Vietnamese Stir-fried Squid (Mực Xào)
(English & tiếng Việt) This Vietnamese stir-fried squid with veggies (Mực xào thơm và hành tây) is quick and easy to make for dinner. The squid is sautéed until just cooked through to retain its mild sweetness and a pleasant texture.
The dish comes together very quickly, about 5 minutes, so make sure you prepare all ingredients before heating the stove.
Ingredients:
1/2 lb squid, cleaned and cut into rings or bite-sized pieces (225g)
1/4 teaspoon salt (to taste)
1/4 teaspoon black pepper (to taste)
cooking oil
1/4 cup thinly sliced yellow onion (about ¼ of a large onion, 40g)
1 tablespoon minced garlic
1 1/2 cups pineapple cut into bite-sized pieces (about 200g)
half a medium tomato, cut into wedges
1 teaspoon fish sauce (to taste)
1/2 cup leaf celery chopped into 2-inch long pieces (about 10g. Leaf celery can be found at Asian grocery stores. If you cannot buy it, the best substitute would be the leafy part of the regular Western celery. Otherwise, you may use more onion and scallion instead.)
1 large scallion stalk, chopped into 2-inch long pieces

How is this different from Pho Bo Kho, which I love, but I prefer it with banh mi.
This one is a Northern Vietnamese dish while Bo kho is a Southern dish. Bo kho uses some different ingredients, such as lemongrass. I haven’t had time to do a video for bo kho, but you can find my bo kho recipe here: delightfulplate.com/bo-kho-vietnamese-beef-stew/.

I would usually go to Phở Sol when I craved pho sot vang in Saigon. Phở Hàng Đậu also makes it. For sot vang with banh mi, I saw Tuấn&Tú restaurant has it but I haven’t tried. This restaurant makes very decent Northern Vietnamese food.

What other ways can I steam it?
Do you mean how you can cook it if you don't have a steamer? You can wrap the fish fillet, all the julienned ginger and veggies, and the sauce in a foil packet. Then bake in the oven until the fish is cooked through. This method may take slightly more time.
One minor tip: cook the pork first by boiling it then straining so you won’t need to remove the ‘foam / impurities’ later
My mom and I used to have this at a restaurant 10 years ago and I never saw it again on any menus! Thank you!
Sigh....😩 Thank you so much for this recipe and taking the time to film this video. But do you want to know why you have almost 3,000 views and no comments? It's likely because people immediately clicked off the video once they saw that you added ZERO seasoning to your chicken before putting it in the air fryer. I almost clicked off as well.. But I decided to give it a chance till the end, and I'm now taking the time to leave constructive feedback. There are so many other recipes for Vietnamese fish sauce wings here on UA-cam and also on Instagram and they literally make your mouth start to water as you're watching them. This video did not do that for me. The chicken you made will only have flavor on the outside.... No flavor on the inside, and that is unfortunate. I just wanted to give some feedback so that going forward maybe you can get more engagement on your page. Take care and all the best.
