Beautiful work! Quick question, instead of carving the cake, can I just bake it in 6”, 7” and 8” pans? And then stack them according to size?
Somehow it doesn’t give nice slope hence I don’t prefer that. I did try it. But you can try and see if that’s what you prefer or find it easier.

Just a quick question regarding the gold painting detail, could I use lemon juice is it the same as lemon extract? Or could I use Cocoa butter beans with the gold lustre dust?

I would not recommend lemon juice. It separates the lustre and makes it grainy. On the other hand lemon extract makes it smooth as it has oily texture. If you can’t find Lemon extract use regular cooking oil but keep in mind anything other than rejuvenator/ alcohol will not dry up completely so avoid touching once painted.

Yes you can use whipped ganache but whipping ganache makes its shelf life shorter. So keep that in mind. The cake can’t be left out of the fridge for the whole day like we can with non whipped ganache.

I bought them over the period of 8years I really don’t remember exactly. But I did but from eBay, Amazon , AliExpress and some from the online cake business websites. Kare Davies and fpc moulds are great quality

Renshaw fuchsia and emerald green fondant. Gold dust Faye Cahill in the shade regency gold and signature gold mixed together with Lemon extract to make the paint.

I use few brands. Normally I use Renshaw fondant. For wedding cakes and super tall cakes I use massa ticino. For boards covering I use Tesco super market’s own brand.

Ok I personally don’t like it smaller than this but yeah you can definitely make it smaller but just keep in mind that it might look as good as in bigger size.

Some quick questions for you!
-why can’t you just paint the fondant details with luster dust before putting them on the cake?
-how long do you wait after you kneaded the fondant with cmc powder?
Some time the lustre particles goes everywhere when you touch the piece hence I paint when it’s on the cake. I wait about an hour after adding CMC. Sometimes even less than that.
Salam dear sister in faith, do you make a Victorian sponge cake? Also wrapping the cakes in cling film what does that do to the cake? Also when you’re crumb coating is butter cream or white ganache? Do the cakes go dry when in the fridge? Mines went dry in fridge. Do you use sugar syrup to keek them moist?? I look forward to your reply sister and stay safe.

I always use victoria sponge cake. once the cakes are cool down i wrap them in cling film until i start working on the cake. The cling film keeps the moisture locked in the sponge. I used ganache for crumb coating. Buttercream was in between the layers only. My cakes usually very moist they don't go dry. anyway I only keep it in the fridge for little while until the coat is set. In cold weathers it only takes 15min. You can brush some sugar syrup if you fear it will go dry.

Hello, I live in the US and am an at home cake decorator. I love doing the intricate cakes with the molds. I have a hard time pricing my cakes. Just for a reference, what would you charge a customer for this cake? Thank you! 😊
John Degener pricing the cake is really depends on where you live. Have a look around the other bakers and bakeries and see what they charge. Do costing for each size you offer. Once you have the cost add your working hours(what you would charge for your labour per hour) and that would be the price of your cake. Even in London the pricing defers from area to area.

Jessica 2020 I use Victoria sponge. I don’t like Madeira. Trick is to bake the sponges a day before and once they are cool down wrap them in climb film and use it next day. You will see the next day the crumbs will settle down. Freshly baked cake gives more crumbs. That’s my personal experience. Try this.

Jessica 2020 sorry it’s not egg free recipe. Moulds don’t have particular names just search different words like scroll mould, baroque mould, border mould, etc on amazon, eBay or AliExpress. You will have to do a thorough search to find similar patterns or same.

I don’t remember exactly I bought them ages ago. Some of them from Amazon, some eBay and some AliExpress. Search baroque moulds and scroll moulds you should be able to find them.

No it’s not oil based. For vanilla cake I prefer butter based recipe as it gives more flavour.

Shamas Shah I only make the cake two days in advance so one day is for baking and second day is for decorating. I don’t bake too early.

how long did this cake turn out to be (i.e how long of a dowl rode did you need to cut?)
I don’t remember exactly but my 4 layers cakes are usually 7” tall so I guess it must have been 14”-15”. Rod size depends on the cake length. Once the cake is all stacked only then you can cut the dowel accordingly.
