    Love the paperclip idea. I would recommend tossing them on coals or a fire for a while to burn off the manufacturing oils.

    I've been wondering lately how it would turn out if the meat was dehydrated first and then soaked in the marinade and then smoked and dried out in the smoker.....Seems like it would soak up more flavor that way. I've been wondering if some of the other big jerky companies out there do it this way because of how dark their jerky is like for instance, Mingua original beef jerky is very dark.

      I'm not sure! The way I see it, if you dehydrate it, then re-hydrate it, then dehydrate it again, you're just wasting time.
      Big jerky companies are feeding you poison. Just cure it naturally with the flavors you prefer and enjoy!

      @CassCooking Yes, I haven't used our offset smoker for jerky yet but I'm exited to try it.
