoli, Then some homemade curry. thanks for the indestructible recipes. Also threw in a can of blackeyd peas for protein I am using a 6 quart pot as my Instant pot is making your fabulous yogurt.

    I think a Parmesan rind would be good to add to this. (Of course that brings up the cost.)

    I made this recipe today. I had chicken boullion mix instead, but no matter. I let it naturally release for three minutes, only because I was doing something else. Anyway, it is yummy in my tummy! Will make again.

    My mom used to make this almost exact recipe, while I was growing up, in the crock pot. It was a dump and go meal as she worked long hours in the hospital. The only difference is she added beef cubes and ketchup. She said the ketchup was the secret ingredient

    I have found that if you make the soup without the veg, and then when it's done put the veg in, it's a lot better. Veg doesn't get mushy.

    This is almost identical to the veggie soup I've been making for years. To add just a little zing to it, I also add a single serving can of Spicy V-8.

    I like to add Barley to soups like this. A box will make two to three batches of soup. Very economical.

    Going to make this tomorrow but include some gemstone potatoes (cut in 4ths) and do some sauteed onion and celery. I am hoping an extra minute in the pressure cooker will be enough for small pieces of potato. I use the gemstone potatoes in my stew and they come out perfect every time.

    Thank you for this. Frozen vegetables at my local store are very expensive, but I shall look elsewhere for frozen vegetables. I always forget to look! This is a great base, or good on its own.

    Another cheap recipe is your minestrone soup. All of the ingredients can be bought for $10 and it serves AT LEAST 10. A single person can have lunch and dinner for the work week for just $10. Definitely needed in these expensive times.

    5$ vegetable soup, and it could even become a hearty soup with a grain or pasta for an extra dollar or so. We need more budget recipes. Hope you're next cookbook will be budget based

    If memory serves, I've always remembered having garbanzo beans in my vegetable soup.

    Jeffery, love the idea... similar to a soup I've made since college (back before cell phones and only had a PC/Mac at the lab)! Curious, how did you use this to lose weight? Portion/nutrition estimate? Big thanks! BTW, I went all out with the sin... Lowery's and some other spice! (and a bit of hot sauce!)

    That better than boulion is so salty . i ruined chicken noodle dinner using it .. I make veg soup hamburger tomato juice. Can broth . bag veg usally a big bag . crock pot all day . i add can diced patatoes . i pressure cook it days im in a hurry . cook berger first drain.

    You gave me a heart attack at the price of Progresso soup in your area! In Michigan, it is around $2 per can. Still more than if you make it yourself, but edible if there is no power.

    The view into your Instant Pot was kind of dirty in my opinion. No, I'm not OCD, I just like to see a shiny pot. I would recommend, if you want your pot to look cleaner get some Barkeepers Friend, and scrub gently with that after washing. You'll be amazed at the results.
