I buy all the fish sauce, shrimp paste, lemongrass, noodles, and freeze chillies/Pandan leaves/whatever else that I can! Your recipes are absolutely delicious and easy to follow, clear and authentic and filled with flavour. Love the update!! I can just smell the fragrant paste through the screen haha. Could this be used to make a vegan version also? Your Pho Chay recipe is single handedly the tastiest / authentic Pho I've had!! So if you ever feel like adapting this to a Chay version that would be super!!

This is fantastic but one thing. I don't eat pork. Can I do it with just more beef instead of the pork? Should I tweek the spices accordingly? Or is this just not the right dish for someone like me to cook?
Miss Helen, I would like to ask you the substitute for the noodles because we don't have that kind of noodles in my country. One more thing is the pork paste(is it ground pork?) tell me more coz I am interested in your recipe. I once lived in Ho Chi Minh City(10 years) but I didn't try to cook any Vietnam dish coz I was busy then teaching. Thank you
1/ Almost any kind of rice noodle would be an okay substitution. You can just use instant ramen noodle (remember to adjust the flavor since those ramen have a lot of salt even without the flavor package) 2/ You can make you own pork paste. Just put some ground pork (ice cold), fish sauce, salt and a tiny bit of sugar in a blender and blend them together. Then chill the mixture in the fridge so they become a little cold again. Put a small amount of crushed ice, oil and corn or potato starch in the mixture then blend one more time for about 3 minute. The blending process make the pork become smooth like a paste, but you need to keep the meat cold the entire time to create that chewy texture (hence the chilling and crushed ice), if the meat is not cold enough the meat will be kinda separated and can not form a shape, just put it back in the fridge to chill and try again. Good luck

You can use Korean fermented shrimp and use pestle to make into or anchovy paste. Its more salty than anchovy tho

You forgot to mention the noodle for Bun Bo Hue is much thicker than the other noodle soups like Pho or Hu Tieu.
I’m not from Hue but I heard many people from Hue said that it’s a misunderstanding. Bun bo Hue noodles are just normal noodles :))
