    I LOVE all of your recipes! I’m such a fan of Vietnamese food and I have to drive very far (approximately 4.5 hours each way) away in order to eat some! I do it at least once a year (I live in a place where it’s snowing for 6 months of the year and the driving conditions aren’t good) and I do a huge shopping haul of ingredients. I buy all the fish sauce, shrimp paste, lemongrass, noodles, and freeze chillies/Pandan leaves/whatever else that I can! Your recipes are absolutely delicious and easy to follow, clear and authentic and filled with flavour. I truly appreciate you sharing your delicious food and culture with the world on UA-cam so I can (try) to recreate the food I eat when I’m away! I can never make my food taste as good as the restaurant but as long as I’m using YOUR recipes, they come out absolutely delicious!     My entire family is from Huế. I have never been to Việt Nam (I was born in USA) but this is one of my favorite dishes that my mom makes (my next favorite is mì quảng!). Now I can make it for her! Thank you for sharing your recipe :-)

    Hi was in Hue for 3 days in 2016 , Bun Bo Hue at small restaurant near hotel open at 6 am sold out by 9 am , never had it that good again . Miss Vietnam so much !

    Yay I can finally try to follow a video that actually looks like how my mum makes it, only problem is probably finding all the ingredients 🤣. I don't live at home anymore and it's really hard trying to get my mum to give me a recipe when she eyeballs everything lol.
    Im Vietnamese but I haven't actually cooked Vietnamese food, relied on my mums cooking because she makes everything so perfectly. I needa practice but how to cook for one 🤣 the struggles lol.

    Bun Bo Hue is one of my favorite bowls of noodles. I can eat this every day. But too much work to cook it myself. I reserve my privilege to go eat at a restaurant.

    I like to add shrimp paste in the satay. It gives more fragrance to the satay and tastes better🥰

      @@AngelekaL Bun Bo Hue taste way better at home. Vietnamese restaurants in the states make it really bland. We are from Chicago and every restaurant we went to was a disappointment.

    Love the update!! I can just smell the fragrant paste through the screen haha.
    Could this be used to make a vegan version also? Your Pho Chay recipe is single handedly the tastiest / authentic Pho I've had!! So if you ever feel like adapting this to a Chay version that would be super!!

      Might be hard to find something that has the same type of flavor as the shrimp paste and fish sauce to replace them.

      @@willowsprite It's probably not widely available as of yet, I'm here in Australia and some stores stock Vegan Fish Sauce and also Vegan Shrimp Paste! www.lavidavegan.com.au/products/red-lotus-vegan-shrimp-paste Hopefully it becomes more widespread!

    WOE.. HELEN... This looks top notch indeed.. what can I use instead of the Shrimp Paste tho.. I grow my own lemon Grass and I think I have everything else... I have shrimp Bulion but I'm sure it's not the same at all...

      You can use Korean fermented shrimp and use pestle to make into or anchovy paste. Its more salty than anchovy tho

    This is fantastic but one thing. I don't eat pork. Can I do it with just more beef instead of the pork? Should I tweek the spices accordingly? Or is this just not the right dish for someone like me to cook?

    You forgot to mention the noodle for Bun Bo Hue is much thicker than the other noodle soups like Pho or Hu Tieu.

      I’m not from Hue but I heard many people from Hue said that it’s a misunderstanding. Bun bo Hue noodles are just normal noodles :))

    Miss Helen, I would like to ask you the substitute for the noodles because we don't have that kind of noodles in my country. One more thing is the pork paste(is it ground pork?) tell me more coz I am interested in your recipe. I once lived in Ho Chi Minh City(10 years) but I didn't try to cook any Vietnam dish coz I was busy then teaching. Thank you

      1/ Almost any kind of rice noodle would be an okay substitution. You can just use instant ramen noodle (remember to adjust the flavor since those ramen have a lot of salt even without the flavor package)
      2/ You can make you own pork paste. Just put some ground pork (ice cold), fish sauce, salt and a tiny bit of sugar in a blender and blend them together. Then chill the mixture in the fridge so they become a little cold again. Put a small amount of crushed ice, oil and corn or potato starch in the mixture then blend one more time for about 3 minute.
      The blending process make the pork become smooth like a paste, but you need to keep the meat cold the entire time to create that chewy texture (hence the chilling and crushed ice), if the meat is not cold enough the meat will be kinda separated and can not form a shape, just put it back in the fridge to chill and try again. Good luck
