Smoked Chuck Roast on the Lonestar Grillz Offset Smoker

- I wanted to give the ole "poor man's brisket" a try and cook it low and slow style on my @lonestargrillz offset smoker. I have to say, I came out excellent! Definitely a winner in my book.
I bought this 3 lb chuck roast from the local market, seasoned it generously with SPG (salt, pepper, garlic) and smoked it using split pecan wood over about 8 hours, maintaining a smoke chamber temp of about 275F. At about 170 degrees I wrapped it in aluminum foil then continued the smoke until it reached an internal temp of 205 degrees. Let it rest for an hour wrapped up then sliced it. Ohg man was it delicious! This is a great way to smoke a cheaper cut of beef to feed your family or for a group of friends. They'll sure love it!
BTW the whole smoked chicken was given to my Mom and she said it was delicious and cooked perfectly. She loves using that chicken for homemade soups and salads.

Chuck roast and chuck eye roasts are one of bbq’s best kept secrets. I do them all the time in my smoker, but we like to pull them while they are hot almost like pulled pork. Makes some incredible sandwiches and tacos!

I have done a lot of pig roast in my days…instead of spritzing with water…Try chicken/beef/pork boullion cubes melted in water…gives it a lot of flavor…this looks awesome…♥️

In answer to your question, I think I want a plate of that chuck roast right now! This reminds me of when I was a kid and my mother often cooked chuck roasts in a big pot in the oven with carrots, onions and potatoes.

I LOVE smoking a chuck roast! I will sometimes pull the chuck roast right after it pulls through the stall and throw it in the slow cooker with all the ingredients that you would use to make a mississippi pot roast (pepperoncini jar w/ liquid, ranch dressing packet, au ju packet). It makes the meat shred apart like a normal pot roast, but you have that amazing smoke flavor with the zing of the pepperoncini.

Almost reminds me of the 6 pound Elk roast in the slow cooker for six hours. I think I ate a pound after, just cutting bits and pieces off. I'm really liking that smoker Adam. I bet Abby will request a repeat lol.... Cheers Blessings.

Yes, absolutely
Quite the 'que master...on the fast track...LOL (I like 275, it's a noticably longer smoke at 250).
Seems to be a good all around smoking temp.
@@AbomAdventures I've tried 265 and it takes quit a bit longer than 275, and 275 just seems good to me.
Poke some holes in the beef, stuff garlic clove, onions scallions sliced jalapeño whatever it’s wonderful
Nice job smoking, I love smoking chuck roast, best way to cook it. I like your smoking technique since it's the same as mine...LOL Try butchers paper for the wrap and see if it is better. I prefer paper for cuts of beef.
Foil works great also, and what I had available.

I went to a tractor show this weekend in Arkansas. The commissary/kitchen that usually sells hamburgers, chips, etc. was shut down (I guess still due to COVID). As a backup, there was a BIG food trailer/smoker combo labeled something like "Texas BBQ" and all the lettering attesting to their great Texas BBQ. I got to the ordering window and NO BRISKET!! Only had pork, turkey and ham. I asked the lady taking orders "why no BBQ brisket on a 'Texas BBQ' wagon?" "Too damn expensive", she said. "We can't afford to buy it at the high price and make a profit". So.....no beef brisket on a "Texas BBQ" wagon....sad state of the times.
Next time after you wrap clean the spot on the grill with a brush nothing sucks more than when the foil bakes to grill and you loose your Au jus.

You can get prime brisket at costco for less per pound that chuck. The brisket is just many more pounds and takes a lot longer to smoke. Your smoked chuck looks great.
We don’t have Cosco here, but we do have BJ’s & Sams which is where I often times buy my meats like baby back ribs, pork roasts, chicken, and steak. The chuck roast is a common cut of beef normally available at most grocery stores that anyone can easily get, and sometimes on sale too.
Try butcher paper, less steaming it comes out better.

I think brisket is overrated honestly...I have had it dozens of times all cooked at different places by different people and really the flavors don't come close to what you just cooked. I've used this same cut of beef on my little smoker at home.
Chuck is the perfect portion size for a small family too.
