My brother and i's last Albacore trip out of Monterey Bay was insane!!! We got into a school of fish that were on top as far as I could see in any direction. I quit at nine because my arms were about to fall off, lol. They averaged 30 to 45 lbs , like catching a freight train, over and over again . Great eating , but a little goes a long way. Good video, keep em coming
you're right; getting a good night's sleep beforehand makes getting up and getting out so much more enjoyable the next day, even if you have to wake up at the asscrack of dawn.
We usually ice our ahi (tuna) over night before cutting and eating. This ensures that the meat is a little more firm. But try it with panko fried then top it with mayo, furukaki and drizzle unagi sauce.. you can thank me later lol make sure you have it on a hot bed of jasmine rice.
My son and I went with Chris p on a charter couple weeks ago. Was an awsome day Hallie and rock fishing. Definitely getting on his list for tuna next year👍👍👍
I lived in Petaluma for a while and went to the spot you slept at at least once a week. It's nice to think I was neighbors to someone as cool as you. I'm in Ft Worth now. Land locked and missing the coast

Welcome to the albacore life!. My dad, brother and I had our first taste about 6 years ago and haven't stopped. My personal favorite recipe is to coat the top of the slice partially with spicy mayo and then torch the surface. Another good one is ca kho (vietnamese braised) tuna. This works can be great for the fish that you forget to take the blood out. The oils in the fish make the braised smells so aromatic. Bit of a waste compared to doing to other oily fish that are more easily accessible though.
Hey Matts, nice job out there with those longfin tuna! Try grilling them : baste the steaks in olive oil :sprinkle with Lawrys lemon pepper and garlic salt. Grill 5 minutes on both sides and enjoy 😋

I'm a fisherman myself, and I tried dozens of fishes over time. Albacore is my absolute favorite! You may wanna try to cook them a bit more, like a medium to a medim well beef steak. Cheers.
I was always told to take seasickness meds the day before not morning of. The prescription patch behind the ear works best in my opinion. Give it a try and let us know if it works for you👊

Seafood restaurant near me will mince the tuna, mix it with just a bit of crushed pineapple then drizzle with Wasabi aoli and spoon onto taro chips. So good
I take those loins which basically have three sides and smother in honey Dijon salad dressing and then put on a hot charcoal grill, 1 min on each of the three sides. Will still be raw in the middle that sweet flavor from the grilling on the outside

I would like to make a humble suggest that will change you pallet forever. Pick yourself up some Lime Ponzu Sauce for your Catch & Cooking. The Ponzu Sauce is so ono'licious. I remember going out of 22nd street landing in San Pedro and catching 30-40 lb Albacore with my dad. Great time. I do remember my dad getting sea sick and offer paying every one if they would turn the boat around. Dudes would order breakfast in the galley get sick and never return to pick up their order. Albacore is delicious.

Hey man next time you do a tuna you don't do it like a normal fish you do it in 4 loins like a halibut...... You run down the belly And the spine remove the strip of skin with the scoots.... Then head and the split and remove the 4 loins
when I buy some ahi tuna steaks I marinate in the soy for awhile, then you roll it on its sides in the sesame seeds they should hold on solid enough for a hot skillet and sear quick ea side a few seconds. like bacon wrapped steak only with the seeds.
I’m surprised DFG checked your catch for the tuna. I didn’t realize there’s a limit on them. Also try keeping the collars. They are great grilled with salt and eaten with ponzu sauce 🤙🏼

Awesome job! We got 33 fish for 5 guys when we went out up here in Washington, I made a video of the fish I caught. I’ve been on a few boats that do the hand lines, not my favorite but if it works it works! Do you guys do stops when you get a fish? We usually toss live bait or jigs just to see if there’s a school. Usually gets most of our fish. I get sick almost every time even with medicine, I double dosed the last time and it was fine but it was the calmest water I’ve ever seen! I’ve never seen someone fillet albacore like that! It worked though!
Have you ever tried to the motion sickness patch that goes right behind the ear that stuff works phenomenal when I when on a white sea bass trip I was around to move around quickly around the boat and not feel nauseous

Marinated with similar brine recipe as Salmon and the smoked slow at 90 degree smoke for two days. Need 5ft pipe to cool smoke. Use green alder.

My favorite way is indeed to sear it over charcoal, very hot and very fast, so that it's seared outside but still cold in the center.

You can chop it in smaller pieces and use the same mixture, and have it over rice as a poke bowl

Try everything bagel seasoning coat the outside and sear it for like 45 seconds each side
Lightly oil a tuna steak & season it with Everything But Bagel. Quick sear on a skillet. Serve with slices of avocado.
