My first attempt to cook nshima was a failure. Not sure if the corn flower I bough was the problem or if my water to meal ratio was just off. Will try again next week.
It would also be quicker to cook the oxtail in a pressure cooker..... its easier to do even the beans would take less than an hour in a pressure cooker too
Nshima in Zambia or Sudza/Sadza in Zimbabwe or Mieleiepap in South Africa etc - popular in central, southern and some eastern Africa. Eaten by all creeds and colours. Even Fufu in west Africa can sometimes be made from maize flour. Thank you to the Mexican Indians for cultivating the first maize!!!
Cooking for 7-8 hours, please dont mind buy a pressure cooker.. easily available at indian store, this will save at least 6 hours, also you may soak beans a day before to fasten the process, this is just a suggestion.
Basically they overcoked the meats! And they seasoned everything with Maggi Cubes not the most healthy diet plus the Maize doesn’t have any nutritional values
The reason Zambian🇿🇲 food tastes so good 💕is because we don't rush the cooking. 🔥We take time to cook our food. 🤩

Just recently had a trip in Livingstone and find zambian food very delicious and very filling! Good food indeed. Cheers from the Philippines
In India we always soak the beans overnight or atleast 8 hour before cook it... It inhense the taste and cook faster.. you should try once

Hi, sorry about that. Make sure it says white corn meal, the texture looks like wheatlet or you can use Semolina. Same outcome
