I ordered a 2-pound chicken from insta-cart to create my own "rotisserie" chicken, mostly so I could make stock. What I'd ordered was out of stock and they ended up subbing a 4-pound chicken for $17!!! Man, a Costco chicken would have been SO much more economical. Don't get me wrong, $17 isn't so bad if you think about a whole chicken dinner and lots of stock, but it was an unnecessary expense.
I'm following your recipe for the 2nd time today. I've been removing the rubber bands and freezing the whole Costco chicken leftovers in their new bags. (Still miss the plastic containers) Anyway, the frozen chicken just slides out of the new bags so I'll never throw out the half eaten chickens again. It fits in the 8 qt version. I also cook up some egg noodles and have roasted chicken soup for the week. Thank you very much!
Skip the vegetables, their delicate flavors are destroyed by this energy-intensive process. Just do the chicken in the pot and use your aromatics while using the stock.
@@janp7660I've been known to make my broth minus onion, fish out the veg for my daughter's dogs, then keep simmering with some added onion for a while.i just really like to have that flavor. And not kill any dogs.

That looks like chicken gold! I thought I wanted to make this in my crockpot but the pressure cooker is the way to go.
The crock pot also works but takes way longer, this is definitely the better option if you have a pressure cooker.

The least processed the better. Whole carrots are cheaper and they're just going to get tossed anyway.
I don't add onions because I give my dogs bone broth. Don't waste the carrots and celery, those can either be eaten or added to dog food. 😊

Yeah I don’t give mine to the dog so I like using onions, gives it good flavor and nutrition.
