    • 1 lb (450 g) pasta
    • 1 tsp salt (for boiling pasta)
    • Olive oil
    • 1 red onion, finely diced
    • 1.5 tsp salt
    • 1.5 tsp pepper
    • 1.5 tsp chili flakes
    • 4 garlic cloves, crushed
    • 2 cups tomato passata
    • 1 cup heavy cream
    • 1 cup reserved pasta water
    • Grated cheese (for garnish)
    • Fresh parsley, chopped (for garnish)
    • Additional black pepper (for garnish)
    🍽️ Instructions:
    1. Cook the Pasta:
    Boil a pot of water with 1 tsp of salt. Add pasta and cook until al dente according to the package instructions. Reserve 1 cup of pasta water, then drain the pasta.
    2. Prepare the Sauce:
    Heat a splash of olive oil in a skillet over medium heat. Add the finely diced red onion and sauté until soft. Add 1.5 tsp salt, 1.5 tsp pepper, 1.5 tsp chili flakes, and the crushed garlic. Sauté until the garlic is fragrant.
    3. Make the Vodka Sauce:
    Pour in 2 cups of tomato passata and stir well. Add 1 cup of heavy cream, mixing until the sauce is smooth and creamy. Simmer the sauce for a few minutes to allow the flavors to meld together.
    4. Combine Pasta and Sauce:
    Add the cooked pasta to the skillet with the sauce. Pour in the reserved pasta water as needed to reach your desired sauce consistency. Toss the pasta in the sauce until well coated.
    5. Garnish and Serve:
    Garnish the pasta with grated cheese, freshly chopped parsley, and a sprinkle of black pepper.
