    It’s great how versatile potatoes are, given that they’re affordable and store well. I’ll be sure to try parmentier potatoes!

    I wish I could tap the thumbs up a hundred times! This is a top three video for sure. How exciting to see KC Jr! (And saucily correcting Mr KC quite frequently. Bold! He's clearly confident in his Darling Offspring status.) I do love my potato ricer and will definitely give Junior's roasties a try, though I can't promise to lay them out in size order from the benchmark potato (though the directive has gone down in my Favourite You Tube Moment personal archive).
    Glad you could have your young fellow up for a visit before the lockdown. We have our daughter back from uni for the weekend.

    Hello, Son of Keef! It's nice to see the Keef Family. I do have a question. Are the frozen potatoes defrosted before using them or can they be used frozen?

      It's better to defrost them before using because they'll likely be all stuck together so it'a easier to get oil all over them.

      You can absolutely book straight from the freezer! I’m a batch cooker due to my disabilities, & often batch cook roast potatoes out of ease. I freeze mine in foil trays rather than a bag to prevent them piling on top of each other & sticking together, but even if that happens roast potatoes defrost / come unstuck very quickly in the heat of the kitchen & in the oven :) So no stress! If they are stuck together solid just pop them in for 5 minutes & then get them out & swizzle them around!
      I should add that ive never frozen potatoes just from par boiling them so unsure on outcome. I’ve cooked them until they’re around 15/20 minutes done, get them out & let them completely cool, then frozen. Then all I need to do is finish them in the oven for 20 minutes :) xxx

    I love my mashed potatoes both lumpy and gluey. Would probably like them Luke this too, because I love my potatoes fried, mashed, roasted, in soup, and raw.

      Hmm, thought I'd replied to this yesterday. Possibly I did and UA-cam removed a reference to those meatball-like things that Mr Brains makes. So we won't mention that again. But I've done Glamorgan sausage (possibly not actually Welsh), barra brith, Welsh rarebit. I've got no plans to do laverbread, sorry. Can you think of anything else?

    Wonderful to meet Son Of! I sprung for a ricer a few years back, but it no longer seems to be making its presence manifest, so it must have gone south (or, I just can't find it). I made an error in buying it -- the handles were not handles, as such just bare steel, making it rather uncomfortable and a little unstable to use. Pity; it was otherwise well-made.

    I actually do all my oiling and seasoning in a plastic bag then plonk in a roasting tray then squeeze all the oil over them and give them a quick swirl then in the oven they go.

    I'm curious about the cliffhanger potato peel broth. We heard about it, but then it was relegated to off screen status, supplanted by a showier, more photogenic bowl of beans.
    What does Junior's brew get used for? Is it a foundation broth? The base for a posh savoury London cocktail? Homeopathic cure for lumbago? Is it a hint of a sequel to the mad success of KC Jr's debut where the secret is revealed? Your fans are on tenterhooks. Or possibly, in a stroke of marketing genius, it will be patron-only content so we'll all flock to Patreon to end the suspense!

    Boiled, then mashed, roasted, Parmentier

      Well, parboil - they'd need a bit longer to be edible boiled potatoes.

    I assume that the potato broth was used to boil the roasties. Actually i always do my roasties in the air fryer I have a tefal which has a paddle and turns them over in the oil so they get crispy. I do have ricer actually i do baked potatoes and then half or quarter them and put them in the ricer. The mash is drier and more potatoey? You can then add more cream to make up the drier potatoes mashier! The mash is darker but has a better flavour overall. The only reason i have black and white pepper is white pepper is for mashed potatoes, cheese sauce and mushroom stroganoff (aka Mushroomy ricey thing) I take it you son is a scientist! did you fill his shoes with manure when he was young as he is taller than you and Mrs Keef. This also must have happened to me!

    I love potatoes all types but caution alert they will make you very fat if you eat too many
