Thanks! The final temps would have been at least 200 degrees. These Chuck roast can be stubborn and in the end, I’m really not checking for temps at all. I just check to see if it is tender enough to pull. I hope that helps.

Great video. I see you added wood chunks part was thru cooking. Don't you get dirty smoke on your food. I'm a beginner to smoking food
