Before you close the Hyrule Castle rift, there are two soldiers south of the castle looking for Zelda. They're just standing on a hill and will tell you that they are looking for *her*, the spot they're standing is where Link's uncle would have lived on the LttP map.
I swear, the Goron Elder's son prepared me for parenthood better than anything, because NOTHING my daughter has done is more obnoxious sounding than HIS crying. The Elephant Statue isn't just in Gerudo Town, it's also in the Gerudo Sanctum. You can even make an echo of it there! It's just a different color.

I'm confident that the decorative object at 1:16 is a cucco, not a korok. It has the same heart-shaped face as the cuccos, with the vertical yellow bit being a beak. The koroks you used as examples have horizontal yellow bits and are not heart-shaped.

I'll give you one I haven't seen mentioned yet: In the Still World of Hyrule Castle, there's a crack in one of the walls (that you can bomb) that looks very similar to the crack in the wall that was in ALttP Hyrule Castle underground. Almost looks like a "peace" sign imo
Something I thought neat about the map, Suthorn Village is shaped much like the starting tile in the original Legend of Zelda making Links house at the location matching the Old Man’s cave where you first receive the sword.

There is a green rug on the floor with the same pattern on it from Minish Cap, and the red rug rolled up against the fireplace is the same one from A Link Between worlds. There is also a green tunic sleeve poking out of the dresser. Finaly in the bottom left corner of the room, sitting on top of a barrel are two green bottles that are very reminiscent of the green magic jars in Ocarina of Time and Majora's Mask.

The secret castle entrance in the center of the bushes bothered me because I thought that the castle itself was likely to not have changed much in that time since it is a sort of historical building/monument/political office etc So that hole just disappeared? Completely gone as if it were always solid? I guess one could argue that it was dangerous when discovering the hole and then covered it up. 🌿 🌿🕳️🌿 🌿
While the secret passage in alttp isn’t in echoes of wisdom there is another neat reference to alttp. If you go to the location where flute boy’s flute was in alttp in echoes of wisdom and use a homill to dig up the spot, you’ll find a might crystal.
While it may indeed be a dual reference, the crying Goron is probably more of a reference to Darunia's son in Ocarina of Time, who was crying because his father left him alone and went to the Fire Temple.
I lit those stupid torches a bunch of times thinking I must just be missing one, there has to be a chest or heart piece or something from lighting them all, right? RIGHT?QQ?? Oh, and the dancing girl too. Gerudo was pretty disappointing to me.

I haven't followed this game, so maybe this is already known, but I think I heard an Easter egg? The whistling in the music at 8:10 sounds like the melody in the final boss battle of A Link Between Worlds! (Which might have been taken from A Link to the Past, I'm not sure)

Once you realize that parts of the map are similar to Link to the Past you know that certain things might be hidden in certain spots.
There's also some Stamina bottles/Magic bottles in the lower left corner of link's house
You can find an item buried in the exact same spot flute/ocarina is buried on ALTTP
If you go to the woods at castle's south, where you get the ocarina in ALttP and dig at the same point you'll acquire a power crystal.
