You dont. He is just cooking with premixed ingredients. Its essentially what you would do if you worked at an Indian fast food chain. Dont learn how to cook from a mildly famous rapper.
you're giving a lot of credit to this premixed spices, you still need to know what to do with it, it's not like a brownie mix where you follow the 4-ingredient instructions on the back and you're done in like 10 minutes

I envy how Indian people get to eat such delicious food all the time. Anytime I get to eat Indian cuisine, I treat it like a special occasion. Murgh Makhani, Lamb Vindaloo, Saag Paneer, Naan and Gulab Jamun are sooooooo heavenly. I love Chinese, Italian, Jamaican, Mexican and Nigerian cuisine, but Indian cuisine is truly a gift to my tastebuds. Yum! 😋
All these foods that you mentioned, we don't really eat everyday. It's usually only on Sundays.
that's all is fancy food, the food we eat at home is pretty simple. FYI there are 28 states in India with around 1600 local dialects so the food we eat is different in each state.

In my region, which is western India, meals are usually one vegetable (sauteed or stir fried with spices), lentil stew, flat bread, rice, and pickles. And believe me, in India, food varies greatly with every 100 miles.
All these foods are eaten occasionally only or in special occasions. Indian home-cooked meal is not oily or spicy at all. Only restaurant food is spicy. Real Indian food which Indians eat everyday is found in homes and made with minimal oil and spices which is not hot at all. Indian moms will smack us on the head if we eat those types of foods everyday

Phil Es Dont put any water and just stir fry it... thats how they cook it in India (at least in Punjab).
stiry fry on slow flame for a long time and the slime will disappear, in the end if there is still some slime it should be alright, pls dont add any water to the dish
Phil Es okra contains water.. so you cook it in the water it produces with a bit of oil to accelerate the cooking. If you do wash okra, you need to dry it with a towel.

Henk Kamp getting pre packaged spices is fine, they taste about the same, and if the flavour seems to be lacking you can always add more of your desired spice, packaged naan on the other hand are weird and chewy and they take away from the eating experience.
