Many years ago there was a gentleman on TV called the Cajun cooker. He was way before his time He did this roast without these seasonings and it has been my go to for over 30 years. Can't wait to try his seasonings on it. Thanks for the tips Ralph. Just remembered his name was Justin Wilson.
That is how I cook my roasts, must be that Cajun goto recipe. I been cooking my roasts like this since Justin Wilson showed me how back in the 80s. Cept I/we use a roasting bag with a couple scoops of flour for gravy. Thanks Ralph

The prefect blending of culinary culture. We have the same thing over in the UK with the Irish, English and Jamaican dishes.....not everywhere but where I'm from Birmingham you cook without spices you get cussed out. (White Black or Brown)
Little tip to share.. carrots and onions can go on the bottom, acting like a rack for the meat.. This will create an evenly cooked roast and won't be in direct contact with the bottom of the roasting pan..

Must be a nola thing. Below I-10 and other side the river we use that juice to make the gravy not separate. And we mostly reserve stuffing like that for pork. But it still looks good.
If you slice a large onion and use it as a trivet underneath the roast. You do not have to put liquid in. This way makes more of a tender roast. The liquid sort of dries it out. I want that roasting pot though. What's the name of it?

Watching Justin Wilson was a bonding ritual for me and my dad when I was little. He'd tell me stories from when he was growing up in Louisiana.

One thing I would change is to sear the meat to get the best texture and flavor, cover the meat with flour and sear on all sides even the edges

You should try searing the roast in oil on both sides before putting it in the oven to cook
That's as real chefs do, then flash it on a 550° smoker for 10 -15.
