- Hi Semua, di atas permintaan ramai, Che Nom nak kongsikan resepi hidangan yang boleh kita
katakan sebagai hidangan rasmi rakyat Malaysia iaitu Nasik Lemak, bersama juga cara penyediaan
Sambal Tumisnya yang sedap, pekat dan pedas secukup rasa serta sangat harum baunya. Gerenti
boleh buat meniaga.
Bahan-bahan untuk nasi:
3 biji bawang merah
2 inci halia
1 batang serai
3 helai daun pandan
sedikit minyak
kayu manis
bunga lawang
4 cawan beras
6 cawan air + santan
1/2 sudu kecil halba, optional
sedikit garam
Bahan-bahan untuk sambal tumis:
7-8 biji bawang merah, kisar halus
5 ulas bawang putih, kisar halus
2 inci halia, kisar halus
1 genggam ikan bilis, kisar halus
2 biji bawang besar, kisar halus
sedikit minyak
1/2 biji bawang besar
3 helai daun pandan
3-4 senduk cili kisar
sedikit air
Air asam jawa
2 sudu besar sos tiram
1 kiub ikan bilis
gula melaka secukupnya
garam secukup rasa
1 biji bawang holland
1 mangkuk bilis goreng
Bahan tambahan:
kacang tanah
ikan bilis
telur rebus

ENGLISH TRANSLATION
0:39 3 shallots (slice thinly)
0:41 2 inch ginger (slice like in video)
0:46 1 lemongrass (tap until crush like in the video)
0:54 3 pandan leaves (make a knot)
1:02 put oil (wait a moment until it gets hot), then put shallot, ginger, lemongrass, pandan leaves. Stir until the aroma comes out.
1:19 put 1 cinnamon and 2 star anise
1:26 put 4 cups of rice (washed and tossed) and stir (ratio, rice : coconut milk = 1 : 1.5)
1:39 6 cups of fresh coconut milk (if use coconut milk in box, can add water because the one in the box is quite thick, make sure to use ratio 1 rice : 1.50 coconut milk)
1:52 put 1/2 teaspoon fenugreek seed (optional. Che nom put in because she likes the smell of the seed)
1:59 salt (make sure to put right amount of salt so that the saltiness can increase the taste of the coconut, you can stir a bit and taste the coconut milk before continue to cook the rice)
While waiting for the rice to cook,
2:13 7-8 shallots (simply slice)
2:24 5 garlic (simply slice)
2:32 2 inch ginger (simply slice)
2:35 2 red onion, slice (the secret to get a delicious sambal is by the amount of the onion/shallot, the more onion/shallot used, the sweeter the sambal)
2:48 put all the sliced ingredients into the blender and put a little water
3:00 blend until it ground finely.
3:06 put a handful of anchovies (washed). Continue to blend until fine.
3:17 put oil, wait until it become hot and fry the peanut using low heat, keep on stirring. Be careful to not fry the peanut too long as it might be burnt and bitter
3:28 anchovies, the amount is according to your liking (fry until it turns brown and crunchy)
3:31 1/2 onion (slice as in the video). Using the same oil, fry the onion until it gets soft, do not fry until it turns too brown. This is the secret of getting delicious sambal. The onion will give sweetness to the sambal
3:48 put all the blended ingredients
3:50 keep stirring until it gets dry and becoming yellowish. Put 3 knotted pandan leaves
4:04 put 4 ladle of blended chili (you can check previous uploaded video where she shows how to make the blended chili)
4:27 keep on cooking and stirring the sambal until it turn to dark red and the oil is floating on the surface. She said to use a lot of oil so that the chili will fully cooked.
4:39 if the sambal already dry, put a little water and cook until it dries again. Repeat this process for about 3 times (minimum)
4:50 2 tablespoon oyster sauce
4:56 1 anchovy cube (can be replaced with grilled belacan)
5:01 1/2 small bowl of tamarind juice
5:03 palm sugar (secret recipe to have delicious sambal, adjust to your liking). Put a little water so that the sugar can easily dissolved
5:18 1 holland/sweet/yellow onion (slice thinly)
5:22 put half bowl fried anchovies and sliced holland/sweet/yellow onion.
5:38 put salt according to your liking. But be careful as fried anchovies and anchovies cube already salty
Lastly, slice cucumber

Suddenly crave for homemade nasi lemak. Immediately searched for Che Nom’s recipe. Done it within first attempt. I used pre-packed cili giling, the texture a bit different. Terciduk sikit dekat sambal, agak agak je pecah minyak tu. Apa pun nasi lemak menang jadi, husband suka. 😁

hi chef nom... love all your recipes and made the curry puffs here in Canada! now.. we love nasi lemak too... but everytime i make the sambal sauce, it tastes a bit bitter.. what is the cause of that?
@@cherylsim7125 hi. i'm replying based on my experience. sometimes the bitter taste comes from the onion. need to pick the right one. I always avoid using the one which is slightly oval in shape+purplish in colour. the best is shallots. certain dried chili also give bitter taste. the ones I used before came with dark reddish brown colour when cooked, not bright reddish even after the 'oil splitting'. too much ginger can cause bitterness too. hope this helps
