Hi! Apron, I can't wait for your reply. I made the panettone today. I made it mini panettone with my jumbo muffin pan and jumbo muffin liner. So hard I did not used stand mixer. 😊😋 it turned sooo good. You're a great chef/tutor. 🙏 God bless.
Hi, I tried it a couple of times but my dough is very very wet, almost like cake batter although all ingredients are measured and weighed. Was it the same at your end too. I did make my own bread flour by mixing gluten to all purpose flour. Plz advise. Thanks
This recipe skipped one of the most important steps to make the real panettone which is the up side down step, and you cannot do it with a non paper mold. I didn’t have any either so I made my own paper mold with baking paper. I advise you to look for another recipe where the panettone is made on at least 2 days, you cannot make the real panettone in few hours, it needs 2 days and even more, for the perfect result. Good luck!
@@nesrine5871 it did show the upside down step in the video. I watched other panettone videos. The traditional recipe takes two days, but by using instant dry yeast, it can be made in one day. Not many people use active yeast nowadays, instant dry yeast is easier and quicker. However, if u use active yeast but follow the step or recipe of instant dry yeast, that would cause problems.

Мои пропорции вот: На 2 кулича и 1 булочку: 60 мл молока, 12 г свежих дрожжей (4 г сухих), 4 чашки муки (600 г), 4 яйца+3 желтка, 100 г коричневого сахара (в оригинале 160 г белого), 160 г сливочного масла, 1 стручок ванили (извлечь семена), щепотка соли (опционально), 120 г изюма, 80 г кураги (порезать кусочками), цедра 1 лимона, цедра 1 апельсина, бумажные формы не требующие смазывания маслом (16 х 10 см). Если нужна технология, скажите, напишу. Это рецепт от итальянской хозяйки, в общей сложности на выпечку уходит 9 часов, тесто замешивается в три этапа. Я хотела сократить время приготовления, думала получится по этому рецепту. Может быть надо было помесить подольше?

I believe tin cans can be used, lined with parchment paper. If you Google "tin can" and "panettone," you should see some examples. I've seen Easter breads done the same way. You'd likely have to divide the dough differently.

Panettone 是我一直想做却没敢尝试的一个,看到Apron发了菜谱,作为粉丝一枚,高兴极了,立刻买了东西去试了,但是不尽如意。
1.前面团发了一夜才发起来,一开始以为是我酵母的问题,后来又来一次,还是一样的。
2.面团实在是太太太…粘了,我也是用的厨师机,快慢速搅了有15分钟,一直也没看到视频中的那个黄光滑的面团,不敢搅下去了,怕搅过度了。又加了面粉又揉等等好久才终于成团,让它发酵。
3.成品出来,刚出炉时很香甜,但是放到第二天就硬了,而且掉渣,掉渣应该是发酵过度的原因,可是我这个发酵程度看上去还没视频中发的那么大啊!
总之,我不晓得是菜谱有问题还是我自己操作哪里失误,费时费力最后做得还不理想。

Instead of vanilla this bread usually calls for orange blossom essence as well as the grated rind, love your recipes

Yes, it is the same recipe. here in Brazil, Chocottone is very popular, just change the fruits for a good quality chocolate chips.

Fresh yeast means idouble the weigh !! If 20 grams dry yeast for example , then fresh must be 40 because the other 20 grams are water

Hi, yes, this is caused by many factors, the activity of yeast, climate temperature and humidity are also the main factors.
I bot 3 different brand of yeast and finally got it right. It could also depends on how long product has been at the baking store or supermarket :p
