I miss Tony so much. I moved to NYC in 2000 and was introduced to Kitchen Confidential and his work. Ate and Les Halles and watched his TV work. What a genuine individual who will be missed.
This show takes me back to Amsterdam with my Dad and his brother . Eating fresh smoked fish and eel at the fish market. Happy time's. They both would be over a hundred years old. I miss them.
My actual current medical diagnosis is Chronic Major Depressive Disorder with frequent recurrent suicidal idiations and addictive personality disorder. I miss Tony but I also take it a different way. I'm thirty five and I actually told my mom (she keeps thinking it's like a phase or something) in a kind of moment of truth that I wasn't sure Id see my 40th birthday. The fact that anthony actually managed to get to sixty one is inspiring and brings me so much hope. I look at this like battling cancer. Im open about it getting help, got rid of all my firearms, and I try and tell people when I'm getting worse. I'm doing everything right but when I spiral it's like 2 days and I'm eating bad hospital food in a psych ward thanking a god I don't believe in that I'm still alive.

@@johncrane3858 I'm a firm believer most diagnosed psychological issues are simply our reaction to traumas OR to a society that doesn't know how to meet our psychological human needs. Diagnoses and labels can make people stuck because we surrender totally our authority to a doctor, when doctors in general still know jackshit about the mind in 2022. All of this to say - never believe there is something unmanageable about you. Not to get too spiritual on you, but for me, there is nothing "incurable"....or better said........there is no state of unwellness that cannot be reverted. And as far as the human mind is concerned, the closest thing to panacea is self-love. It is my conviction whatever the psychological diagnosis , through care, awareness and a commitment to our wellness, we can turn the corner. You deserve love. At the core your body and mind ARE able to self-regulate and be happy and healthy. Whatever problems we have or are diagnosed work at a slightly grosser level................and they are usually energetic imprints we inherit from the environment. The mind is not located inside the brain as strick materialism would have us believe..........so in essence, our minds are all connected at subtle level....as Carl Jung knew in his work around the collective unconscious. See your "disorder" as a bigger manifestation of what other people have in lesser forms; understand the human mind and WHy those people are depressed.............and RELENTLESSLY endeavour to give love to yourself as if you were reperanting yourself from day one. I assure you, with the mindset of a parent striving to give love to its child, you will, through effort and grit.......be able to slowly make small victories in improving your state of mind. Using Bourdain as an example - I assure you, if he lived in a better society, he'd be alive. BUT ALSO, if he was OPEN about his problem and surrounded by LOVING people who wanted him to heal, he would too. Or maybe if he was more proactive (and I say this with zero judgment!) - there's a component of DETERMINATION and discipline to heal anything. And altho I don't have chronic depression, I've had clinical depression fro a short while, and felt suicidal and dealth witha lot of trauma in my life..........so I empathize with the difficulty of pain. NOthing in our mind is random. Chemical ibalances are also not the cause....as chemicals are regulated and respond to many of the actions and habits and lifestyle choices we engage in. Meaning, there are shifts we can act upon our consciousness that will in turn affect the chemicals. For some people with chronic issues, something as unthikinable as a dietary change can have massive impact and return them to much greater health. For others, there is some sort of childhood trauma or inner unresolved issue..........that with love and innerwork can be shifted and release that person. Anyway, I just like to urge you - always keep the faith. And realize the power of self-love almost as a lifestyle choice - you gotta match the difficulty of your condition with an equal desire to give love and care to yourself: And with an open mind to how the solution may come about. Never give up. You are important, you deserve to feel healthy. I apologize if my 2 cents felt in any way annoying, but I just feel passionate about people finding the help they can. This one is one of my favorites. I love salted cod fish. Very common with Cubans, My mom used to make it totally washed free of salt; it was delicious, made in a tomatoey stew, always of course, with white rice . I'd love to go to Portugal . Want to have those great looking fried sardines. Cant understand why the canned stuff stinks so bad , Gotta get the fresh ones.
My ancestors moved from Portugal to Brazil before d. João VI transfered the capital from Lisbon to Rio in 1808 after Napoleon invaded. I have traced the roots of my family, Bicalho, back to Porto, and, although I have visited Portugal maybe 20 times in the past 40 years and have been to a lot of different places, when I arrive in Porto, there is a movement that takes place in my soul unlike any feeling I have experienced visiting a foreign city.
I love Portugese wines that are imported into New Zealand.....I just wish we had restaurants with the food to match....I'd have been rolling drunk too Tony and enjoyed every minute of it. Cheers chef!
@@Alec-x5l For health reasons we add very little salt to the dishes while cooking. Some people are not allowed any salt at all......so those who are allowed it can add it to their plate. Convenience foods are very high in salt....most 2 minute noodles are way above a healthy salt limit. There is salt in bread and tinned food and nearly everything. I was married to a Hindu and lived in his community for 5 years. Their food was heavily salted and they all had health problems as a result, especially at middle age.

Bacalhau is far from my favourite, especially when there is so much fresh seafood going. The sardines are excellent however. Oporto was a strange place, often seeming like a disused film set. Some of it was downright creepy... which I enjoyed! I will say that Tony is right... you will eat more heavy food than ever before! One cheap Sunday meal had courses of bacalhau and pork and steak plus potatoes two ways, rice and beans, olives and bread. Then they asked if we wanted anything refilled! For under ten bucks. Including wine. Including dessert. This was a spot off the beaten path with only families dining. Portugal is the place for simple and hearty food.

Very little cod for a "cod crazy" episode. Probably not even cod, most likely hake or haddock. Over-harvested and poorly managed like every other natural resource on the planet. Cod stocks were gone 200 years ago.
