When you think of puffer fish, you think of Yamaguchi Prefecture. The owner of Shokurakudokoro Kawanishi, a restaurant popular with locals in Shunan City, Yamaguchi Prefecture, the birthplace of Japan's longline puffer fish fishing, loves fishing himself and trained to become a chef who handles puffer fish.
He serves dishes made with seasonal puffer fish and fresh fish to many customers.
We filmed the now rare puffer fish crane platter and the skilled techniques used to fillet the puffer fish.
