Not Your Momma's Applesauce | Small Batch Canning Recipe

  • Applesauce is so easy and quick. You can have this delicious sauce ready to eat in less than an hour. Even if you're not a home canner, this is great to make using fall's bounty.
    8 lbs. apples (I use a variety for flavor and texture)
    1 c. water
    1 vanilla bean
    1/2 c. brown sugar (optional)
    1/2 c. boiled cider (optional)
    Cinnamon to taste (optional)
    Peel, core and chop apples. Add water and vanilla bean, simmer covered until desired texture, approximately 20-30 minutes. Add brown sugar and boiled cider. Water bath or steam can in pints for 15 minutes following all safe canning guidelines and canner instructions.
    Adjust for altitude as follows (from "The Amish Canning Cookbook):
    1 - 1,000 ft. 15 minutes
    1,001 - 3,000 20 minutes
    3,001 - 6,000 25 minutes
    above 6,000 ft. 30 minutes

    Made my applesauce and it looks great. Used my boiled cider I made yesterday. I started canning with my Mother and Grandmother when I was 15 (that was 56 years ago) yes I am 71 years young. We have 4 acres of land and my husband has a garden and a green house. If he grows it I freeze it, dehydrate it, or can it. I have learned so much from you at this young age and love your channel. You are a sweet young lady and very gifted. Thank you for sharing you knowledge.

    I love my electric water bath canner, I got it a year ago. I can place it next to my sink. No more lugging that water and then the full canner to pick it up and have dump it into the sink. The electric one has a spigot that empties into the sink. Love it!

    Hello Carol! Just an FYI, I have used this video for the base of my applesauce. I also did the boiled cider. So, so delicious!! I've made several batches, and my favorite is combining the boiled cider along with some vanilla bean paste (I didn't have a vanilla bean) but the paste worked perfect. Oh, and also using some brown sugar. This is my first time ever canning applesauce. Our apple trees finally produced delicious apples this year. And....I also made (and canned) your boiled apple syrup. The apple syrup on top of buttermilk pancakes....so DELICOUS! Thank you! Ellen

    The addition of vanilla sounded interesting! I hadn’t made applesauce before, just apple butter. I just put these in the canner. Smells wonderful! I had some apple cider leftover from my apple butter so I just boiled it down and added it and the brown sugar. Thanks for another jazzy recipe! I have definitely made more recipes from your channel than any others. Loving your videos here in NC!
    I have an oxo food mill that removes peel, seeds, etc that my husband gifted to me. Love it!

    I made apple sauce today. We have a small tree in our yard. I had enough Macintosh apples to fill 2 crockpots! I’m going to have to gets some vanilla beans! I would have loved to add 1 to my applesauce. My nana use to put vanilla in her applesauce. Delicious!

    You sound like my mom, she scolded me for not leaving the jars in the pot for 5 minutes after i was done processing. Seen alot of canning videos that are pretty sketchy. Yours seems spot on. Cheers

    Pressed cider with some friends and ended up with 11 gallons so definitely going to make some of the boiled cider and this apple sauce. Love the jars, have to look for them.
    Please do the apple pie, always fun to see new recipes.

    This recipe is soooo good, I added vanilla extract instead of bean, cause I couldn't find any and it tastes great. It didn't last in the fridge, cause everyone ate it 💖

    Just found your UA-cam videos. I absolutely love them. So much good information and recipes. Thought I’d tell you about a much easier way to get your apples ready to cook. I have an apple strainer and all you have to do is wash the apples and cut them into quarters. Then put them into the pot to cook. You don’t need to peel them, core them or even take the stems out. Easy Peezy.

      Sorry I didn’t finish my comment before I told you what this amazing piece of equipment is. It’s called a Wear-Ever #462 aluminum strainer. It comes with a wooden pestle. I got mine from my mother-in-law. Such a time saver! You can find it on eBay. It’s a vintage item.

    Gurl.... I haven't waterbath canned since I got my Victorio . I love it too!! I have those jars as well. Applesauce looks so pretty in those jars.

    I appreciate your doing this video....another good one. Would you consider doing a video on those things that you love and will always can and those things that you would not can again. I have seen other canners do a program like that. I would be interested in hearing how you use what you canned for meals or baked items. One of my best memories from years past is a trip to Vermont in October. We stopped at an apple orchard by the side of the road. The weather was cool and crisp, but not cold. We drank hot apple cider and enjoyed a visit with the barn cat. Thanks for helping me to remember that time. Jo Ann from Mississippi

    I have tons of apples here I just made crockpot applebutter this week. This sounds good. I live on a small farm in Upstate New York we are the second largest grower of apples in the US so everyone around here have worked with apples in some way. I just subscribed.     I made my boiled cider today so now I want to make my apple sauce, however before I do I have a question for you. Your recipe calls for a 1/2 cup of boiled cider, but you said you use 1/4 cup of boiled cider. Can you please tell me if it is 1/4cup or 1/2cup. Thank You

      1/4-1/2 c.... the amount doesn’t affect the end result only the flavor. So it depends on how strong of a flavor you want 😊

    Do you have to boil the jars every time you use them ? Cause I am not too familiar with it. I have done it couple of times but always wondered if I already boiled the once do I have to do it every time. I have done it with new jars but I mean if I reuse the jars.

      Alex Jhope you only need to boil or sterilize jars if your canning processing time is less than 10 minutes

      Alex Jhope no worries... processing time refers to the recommended canning time. If you what you are canning takes 10 minutes or more you do not have to boil your jars to sterilize them before using them. They are considered sterilized during the canning process. If a recipe calls for a canning time under 10 minutes you must sterilize your jars first by boiling them for 10 minutes before using them. Does that make sense?

      If they seal you’re fine. Ideally you want to get as close as possible to proper headspace. More headspace is better than not enough 😊

    What do you mean by covering the jar for water bath? Do you mean the jar is submerged with the lid under water? Or do you mean that the jar from the bottom up should be two inches?

      When water bath canning there must be 1-2” of water above and fully covering your jars

    Looks delish! I've never bought vanilla beans. Where do you find them in the grocery store? Are they in produce or with the spices?

      Linda Schneidewind please don’t buy them at the grocery... so expensive, like $10 a bean 😱. I bought mine from Amazon 😉. There are other places if you don’t do Amazon. They’re not cheap no matter where you buy them but most grocery stores are more expensive unless you purchase them on sale. You will find them with the spices 😊

    Hi! I just made applesauce and canned it yesterday but I do see some bubbles in the jar. Is that going to be an issue for shelf life? I appreciate any and all help, new to canning....

      Did you remove air bubbles with a chopstick or debubbling tool? As long as you canned it up properly some bubbles are normal 😊

    Ok so for the steam canner you only put 3 quarts of water ? You don’t have to have the water over the jars?

      Water does not cover the jars in steam canning. It’s important to follow the instructions for whichever canner you are using. For my steam canner it’s 3 quarts of water which comes up to the bottom of the rack the jars sit on 😊

    Trying to find out how many cups is 8lbs. Looking under google I’m getting 30 cups. You didn’t look like you have 30 cups in that pot

    8lbs apples
    1 cup water
    Secret Ingredient: vanilla bean
    *cover with lid & cook down 30-40mins
    *use potato masher to get preferred consistency
    *taste test and add more sugar if nessesary
    *add in 1/2 vup unpacked brown sugar
    *optional:cinnamon
    *2nd secret ingredient: her special boiled cider

    I would love to see the water level in your steam canner. Does the water cover the top of lids or halfway to jars.

      The water only comes up to the bottom of the rack. It only needs three quarts of water for my steam canner

      Maria LeGaux there’s really nothing you can replace it with. You can leave it out and your applesauce will still be great! It just adds to the depth of apple flavor. If you’re interested in using it but you don’t want to make your own you can purchase it online 😉. 💕

      Maria LeGaux hi! I’ve been giving this more thought... although I think there’s nothing like boiled cider, a great sub would be frozen apple juice concentrate. You could add up to 1/4 cup during the cooking process. Hope that helps 😍
