- Hey guys! I would like to share my favourite fried noodles from back home (MALAYSIA🇲🇾 ). I would say it's an all-time favourite food for everyone too, which is MAMAK MEE GORENG. Here I have cooked a Vegetarian version of Mamak Mee Goreng (DISCLAIMER: contains egg).

Recipe for MAMAK MEE GORENG:
Servings: 4-5
Preparation time: 20 minutes
Cooking time: 15 minutes
Ingredients:
- 100mL Peanut Oil
- 500g Egg Noodles (Blanch in hot water before use)
- 1/2 Red Onion (chopped)
- 5 cloves Garlic (chopped)
- 1 Tomato (diced)
- 2 Potatoes (boiled and cubed)
- 1 Bunch of Bak Choy
- 2 Eggs
- Two types of fried tofu: Fluffy & Thick tofu
-- 100g Crushed Peanuts
- SPECIAL CHILLI PASTE
Ingredients (all to be blended to paste):
- 8 Dried Chilli (soaked in hot water- 30mins)
- 1 inch Ginger
- 1/2 tsp Turmeric powder
- 1/2 tsp White Pepper
- 2 Tbsp White Vinegar
- PEANUT SOY SAUCE
Ingredients (to be mixed well):
- 5 Tbsp light Soy sauce
- 2Tbsp Thick Soy sauce (Karamel masakan)
- 1 Tbsp Honey
- 1 Tbsp Peanut butter (Crunchy)
- 1 Tbsp Dark Brown sugar
- VEGETARIAN FRITTERS
Ingredients (to be fried until golden brown):
- 1 Cup Self Raising Flour
- 3/4 Cup Water
- 1 tsp Salt
- 1 tsp Turmeric powder
- Chopped Spring Onion
Garnishing:
- 1 Egg (fried)
- Spring onion & Red Chilli ( Chiffonade)
- Dried fried onions
- Lime wedges
Tips:
🔹 NOODLES NEED TO BE BLANCH IN HOT WATER BEFORE COOKING.
🔹 ADD EXTRA DRIED CHILLI FOR SPICINESS LEVEL
🔹 YOU CAN ADD MEAT OR SEAFOOD FOR NON-VEGETARIAN LOVERS (AFTER ADDING THE GARLIC) - COOK WELL BEFORE ADDING CHILLI PASTE

Hi chef, good recipe. May I suggest a small change. Ayurveda says that honey should not be subject to high temperature. Therefore, you should substitute the honey with maple syrup ( can be bought in any supermarket). Thanks.

Everything is good but one thing which I cannot accept egg is vegetarian. Please don't give false opinion about vegetarianism among other races. My humble request
Hi Nirmala. Noted on this matter and will make sure when cooking a Vegetarian dish, will not use the egg. It was a culture shock for me too when 1st came to Australia as all sandwiches and dish with Egg labelled as vegetarian. Anyway thank you again for your feedback.
You can simply omit the egg. No bid deal.
Hi Chef, thank you for sharing mama Mee goreng recipe. I was craving for it and come across your video. I’m a strict vegetarian and I tried this recipe today with out using eggs. It’s turned out very good and me, my husband and son enjoyed it. The sauce mixture recipe is marvelous . Your presentation is simple and easy to follow.

For vegetarian fritter, can I use plain flour instead of self raising flour? As I would like to avoid baking powder/leavening agent in my cooking.
Hi Agnes. You may use Plain Flour but you might not get the Pluffy texture but as informed, you can use Plain flour
I'm an hindu Indian (tamil Malaysian)fully vegetarian, egg is not consider vege in Hinduism
