Vietnamese Macaroni Soup with Pork Ribs (Súp Nui Sườn Non)

  • This Vietnamese Macaroni Soup with Pork Ribs (Sup Nui Suon Non) is light yet filling and flavorful. It is great for breakfast as well as lunch or even dinner. I think it is also a great hangover soup.
    This pasta soup with vegetables is a clear soup made from simmering pork ribs, carrots, and daikon radish. The broth is light but has a lot of natural sweet and savory flavors from the ribs and root vegetables.
    Ingredients
    1.75 lbs meaty pork ribs, separated into individual ribs
    6 cups hot water (plus more to parboil the ribs and cook the pasta)
    1 1/2 teaspoon salt (or to taste)
    a 1-inch piece of ginger
    9-10 oz carrots, peeled and divided (about 2 medium to large carrots)
    9-10 oz daikon radish, peeled and divided
    6-8 oz your choice of short pasta (I use fusilli)
    thinly sliced scallions
    thinly sliced cilantro
    black pepper
    fish sauce (to serve on the side)
    lime wedges (to serve on the side)
    bird's eye chili, thinly sliced (optional, to serve on the side)

    Nguyên liệu và Cách làm Súp Nui Sườn Heo và Rau Củ bổ dưỡng
    800 g sườn non
    1.5 l nước
    1 1/2 thìa cà phê muối (tùy khẩu vị)
    1 miếng gừng bằng đốt ngón tay
    250-300 g cà rốt, gọt vỏ (khoảng 2 củ cỡ vừa)
    250-300 g củ cải trắng, gọt vỡ (khoảng 2 củ cỡ vừa)
    170-225 g nui (mình dùng fusilli. Bạn có thể dùng nui của Việt Nam hay các loại mì ống ngắn khác)
    hành lá
    ngò rí (mùi)
    hạt tiêu
    nước mắm
    chanh (tuỳ ý thích)
    ớt tươi (tuỳ ý thích)

    Nice, this is what I grew up with but we didn't have daikon. Usually cabbage and carrots.
