It was delicious - the toiz loved it. i added a bit of a detour - I microwaved the warus with skin on for 5 minutes which made the batter fluffier and crispier than the warus that were not cooked. Overall amazing recipe. Si you post a recipe for ndengus - i can never seem to perfect it. Asante

this is lovely. i was browsing for more on your videos hence i would like to suggest if you could prepare for us pure vegetables e.i, eggplant, green/red/orange/yellow bell pepper, cucumber, lettuce, carrots, chicken peas aka mishiri, i mean the list is endless. also if you could prepare a well balanced breakfast meal will be really appreciated. BTW yesterday i cooked the wet mbuzi n it was so delicious. i never knew i could enjoy wet mbuzi thanks to you techniques.

My sincere apologies for the delay. You can use the mandazi oil. I'd avoid using the one that has cooked foods with very strong smells, like fish.

Can I substitute gram flour for all purpose flour?(ie just regular wheat flour) I would have to go a journey of many many miles to get to someone who even knows what gram flour is,let alone sell it.
+maclaireful Hi, this is what I know about using regular wheat flour: the recipe changes and becomes viazi vya karai. They are no longer bhajias (I might be wrong so constructive correction is welcome). Viazi vya karai also have some bit of gram flour in the recipe.

Hi, thank you for the video. The instructions are clear. I tried making mine but they came out quite hard. What do you think could be the problem? I couldn't find gram flour so I used all purpose flour.
Try microwaving the raw potato for two or three minutes first. Maybe your potato was cut too thick. If you cut quite thin then you can cook without softening them.

Woah! I had something like this when I was in Mombasa on holidays a few years ago. The lady fried them on the side of the road and I used to buy bags of the stuff from her. The best part about it was the sauce/juice stuff she used to put on the fried potatoes. Do you know how to make this? I've been trying to google it ever since but can't find a recipe. It tasted like lemon, maybe chilli, maybe some tomato.. maybe tamarind? I'm not sure. Do you know what that juice/sauce stuff is? Thanks! Oh ... I think it's called viazi karai. Viazi vya karai are prepared differently, I will do a video and tag you once I upload it. The sauce that you are talking about is ukwaju (tamarind), based on the way you have described it.

This is Indian cooking :) we can sustitute potatoes with chillies, bread slices, onion slices and even bread slices :)
Yes, you are correct, this style of cooking is heavily influenced by the Indian people who are have settled in Kenya. I have never tried it with bread, I keep saying that I will get round to it... guess it's time I did. Thanks for commenting.

I actually do nothing much to my hands, vaseline and Nivea moisturizing lotion is all I use before bed and anytime my hands feel dry because of how much I have to wash them because of my cooking videos and handling my small baby.

Yes, there will be a difference. The two flours have very different textures, smells and tastes. Try as much as you can to use gram flour.
Thanks for answering me so fast um problem is am in China and my options are to buy online or look for places with high population Indian students and ask if someone can sell some flour which is so awkward so will it be too flat like the spices won't help at all
The thing is wheat flour is not as crumbly or crispy once it's cooked as compared to gram flour. So you will lose out on the texture. And then there's a certain unique nutty smell that gram flour has. My advice, try out those places you've mentioned with a high population of Indian students or online. But if all else fails then you could try the wheat flour, although it wont be the same.

Hi, thank you for your question. However, I have never taken the time to measure it. I just mix what I consider to be enough (or just slightly more) and if I happen to run out I just mix more. If I end up with excess batter then I just discard it.

Pakora is a little different. But, both are made in India. I beleive Pokoras were Angloindian, made from inventive Indian chefs in the UK for the UK community.

Thank you for clarifying. I have never tried to make bhajias this way, reason being that I normally slice my potatoes thin enough for them to cook through in very little time. The dish that is prepared by first boiling the potatoes before dipping them in batter and deep frying is viazi karai.

It's an Indian recipe how come Kenya know about this and how come they even have similar names like chapati sambosa and many more things surprising
Most of the kenyan coastal dishes have indian influence (I think due to trade dating back to the 1800's or even earlier)
Also Indian slaves were brought to work in Kenya.

Why don't you pre-heat your potatoes and I didn't see u wash your hands
The potatoes are thin enough to cook through no need to pre-heat them, and, of course I wash my hands. I don't have to show you when washing them, just ensure that you wash yours as you cook.
