  • On this episode of Basics, I'm going to show you how to make two different kinds of pot roast: a classic Yankee roast that's as American as apple pie, plus a modern take on the classic French pot roast.

    Ingredients & Shopping List
    + For the Basic Pot Roast:
    9 carrots, peeled (5 chopped for mirepoix, 4 chopped into larger pieces for roast)
    1 small yellow onion, peeled and roughly chopped
    5 ribs celery, washed and chopped
    1 eye round beef roast
    Kosher salt
    Black pepper
    1 Tbsp tomato paste
    3 cloves garlic
    2 bay leaves
    2 sprigs of rosemary
    2 sprigs thyme
    2 cartons beef broth, divided
    Dry red wine
    4 russet potatoes, peeled and quartered
    Special equipment: dutch oven or braising pot
    + For the Fancy-Ass Pot Roast:
    1 rib celery, chopped
    2 sprigs parsley, plus an additional 1/2 cup chopped parsley
    2 cloves garlic
    2 sprigs thyme
    3 bay leaves
    1 small yellow onion, halved
    2 whole cloves
    1 leek, sliced (just the white part)
    1/2 tsp whole peppercorns
    Kosher salt
    Black pepper
    4 boneless short ribs
    2 marrow bones, about 4-5 inches in length
    Water or beef broth for braising
    6 cornichons, finely chopped
    1/4 cup finely minced chives
    2 Tbsp dijon mustard
    Dash of white wine vinegar
    1 lb red potatoes, halved
    4 carrots, peeled, quartered, and cut into 4-inch segments
    1 bunch asparagus, halved
    Flaky sea salt
    Special equipment: dutch oven or braising pot, mesh sieve

    if you dont have the money to make this then there is an alternative. simply think about the ingredients and instructions while boiling a piece of bologna and gently fanning it with a beef flavored ramen noodle packet.

    My grandma used to make a big pot roast every time we'd visit. Pretty sure it was always a little dry but she'd shave it thin on a meat slicer in the basement and some pieces where nice big thin pieces and some shredded a bit more and served with some gravy. There was nothing better. There something about pot roast, man.

      This one was a rookie there are better austronaut level pieces of onion in Babish's videos. They were so fast that even Babish didn't notice their sneaky escape to freedom.

    Well, my comment might be drowned in the mass of the other comments since I post it 7 months after the video came out, but I just wanted to say one thing : a pot-au-feu was never meant to be expensive. The meat used is cheap cuts of beef (chuck, shank or shoulder, but I'm not sure of the translation) and pretty standard vegetables are added along like carrots, potatoes or turnips. Everything is boiled together. It might be long to cook, but no, it's not expensive. It's a cheap, conforting winter meal that will warm you up to the bones

    My mom always does a sort of mix between the two recipes, with some distinct differences. It may be cause im from central texas, but we all love our sauce to be more of a gravy, as far as ive noticed, and we really, really love the roast to be absolutely falling apart and sorta dry. I really like that texture myself. Pot roast is just a great dish that really has no downside i think.

    We have been looking for things to make for (hopefully) regularly occurring, family dinners since my dad was diagnosed with Alzheimer's, and the Yankee roast fit the ticket. We doubled the recipe in order to feed 8 people with minor leftovers. It joined the clean plate club with every single one of us (some twice over). My dad is a real meat-and-potatoes, farm-boy at heart, so the look on his face as he inhaled this was perfect. The only modification we made was to turn the braising liquid into gravy. Thanks for doing this recipe. It was amazing.

    Hey I know, its late but I tried this recipe, but the eye round I got wasnt as fatty as yours, and ibdint have a Dutch oven, so I improvised and used my insta pot instead, same ingredients but just different execution, I know itll turn out alright though, thanks man.     I like to make a gravy with the liquid from my red wine pot roast and parmesan cheese. I usually leave out potatoes because I make mashed potatoes on the side,sometimes with fontina cheese,cream cheese and chives. It is comfort food for sure.

    I prefer to use a chuck roast, and cook it in the crock pot till it’s falling apart when I stick my fork in the middle. It’s the way my dad makes it and I live for it!     My mother has an amazing recipe for Beef Pot Roast in the slow cooker. Add onion soup mix and dry ranch mix to the beef broth. It makes an incredible difference.

    My Husband and I tried this and it turned out amazing. We used the Kosher salt but I think it may be different to the one you had as I am in South Africa. Our dish ended up being quite salty and I still went a little lighter on the salt compared to what is in the recipe. We did however find a solution and were forced to improvise! We did several taste testers, for example, we added lemon to take away the saltiness, it kinda worked well but not the kind of taste for what we wanted this time, then made a tester with sugar, that was alright, and then we tried honey! Just enough to reach that point before sweet. I used 3 tsp of Natural Honey. It turned out amazing. Thank you and we are looking forward to purchasing your book and a few of your items when we return to America to start a new beginning. We watch u all the time and learn alot from you!     Just wanted you to know, watching your show helped me at my weekly bar trivia session. There was a question about the name of a cooking technique used to "dilute meat sediments in a pan in order to make a gravy or sauce, typically using wine."
    "Deglazing" of course.
    And the only reason I know that is because of this channel. I may not ever cook any of this stuff but I sure as hell learned a few things!

    Babish can you teach me ravioli? I’ll find a show that it’s in so you can make it. Just did a heart shaped ravioli episode for Valentine’s Day and it was a COMPLETE NIGHTMARE!!!

    Goodness. I thought my pot roasts were fine - but I just got a new dutch oven so decided to take my time and follow everything in this first receipt. Apparently I've been eating like a peasant my whole life. Best pot roast I've ever had.

    Quick question--how many people does the fancy pot roast serve? My son wants this for his birthday, but we have a big family full of big eaters.

      Quick answer-just give them the fancy pot roast and if they say its not enough just take it away

      Each piece of short rib that size will serve for two conservative eaters if you cut it the way he does. If you have a big family (I'm going to say 2 adults and 4 kids) that are big eaters, one piece of short rib per family member (about 4-5 lbs total) and double up on the vegetables. Worst case, leftovers for a rainy day! You should still only need two marrow bones though. Those things are full of flavour.
