Have you tried to mix the okara with mashed boiled potatoes? About 1/3 potato and 2/3 okara. Add flavour to the mix: nori seaweed, rice seasoning, green onion, miso. If the dough is too dry add a little of dashi. Finally, create patties, cover in starch and pan fry. I find it very good in a wrap with avocado.

I have not had good luck using nigari as a coagulant. Possibly because it's old by the time it gets to Spain. I use gypsum instead, and that works very well. I have no useful advice for how to use the okara - I don't like it either.
