  • On this episode of How to Drink, I’m addressing the classic and venerable Martini. I decided to make both a Gin Martini and the Dry Martini, which I’m not as big of a fan of as I am the Gin Martini. However, though I side more with the Gin Martini more than the Dry Martini these two drinks were equally enjoyable in making them and I highly encourage to do give them a try. Cheers!
    Gin Martini Ingredients:
    - 2 oz or 60 ml of Old Tom Gin
    - 1 oz or 30 ml of French Vermouth
    - 1 Dash Absinthe
    - Stir
    - Garnish with Lemon Twist
    Dry Martini Ingredients:
    - 1.5 oz or 44 ml of London Dry Gin
    - 1.5 oz or 44 ml of French Vermouth
    - 2 Dashes Orange Bitters
    - Stir
    - Garnish with Orange Twist

    i cringe whenever my dad whips up a "martini" which for him is literally just shaking the hell out of a double shot of vodka then adding an olive.

      That's how my dad drinks his martinis! two ounces of gin, and before he puts it in the glass he swirls some vermouth in the glass and dumps it out.

    I'd heard that Churchill's idea of a dry martini was drinking a glass of gin while glancing at an uncorked bottle of vermouth.

      My understanding is that though that quote is often misattributed to him, it was in fact Hitchcock who liked his vermouth open but on the other side of the room.

      Oh man, it might be actually a bit problematic, as I am from Poland, and we are planning the wedding in probably one year or so. But surely I will let you know haha! ;-)

    I love the second martini you made. It has become my favorite drink. My Father was always a "A martini is gin, with a "splash" of vermouth" and while Aviation Gin made that kinda work it was a glorified shot of gin. I picked up a bottle of Oregon Spirit Absinthe, Dolin rouge vermouth, and Aviation old tom gin, and oh man is it good!
    Simple to make, great to drink, just a perfect drink, thank you!

    If you're going to have a glass of chilled gin with an olive in it, just order "chilled gin with an olive garnish, please." A real martini should have vermouth.

    Just got up after watching this and made the Gin Martini - what a great cocktail. I'm not usually a fan of the different martini variations enough to make them more than a couple times, but this just might go into my recipe book after I'm done drinking it!

    What I've been making and enjoying is: Start with ice in a mixing glass, pour 3/4 oz. Dry Vermouth into ice and stir 10 sec, strain into glass, pour 1 3/4 oz. Dry Gin into ice and stir 10 sec, strain onto vermouth in glass, add 3 olives and enjoy!

    I've heard two reasons for the phenomenon of people ordering less vermouth in their Martinis over the years.
    The first was that it was a power-play but upper-class patrons, sending Martinis back if there was too much vermouth, to the point where bartenders took to just rinsing a glass with ice water and a drop of vermouth before pouring in heavily shaken gin (this is how I was taught to make them...the wrong way!)
    The second reason is that bar managers forgot that vermouth is a fortified wine and so it has to be refrigerated and even then it's got a life of between one and two months before it goes bad, so people probably just started hating vermouth instead of the know-nothing bar managers who couldn't properly store product.
    I've had one cocktail in my life that uses an equal parts vermouth-and-gin ratio. It's called the Vampire and uses the same measurements, then swaps out orange bitters for about five drops of lime juice and garnishes with a clove of garlic instead of a twist. Try it next Halloween.
    For people who think a one-to-one ratio is too much, I started out drinking my Martinis at 5:1 on the advice of the 12 Bottle Bar book, but I've tried 2:1 (the traditional recipe), 3:1, and 4:1 as well and find that four parts gin to one part vermouth and a dash of orange bitters is the best but all of these are pretty damn good and different gins - especially at different proofs - might want different ratios. Only thing to do is experiment...and enjoy! Thanks for the videos, man, great as always!

    Thanks for another fun video! I'd love to see you do a Rob Roy. That's one of my favorite classic cocktails, but I've given up ordering it in bars. Bartenders don't seem to know what it is. I once ordered it at an Outback Steakhouse and was served a big mug of root beer with grenadine (a Roy Rogers).

    Greg, I went out and bought Dolin dry vermouth and used angostura orange bitters and beefeater. I've made so many martinis before. This replaced the Vesper as my favorite! love your approach to cocktails man!

    I like a 3 to 1 ratio, with Tanqueray #10, since that has citrus is it. And 4 olives. I'll have to try some of the variations

    I think the reason you get the little orange is to me that classic style Gin martini has some notes reminiscent of good English tea, and when I think good English tea, I think Earl grey, and when I think Earl grey I think bergamot.
    I don't think it's too much of a stretch to imagine that combination of spicy and herbacious spirits coming together to create some of the same compounds, even if there's no actual citrus (I think? I know sometimes French Earl grey has citrus peel, maybe some French vermouth has it as well, probably a reach).

    I'm not sure if you'd have any ideas on this but I'm simply a bit curious. One of my family mentioned that at some point they had a basil and lemon martini that simply delighted them. I was just wondering if you might have any ideas on how to recreate such a martini. Thanks in advance!

    My knowledge of cocktails pretty much just comes exclusivly from the Savoy cocktail book. It pretty much says that a dry Martini is made with French (white) vermouth, a medium is French and Italian (red) vermouth and a sweet is Italian vermouth.

    I make my dry martinis with 6 parts gin and 1 part vermouth (of the Martini brand). I always thought that was the “official” recipe. Curiously enough, I don’t really like gin or vermouth by itself (with the exception of one brand of gin), but I like this drink.

    My martini: Brand loyalty is a must. One part Noilly Prat, three parts New Amsterdam gin over ice. I prefer shaking to stirring. Strain into thoroughly chilled glass. Add a few drops of lemon juice. I've tried it so many ways I'm almost ashamed how much gin I've consumed... New Amsterdam gin is a great gin for it's price point. Noilly Prat has a more floral tone... The two combine incredible flavor and refreshment. The squirt of lemon gives a completing citrus edge. I love olives but they taste nasty with my concoction. Trust me, citrus all the way. It's a simple home mix with no fancy equipment required.

    I recently bought a bottle of Cinzano Bianco, only because they didn’t have any Noilly Prat. I can confirm that a martini one part Cinzano to six parts Absolut vodka with a lemon twist is pretty damn good.

    I'd known that the hilariously small amount of vermouth is usually an exaggeration, but id never seen a recipe with equal parts before! I'll have to give this a try when it wouldn't count as morning drinking anymore.

      Colonel Fox the earliest recipes tend towards equal parts, but everything before prohibition will have a lot more vermouth in it than is currently considered standard.

      That little dasher bottle I got years ago from Williams and Sonoma, and it's fine and worth looking into. But I don't know what it sells for now (or if it's still availble), likely you'll find more and better options for a more reasonable price at Cocktail Kingdom. And thank you!

    Now that Tom Martini didn't use Noilly-Prat. What was it?
    I am disappointed at N-P for the bottle and label redesign. (As I was at Martini-Rossi.) I like that traditional look.
    Opened a 15+ year old bottle of N-P Original French Dry the other day, as I ran across Boodle's gin (high proof) for the first time in about as long. 3-1/4 : 1 w/ 2 large Spanish olives (no pimento).

    Can I ask how you went about putting that light into your bar countertop like that? I want to do the same thing at home.

      Marked a circle, drilled a couple of pilot holes on the inside of the circle with a 1 inch diameter bit, Cut out the circle with a simple jig saw. Then I got a router and a square edge bit, lined it up, routed the inside edge to make a shelf for the plexiglass to sit on (1/4 inch drop). Then I cut a circle of 1/4 inch thick plexiglass to fit in the hole and sit on the ledge, buffed the edges of that on a buffing wheel.

    Question, you seem to favor cracked ice. Any particular reason? Or does it just look cool to crack a big cube over a cup?

      The ice I use on the show is big and dense, it would take a lot more stirring to get the same level of dilution I want if I didn't crack the ice first.

      Sanjay Bhattacharya that's a style of glass called a Nick and Nora, and I got that particular one from Cocktail Kingdom

    Question, what if the vermouth isn’t french? Also can you replace the harder spirit for something else? I’m not TOO partial to gin but if it is replaceable then why not.

    I'm very intrigued by a Dry Martini with that much Vermuth in it, will try it out for sure. Does sound a bit heavy handed though, maybe there's a compromise inbetween.

      There’s a ton of apologists out there with all kinds of reasons that involve either revealing poisons, or masking the oils in inferior vodka, or adding more water to the drink to avoid becoming too drunk. They’re all nonsense. There’s really no good reason for it to be shaken, and I can’t really say why he does.

    I really don't get this idea a lot of people have about what a dry martini should be, like rinsing the glass with vermouth and then dump it. Or another thing I read somewhere was the idea that a good Martini is made with gin that sat in the shadow of a bottle of vermouth. It's essentially a homeopathic Martini. At some point it's just gin with a garnish. You're not enjoying the fine taste of a Martini, you are enjoying a glass of gin. Just order some fucking gin that was stirred around with some ice, you damn troglodytes. It's propably even cheaper.

      @@tijmen131 I like my martini's with bourbon instead of gin and nothing else mixed into it. But I still call it a martini so it totally counts.
