Look up the channel tutor4u. He does a very very good job of walking you through. Even some of his older videos for older versions of Blender can still teach you some basic modeling stuff and keystrokes.

Finally you do a new style, thats how you progress!
If you want to do a massive leap in textures, you should learn procedural modeling or substance painter to really take your stuff to the next level.

heres how i would go for doing the top or cap of the mushroom
1. use a cube with subdivision surface modifier, change the value(not render) to 2
2. use loop cuts to shape it
3. just modify it
4. done

man... i really suggest you to actually make your own textures in blender, or even better, substance painter if you can spare more time for it.
Placing 5-6 decals will be less optimized and more messy to work with than using a single texture that you need to make. Just a tip tho, no offense, love your videos :)
