- #LidiasClassics - As simple a dish as this is, I have had requests for it in all my restaurants as far back as I can remember. I like the sauce a little feisty, so I’m generous with the crushed red pepper. You can add as much-or as little-as you like. Often, restaurant chefs finish this dish by swirling butter into the sauce at the end. You can do the same or use olive oil to finish the sauce. I prefer olive oil, but I probably don’t have to tell you that by now.

This is a go-to in our house when we want something delicious w/ minimal effort. Sometimes we get "fancy" by crisping up some pancetta or prosciutto to crumble over the top for a savory, crispy texture enhancement! ❤❤❤

My family likes smooth sauce. Not lumps or bits of tomatoes, no skin, no seeds. I’ve always used tomato puree. How does the flavor stack up to San Marzano whole tomatoes. Just curious if puree is equivalent to pureeing the whole tomatoes. Thank you!

You are wrong. When making hot pasta dishes, you don't rinse it. When making cold pasta dishes, you do rinse it or put in cold water.
