I made this, gonna be honest, didn't taste very good. Don't know if it's because I put red onion instead of white onion, or if the vegetables didn't reduce enough while being slightly browned. It smelt great when I was making it, but then when I put the mince with the veges together in the final step, I began to smell the bad smell of the meat, the fragrance of the wine with beef or the reduced vegetables was gone. I'm going to try again with white onions next time, because it smelt amazing when I was cooking it at first, then it kinda turned bad when I put everything together. I will also fry the mince a bit longer before putting in wine too, because while I did managed to get the sear, there were still middle bits that were not browned. Gonna be honest, the best spaghetti bolognese I had was in my trip to Japan, every other spaghetti bolognese I attempted or bought I didn't like - because the meat taste was too strong, the one in Japan I was not bothered by the mince at all, it didn't have a strong meat odor. Been trying to find Japanese bolognese recipes since. When I was cooking your recipe it smelt very similar but didn't have the taste. :(
